Can anyone give me some information on spices? Which are acceptable? Are most spices naturally gluten free. How about brand names. Thanks all.

Cheese is not a concern with respect to gluten, unless something is added to it. Bleu cheese has a mold culture in it, and it is possible (but not at all likely) that it could be a gluten source.
For most of us here, the concern about cheese is casein, the protein found in cow's milk. Casein is not found in goat's milk or sheep's milk. Yogurt made from these milks is also casein free.
Lactose (milk sugar) is another possible concern. I know that it is found in cow's milk, but is not found in hard cheeses as the process that creates the cheese consumes it. I don't know if lactose is present in the milk of sheep and goats. Perhaps another member will know and post.

Does anyone else have trouble holding down a regular job? I am a Children's Librarian and just got offered a great job but after a few day's had to opt out because I'm just not a reliable employee anymore. I'm wondering if I'll ever be able to function in the world again. I was also just told I have candida as well, which doesn't help. Is this as good as it gets or can you really get better. I've never had many of the GI trouble, thank goodness. Mostly the neuro problems, brain fog, left side trouble. Has anyone had any success dealing with this?
Just wanted to let you people know I think you're the greatest. This certainly doesn't effect the heart and kindness.

I get exactly the same symptoms, usually 6-8 hrs. after. I was also told these were symptoms of candida, which I have also been told I have. Anyone been diagnosed with candida as well as Celiac.

Can anyone tell me if after being diagnosed as a Celiac and you start going gluten free (apx. 3weeks) do you still have days when you feel worse than others for no apparent reason? I have been very strict with my diet because like most all I want is to feel better Is it normal to feel worse in the morning and better in the evenings. How about weight loss and weakness this seems normal from what I've read but after eating well, I'm still dropping pounds and very weak legged. Sometimes I feel like I'm going to pass out is this common? Are there any meds that can help?
I know three weeks is just a short time to expect big changes but I'm up here in Alaska and the Doctor that diagnosed me(biopsy) is hundreds of miles away and not spoke with me other than to say, "you've got it, I can set you up with an appointment with a Nutrisionist if you want." And haven't been able to even speak with him again. My apologies for rambling but I'm sure this will just be the first of many questions. How about personel care products, soaps, shampoos ect. can this effect me?
Are there any additional tests blood work or other you think I should have done? Thanks again.
