  1. ive been trying very hard to get to the bottom of my hives and it seems they aren't going away; this is with a gluten-free diet of a week. i know it's only a week but i generally see vast improvement.

    i've been drinking a cheap wine and was wondering if it had wheat in it. i tried to google it but they dont have a website.

    Yes this is true!! Some wineries do use the rye paste to seal the barrels, and also they can use wheat flour also to seal the hole. :( It is rare, but yes you can run into trouble.

  2. A bit of an update to all. Although Jenna (@GFJenna) did not win the title of Miss Pa International 2010, she would have made EVERYONE in the gluten free world proud!

    I have received several letters and even emails from teachers, and people in our area that because of her they were able to help their students and/or their relatives because of her speaking out.

    She has been doing amazing work all over Pa for awareness with celiac disease. In fact the March issue of the NFCA newsletter called her a *rock star* in their monthly newletter. She also has been working on other aspects to help gluten free bloggers and also coordinating the 2nd annual "celiac awareness day" with the Pittsburgh Pirates. (she did the 1st as well) Proceeds will go to the NFCA, and GIG.

    Thank-you to all that wished her well!!

    P.S. - she is in the running for Miss Pa USA 2011

  3. My 14 daughter was diagnosed 3 years ago. Although she has been glutennfree She has gained over 100lbs in three years. Her doctor doesn't see concerned But we both are. she is constantly hungry all the time and extremely exhausted!! Please if anyone has any ideasI would be greatful. Also I have been told at her last visit tha her levels are elevated I can't find out where contamination is coming from??

    Do you know if she was dx with celiac and gluten sensitivity? Did they do a gene panel - this would give you that answer.... A light bulb while watching Dr. Osborne's video went off for me because gluten sensitivity is ALL gluten.... in wheat, rye, barley, oats, millet, corn, rice and sorghum.... they ALL have gluten, so if you have the sensitivity to gluten - well that would be ALL... So gluten free would be really gluten free to all those proteins. (This is only my synopsis from watching the video related to understanding my own health issues.) Her blood levels shouldn't be elevated if they were only tested for gliadins.

    okay, I hope I don't make anyone mad, just food for thought.... hoping for some to have ahh haa moments.

  5. Oh my goodness! A big THANK YOU to everyone for all your assistance. I was only diagnosed recently and the idea of travelling was a bit overwhelming but I feel very confident that I"ll be able to eat out AND be able to purchase some great gluten-free groceries.

    And being a Torontonian addicted to Tim Hortons coffee I'm excited to see there is a Timmies near Times Square. It's shaping up to be a great trip.

    My daughter in living in NYC right now finishing up her internship and she has celiac disease... she says gluten-free is very easy there! Also whole foods store is her best friend.

    She recently did a review of Mozzarellis, a gluten-free pizza place with many gluten-free desserts.

  6. I was diagnosed with Celiac disease two months ago. And I am still getting glutenized. Does anyone have any idea of some good books for Celiac disease, Gluten free and/or Dairy free?

    Informational, Recipes or otherwise.

    The hardest time I am having is buying stuff that does not say gluten free, and I think it is... But it has some kind of hidden gluten in it...

    Any suggestions?

    (And if anyone knows of some good info for buying gluten-free/DF on a VERY TIGHT (broke) budget, please let me know...)

  7. Hello, I am new here, and lost for answers. My 11 year old has celiac, diagnosed in Dec with bloodwork and biopsy. Our initial visit her GI doc said that her case wasn't so severe that she couldn't "cheat" now and then.

    I Never heard a doc say you could cheat if you have celiac disease??? Please know that is incorrect.

    When I was first dx'd please know that ups and downs happen and are just part of learning the diet and what is safe and what isn't. Don't beat yourself up, just learn and move forward positively.

    Start with naturally gluten free foods, meats, veggies, and fruits, then slowly add other things in. Also it helps to keep a notebook/food diary so you can look back over what you may have eaten if there are any questions.

    I am sure others will post to help, I just had to post to the fact that the only OFF switch for celiac disease is strict adherence to the gluten free diet.

    I know Jenna is working very hard to be a positive role model, in all that she is doing, and has accomplished already, she is a very determined women. Jenna never ceases to amaze me, she did start a blog about her life enroute to a state title.

    There isn't any talent that is judged with this and 50% is based on your interview to speak about your platform in front of a live audience. I "think" they only get about 3 min to speak on their chosen platform - hers of course is celiac disease. There is also a gown, and sports wear judging too... must have some girly things in there too for fun, hehe. :o)

    One very exciting prospect is that if she would happen to make Miss Pennsylvania 2010, and go on to be Miss International 2010, she would get to work full time for a year raising awareness for celiac disease, and it is GLOBAL! I think this could be extremely important to out celiac disease, and what gluten is even more - and to include how many people she may touch and be able to help! !

    I am so excited to share this info with our community here, thanks for your support. I will post additional updates.

  9. I am so excited for my daughter, Jenna, who was chosen to compete for this event, as her title of "Miss Indiana" (town) for Miss Pennsylvania International 2010 .... :D

    .... BUT - more so excited about the platform she chose to run with, yes, Celiac Disease! When she spoke with the pageant representatives about her special cause they hadn't even heard of this, so what a great chance to bring more awareness to our group! There are only UP to twelve women selected to be in the running of Miss Pennsylvania International, and she is ONE of those chosen 12 to participate in the final.

    Jenna selected celiac disease because of the terrible plight I had/have been having....

    While in college, last year she intern shipped with Lisa Lundy on the release and promotion of her Celiac Cookbook, and helped promote Lisa for a radio spot to focus on celiac disease.

    Now after learning she will be running for Miss Pennsylvania International 2010 with her platform about Celiac Disease, she found out less than 2 weeks ago she has celiac too.

    I am so proud of my daughter, and hoping that she will have support from fellow celiacs and help promote awareness about just what gluten IS and put celiac disease into a spotlight for good.

    Any help with ideas would be of value. Please forgive me if I have posted in the wrong board forum, and be directed to the right board for this topic.

  10. Yep, Yep, We got to go out and eat safely, which is somewhat challenging for us, I react to a minuscule amount of gluten, a newly dx's with DH daughter, 22, and another daughter that has celiac, 14, but she just doesn't have reactions....yet!

    Six of us, 3 celiac women, 3 NON celiac men....

    There are some chains of this restaurant, Charlie Browns Steakhouse, we were in Harrisburg, PA this past Saturday night, for an - PRE Father's Day outing that "I" didn't have to cook/bake! We felt it would be safer going the night before the big day. ( I did cook on father's day!!)

    We called ahead for early seating, 5:30pm, not really a reservation, but didn't have to wait at all.... (upon leaving there was quite a line-up)

    There are many sections, 12 entrees and they told me after we ordered that they CAN make gluten-free buffulo wings... was so tempted, but only wanted to stick to one item for the first visit.

    Celiac salad eaters got - caesar salad, NO croutons, and 2 of us did NOT put the dressing on ( I eat all salads without dressing) My non reactor celiac daughter used 2 dressing and LOVED it! I ordered steam broccoli and it was good fresh tasting, other daughter ordered garlic green beans, and the last ordered the garlic mashed potatoes... and an extra side of garlic mash potatoes for us women... YUM! A noticable difference with the green beans was on the non gluten free was there was an oil perhaps, but also cooked red-peppers also included in his garlic green beans. Everyone, all 6 of us, ordered prime rib, with out-bone. The gluten-free prime rib came without au-jus, that was the most visual difference that I saw. Everyone's prime rib had a very salty crust on the top, which I didn't prefer, but ......

    While we were very patient, my father was not, as it did take over one hour to get our meals, and others around us were being served within 1/2 hour.... I know it is because of making sure everything was gluten-free and not to have any cross contamination.... but he wasn't too pleased... I didn't mind, I was OUT!

    We had a separate server bring out ALL of our gluten-free meals, that was her job, a dietary special needs server - what a great idea!

    I was so very pleased because I don't get to go out very often, and I was kicking up my heals!! My father said it was a bit plain, but my husband enjoyed a lot...he had a sangria :o) But again I will say yippeee, I will go back again.

    They did have dessert options, ice cream, and ALL flavors were gluten-free, and also sugar free cheesecake.... We opted for no desserts, as I had made a wonderful cake and it was waiting for us back at the house. (you can NOT tell it is gluten-free - EVEN several days later)

    We didn't have any big reactions, my one daughter, newly dx's with DH, , and I did have some hot fushings later in the evening, I am thinking it could have been the salty STUFF on the top of the prime rib... I also get flushings from shredded cheese, I think it is the stop caking stuff they add to it.... but would eat there again!! Thinking tomato basil tilapia sounds wonderful - Just one of the other entrees!

    No itching, NO fuzzy head, no drunk feelings, No diarrhea, (I get that way after eating at "outback steakhouse") and best of all, we got to feel a part of society with going OUT for dinner!!!

  11. We are traveling to Atlantis in May and I wondered if anyone has had any experience attempting to eat gluten free there? I got us a suite with a full kitchen so I could cook for my son. I don't want to buy food in another country though. I have called the airline and they said I could carry on food in cooler, as long as the size meets carry on standards. Does anyone know if this is really true? No liquids,just pizza, chicken nuggets, (i.e. kid food)

    I sent you a message, but forgot to include the following -

    I meant to include in my message that I sent you earlier - I carry my own FOOD and DRINK when I travel by airlines and out of the country... I do use a large vera bradley duffle to carry dry goods such as chips, salsas, crackers, macaroni, special cookies, canned chicken/tuna , etc... putting them in checked baggage will let the bags "pop" open from the air pressure. If I can be of any help don't hesitate to message me back.

  12. You have wegmans AND trader joes? and whole foods, too? Maybe I should move to where you are...

    I have never used Bob's almond flour, but I do use Trader Joe's Almond Meal with no problems.

    I know of a person who cannot tolerate almond skin, just blanched almonds.

    I drive about 2 hours to get to any of those places. :o( But it is worth it., take a big cooler, etc...

    In about a week or so, I will try the almond flour again, but a different brand, or to grind my own, I might have a different reaction.

    What would be the difference between almond meal, and almond flour. Bob's Mill is a bit gritty and cream color.

  13. Thank you all for such good advice. It was all very informative and helpful. So far so good with the food I have bought so far. Part of the difficulty is that my husband works nights and there is no fridge or microwave there so it's difficult for him to bring dinner. Most of the websites I have visited say that he cannot have most cold cuts so he cannot even bring a sandwich. He has been coming home (which is about 12:30am) and making a frozen gluten free entr
  14. McDonald's fries do not have a coating. There is wheat and dairy in the oil they use. That has been much debated here on many threads.

    I know debated, and debated.... and probably will continue to be.

    **family friends have several MCD's... they told me otherwise, and they are not safe. I take that to heart.

  15. Hi all. My family and I are heading for WDW on Sunday. Since WDW is where dreams come true I am getting in the spirit and dreamin gof a burger on a gluten-free bun and some seriously deep-fried french fries. For those of you have been to WDW, where did you have success in locating this most decadent of entrees? I have heard tales of places that only sell uncontaminated McD's fries (gulp)...but I have also heard tales that this ended w/ the WDW McD's break up...:(

    Anybody else have any favorite suggestions for "quick service" meals in any of the 4 parks?

    haven't located the brochures... but, you can go to disney.com and visit the maps of the park, and going from memory you can see the different things, exhibits, shows, rides, food set-ups, located through out the park. best of luck, and have a wonderful trip!!!!!!!!!

  16. So do you think the almond flour had something else in it?

    Interesting about your daughter and sneezing. When I did a dairy experiment awhile back it gave me a runny nose along with fatigue and brain fog.

    You can do the SCD without dairy if you prefer. You can culture other things besides milk, like cabbage or coconut milk. Or take probiotic pills or drink kombucha.

    I used Bob's Mill brand, made the most delicious things with it, I even coated some zucchini with the almond flour, and fried it in olive oil, yum for sure. But, I just felt so swelled up, just sore and beat up all around my torso.

    Nuts are fine, get most of them from whole foods, wegmans, or trader joes. I think I might try to grind my own nuts and make somethings with that. I have to build up to it though, I had such a bad experience with the packaged before.

    I want to try and make my own scd fermented cabbage, will try it when I have more time to start it.

    The yogurt/probiotics are suppose to help with allergies, and it does so with my daughter, I think I heard one sneeze in the last week or so... and when she doesn't eat the scd yogurt, I can hear 5 sneezes in a row every morning - well I used too.

    My order for the mindlinx (probiotic) came in today, I am anxious to try it. I am not sure if anyone has tried it here, it is specifically made for the celiac/autism person. I am going to use it in making of my scd yogurt, and I am hoping for good results.

  17. My only thought is if you have not been eating a lot of almonds, then maybe you just ate too much at a time. You don't need to eat any nut flours on the SCD, they are simply an option.

    Remember, the SCD is not so much about what you eat as what you do NOT eat.

    I can eat any type of nut, have a bit of trouble with cashews, I stay away from those - they are suppose to be the hardest digested I am told. I usually only eat raw nuts, except for pistachios.

    I was just making some things with the almond flour that we/my family has been doing without for awhile now. Rolls - In the healing foods book there is some wonderful receipes "crusty onion rolls", they are wonderful. I just ate one of them, and wham, it felt like I had been in a boxing match, or bear hugged I was in so much pain! I stopped the almond flour and in a few days things cleared up for me. Perhaps it is the almond flour that I am using, not my own, but bob's ???

    If I eat to much yogurt it doesn't fair to well. I have backed off - I eat several spoonfuls a time morning and night. I was eating way to much when I first started.... My daughter does quite well with when she eats it faithfully, tons of allergies, her sneezing stops without incident... if she stops eating the yougurt, then it comes back. I have made goats yogurt, and not having luck with it, but figured out I was heating it to high temp wise, so I will try again sometime in the future. Looking into the different types of probiotics to culture it from now too.

  18. Incorporating the scd a bit into my meals, love the homemade yogurt. Can tolerate it, and even eat a bit of REAL cheese if I eat a bit of yogurt too.

    What I am wondering about it when I eat the almond flour - I felt like I had been beat up -- I was so stiff and sore all around my body, almost like I had done thousands of sit-ups, that kind of achy feeling. Has anyone had any experience with this? or have any thoughts?

  19. I know there was still a McDonald fry place in Epcot as of Nov last year, I don't know about now though. I am really confused because McDonald's frys have a small but still present gluten coating, they are off limits anyway.

    oh, those chocolate chip cookies were soooo good, definitely get one of those!

    I have several of the brochures I brought home, and I can post a few of the quick service places later for you... I kept them for the reason of somewhat pre-planning our next escape.

    My daughter and I went 2 times last year -- Aug 5 days, then Nov 7 days - it truly is the world for celiac travelers, and you will be treated wonderfully!

    You can get fries pretty much anywhere, they made us special ones, in a pan with olive oil whenever we requested at our sit down meals. If you do deep fry - it is a soy oil and I do not do well with those.

    Sit downs - (reservations with your allergy / celiac in advance so it is documented)

    The si-fi ribs A+++ Kids and adults both like!

    Great steak meals at Canada restaurant!! A+++++++

    In France - escargot WITH bread!! (gluten-free of course) we did this as a treat for lunch

    Quick service - anywhere!

    Learned the first visit, eat lunch early - when not to busy - at a quick stop, go right to or ask for manager to help due to allergies--- best term to use at first. We did mostly salads and fruits at quick service, but they have gluten-free hotdogs, hamburgers, pizzas etc... everywhere - just ask as explained above to a quick service manager

  21. I am wondering if anyone has tried the mindlinx probiotc? It has been strongly suggested that I try this from a nutritionist.(the one without fos powder first) The way that it was explained is - mindlinx is from a human strand of good bacteria, so our bodies recognize and can recolonize... the other benefit is that it has 2 special good bacterias that help rid the body of gluten peptiods that cause opioid(sp) feelings to cross into the blood stream??? now, not like eating a gluten slice pizza or bread, but from a crumb or two.

    If anyone has tried this special one, let me know what you think, thanks.

  22. You might want to say - The snacks are pretty expensive and this is all I have right now that I am able to eat, but how about everyone pitching in with a buck or two

    ( or whatever you need) and I will bring a big bag of glutino pretzels in another day ! (or whatever they would like to try.) Your friends may pitch in, but I doubt it,.... or after hearing that suggestion a few times they may stop asking because your friends will understand that they are expensive.
