  1. I came home for lunch today and pan fried two of the leftovers in a little coconut oil to heat and crisp them up! To die for delicious.

My ex-doctor told me that she didn't want to test me for celiac disease because "I didn't have the right symptoms for celiac and even if I did have it, she couldn't give me any medicine for it and I shouldn't eat wheat anyway with my severe IBS with diahrea but she could give me an anti-depressant...
  3. My friend and I made vietnamese spring rolls with rice paper, rice noodles, lettuce, shrimp, red pepper, cashews and shredded carrots with a gluten-free peanut sauce for dipping. It was time consuming but delicious.
