  1. I've been thinking lately and reading topics of people describing of how they feel and their symptoms when their glutened. I just now realize that I don't know if I HAVE any symptoms. I never know if I am glutened or not. I suppose that's probably a bad thing because if I am eating something I'm not supposed to how am I suppose to tell? I never have any problems with my stomach except for one time almost a year ago when I knowingly ate french fries from a non-dedicated fryer. But that's it. I don't really seem to present with any symptoms except I was thinking maybe my symptom is depression because sometimes I get very depressed but I do get really stressed out and I'm just a teenager so I thought its probably just hormones. Anyways I wondering if anyone had any thoughts on this and maybe could help me figure this thing out. Thanks:)

    For the first six months I couldn't tell if I'd been glutened or not, and then it started being obvious and now when I do I'm down for the count for three days. Maybe it depends on how long it's been that you've been gluten-free?

  2. Ha--I just visited their site, too! I plan to place an order, probably for the hamburger buns, the cinnamon bread, and one of the white breads (haven't made up my mind yet).

    I just ordered a mixed case of things from Chebe bread.com, I tried one of their mixes and I'm a loyal customer for life! And you save a lot online with them too if you order a bigger case that's not mixed, I just wanted to try everything! They use tapioca flour, they have pizza dough and bread mix and cinnamon mix and focaccia and just wow..... It's in a little red bag at a lot of health food stores if you want to try just one. And they're really fun to make too, you have to use your hands to knead the dough.

  3. this mood thing really fits my son. he is so grumpy, irritable, sad, crazed, and in discomfort due to stomach pain and constipation, that he screams all the time. he acts like he is loosing his mind, and it is hard for him to communicate. However, since he has been gluten free for 3 months, we do see changes that he is slooooowly getting better. He has calmer days, more empathy, and feels bad about yelling at everyone. What I want to know is how long did it take those of you to regain your "balance" or social being, once you first went gluten free? were your mood swings a way of life before going gluten free or are they just part of it now, whenever you are glutened? Thanks for sharing. There is s much to learn.

    Hi acod, it actually took me a year before my mood returned to 'normal'. I was a pretty even-keeled person before my celiac disease was triggered, and then I was very depressive for the six months I was the most sick. Once I went gluten free there was a small immediate improvement, and then slowly back to all better after a year or so. I think I would have recovered faster if I'd been feeding myself properly, instead of just being gluten-free. Now I eat lots of fatty things like avocado, coconut oil, organic, free-range chicken with the skin on, raw olive oil, nuits and things. These kinds of fats help your brain and the nerve endings in your gut to repair themselves. All the starchy food I used to eat just doesn't nourish those cells. Hope this helps!

  4. It's the same for me!! I never had such horrible anxiety as I do when I get glutened :unsure: . I get plummeted into this horrible dark mood and I just can't get out of it or see the end in sight. I mean the stomach stuff is no dream either, but it's the anxiety and depression that hit me the hardest. I'm sorry that we all have to go through this, but always makes me feel a little better to know that other people share my pain.

    Actually, I used to have anxiety issues before I went gluten-free, but since a few months after going gluten-free I've only had the GI symptoms when glutened. And brain fog, but I dont get crabby, I'm too confused to be crabby. I only had active GI symptoms that made me truly ILL enough to go to the doctor for about 1/2 a year though, I had that stress-triggered celiac disease thing that started when I was 19. Maybe I wasn't damaged in the same way as everyone else?

    Keep in mind everyone, your gut is responsible for creating more than half the hormones in your body. So when your gut's damaged, so is your hormone production, hence the crabbiness. Just tell your spouses it's a scientific thing!

  5. Ok, this may sound like bragging and maybe I am, but I feel great.

    It's been a month now that I've been 99% gluten-free, except for the late evening cookies and

    the accidental glutening on the cruise ship.

    I feel really good.

    -I'm no longer bloated and going to the bathroom 8 times per day.

    -I can go on a nice long 6 mile run and not worry about it.

    -I have a ton of energy, especially for almost being 47 :blink:

    -I'm in a much better mood...the difference between night and day. I basically feel

    quite happy to be alive, which is..you know...better than I've felt in about 6 years.

    -My chronic heartburn has lessened substantially, I still get it, but it's not killing me anymore.


    Think of it this way Jerry. There are more nerve endings in your gut than there are in your brain. Your gut is responsible

    for creating more then half of the hormones that keep you functioning every day. And NOW your gut is no longer

    being attacked on a daily basis, it's healing. OF COURSE you feel better! Yay for you!!!

    You know what? I feel better than I ever did before too!

  6. Yesterday was my sons 7th birthday. I made an gluten free cake for me and my step son, then my hubby bought an cake for everyone else could eat. My 7 yr old came up to me and asked me mommy why wont u eat my cake its my birthday, and i told him cause his cake had gluten in it, and he is like but mommy it is good. Then he he was like mom i wish gluten was never made then you could eat my cake. I had to come inside and cry. I felt so bad i was eating an cake that tasted like dirt, and he was eating a really nice looking cake.

    But on another note, i felt pretty good, i went rollerbladding with the kids and we went to the park and played basketball. something i have not done in a long time. So that made up for not eating his cake.

    But i am getting kinda depressed, i have gained 9 pounds since i started the gluten free diet. Will i ever stop gaining so much weight.


    Dear confused,

    I started gaining wieght when I went gluten-free too, however, I desperately needed it! I'm 5'7" and I was under 110lbs. I'm much better now, around 130. Anyway, it's absolutely true that your body is now actually absorbing nutrients and will start retaining them. Keep in mind that up to now your body has been 'starving' and is going to react in a like fashion, by storing everything you give it. Try visiting the Weston Price foundation for info on foods that are truly nutritious and will not make you gain unnecessary wieght. Once your body has real nutrients and you stop feeding it empty calories it will stabilize. And keep up with the rollerblading, I bet you felt great two days later!

    Please keep in mind, going gluten-free CANNOT hurt you. Eating it can. I am a self-diagnosed celiac disease sufferer, I was very ill for half a year and lost a great deal of weight, had all sorts of stomach issues as well. I had those headaches too. I had a biopsy done for Celiac disease that came back negative. Doctors do NOT know everything and they are NOT always right. All you need to know is whether you feel better when you don't eat gluten and whether feeling better is worth the trouble to you. If you have concerns about being able to afford the gluten-free foods, consider going without those particular foods. For example, you could have yogurt and fruit for breakfast instead of cereal or toast. Have rice instead of pasta. Just a few ideas, hope this helps!

  8. Hi Aura, I agree with everyone, those are very promising signs of improvement. I actually took almost a year of healing until my mood started to really elevate. I also had a few setbacks, like breaking up with my boyfriend and my Dad contracting leukemia, so I think I would have been 'happier' sooner if all that hadnt happened. But you actually sound pretty darn well adjusted, so if you're not feeling 'happy' I suggest happy food, which isn't what you probably think it is. Eat lots of fat! Get as much avocado, coconut oil (unrefined, try Spectrum essentials), nuts (esp almonds), and ORGANIC, preferably free-range/grass-fed meat into you as possible. I actually really like diced avocado w/scrambled eggs & salsa. And as long as the chicken is organic, make roasted legs and try to eat the skin. Find a butter that says grass fed on it (it should be VERY yellow) and use that a lot on gluten-free toast and to cook your veggies and eggs with. All these fats will heal your body and give you brain food. The cells in your brain are actually lined with lipids, cholesterol. You just need it in digestible form, instead of the poisonous stuff, like McD's. Oh, and organic, plain yogurt. Stonyfield is a good place to start, but their milk isnt grass fed so it has a high sugar content, if theres a health store near you try Seven Stars Farms, it tastes a little bitter, I add applesauce!

  9. Hi Meg, I'm 22 and I know exactly how you feel. I got tossed around to a world of different doctors and had a negative endoscopy and everything, but I stayed sick until I went gluten free. It was obvious that was the problem, I was able to stop calling out of work within weeks, but it's very hard to learn what you can have and what you can't. The easiest way to stay wheat-free is to just not eat anything you're not sure about. If it has an ingredient you can't pronounce and you don't know where it comes from, don't eat it. It's probably also best that you avoid eating out in general, unless you're just eating a salad bar in a real restaurant, not a McD's. Restaurant cross-contamination has made me very ill before. Your biggest problem will be repairing your insides, they are very hurt right now. It's a good idea for some people to cut dairy products, but if you've never had problems with it before this current illness then it's unlikely that's a problem for you. Celiac disese is a disease that can be triggered in your body, dairy intolerance is typically not. Plain organic yogurts can be a very healing thing for you right now, and filling as well. I've been studying nutrition since my own illness, and I'll be entering school to become a Registered Dietician hopefully by the fall. The best website to look at for foods that will truly nourish you and repair your body is at the Weston A Price foundation. Please let me know if you'd like me to share any more info with you.   10. Hi Amber, here on the Celiac website's FAQ's there is a list of celiac-safe and non-safe ingredients, I'd get the bottle and sit in front of the computer and make sure every ingredient is not on the unsafe list.

    Melatonin works very well, I've had problems falling and staying alseep all my life, but especially in the first year after I found out about my celiac. It'll get better, I used to use Benadryl too. Melatonin is a lot better for you, because it's something you body creates already, it's just more of it.
