  1. I was trying WW also and lost 4 lbs the first two weeks. It is easy to follow since I stick to fruits, vegies, chicken, fish, olive oil, and lots of water.

    One thing is bothering me though. Has anyone had any stomach troubles with the fat free yogurts, cottage cheese, or extra vegies?

    I have been on and off for the past several weeks and very frustrated. I am wondering if the artificial sweeteners in the fat free yogurts are upseting my stomach. I need to lose at least 15 lbs since going gluten free but am finding my stomach is not cooperating like it had been for months and that is making me very nervous.

    Any suggestions?

    I do not like any of the sugar substitutes. they leave a very bitter after taste and I usually get a headache or a sour stomach.

    sooo, it will take me longer on WW, but I prefer the health benefits to organic yogurts that are not sweetened with aspartame or splenda. I have no problelm with cottage cheese, but i don't eat it that often. Extra veges...maybe too much fiber all at once??

    p.s. - how do you do your olive oil...cooking the chicken or some other way?

  2. Apparently, ground flax is gluten free. I eat snacks with ground flax quite often because they are safe foods for us celiacs. My dietitian has confirmed this and also the lady who owns the gluten free store where I shop at also confirmed ground flax or foods with flax seed are safe for us. Most importantly, I haven't experienced an allergic reaction after ingesting ground flax or flax seed. I hope this helps!

    I have to agree with the others on not eating what your mil bakes outside your own house. I sometimes wonder (and I am not suggesting YOUR mil would do this, but this is my own experience) if non-celiacs who think "just a little if ok" add a little gluten ingredient, etc and watch to see if there will be a reaction? I know it sounds devious, I am certainly not suggesting that is your case. I feel that often I am not really taken seriously with this, and hence - the "test".

    Is this a weird thought? I have only been gluten free since July, so my extended family is just not that used to this. Immediate family (except hubby) are all gluten-free (even son's fiance!)

  4. Hello everybody!

    I am wondering is anyone has ever had any gastro problems with maltitol (artificial sweetener). I bought some macaroons that were gluten-free, CF, and sweetened with maltitol. MAN! I feel like I've been glutened, but I cannot imagine from what. Cottage cheese? Everything else I've had (besides the cookies) is something I've cooked myself. AAAAAgggggghhh! Stomach rumbles, gas, etc. I looked up maltitol and found in one article that it can give stomach cramps and gas.

    I am just telling you...don't buy the maltitol sweetened macaroons. Yikes!

    anybody else have any symptoms like this?

  5. Awwww I feel for you! But I have to agree with Fiddlefaddle....pump up the MIL and tell her that she is such a great cook that you look forward to her "help" in cooking gluten-free. She could experiment with some of the new recipes you'll send her and you just know she'll enjoy the new challenge!

    Actually, i have purchased a few of the boxed cake/bread mixes by the "Really Great Food Company". They are fabulous. Maybe if you make a banana bread, for instance, she can enjoy something gluten-free with her morning coffee! The chocolate cake is yummy too. And they make a butter cookie mix. She can see living gluten-free while at your house is not bland. Quite delicious actually.

    She is probably thinking this is some fad that you're putting the kids through. I agree that giving her Dr. Peter Green's book is a wonderful idea. I just bought four copies of Gluten Free for dummies. It is wonderful and easy read...not overly technical. I bought one for me and three others for my kids. I'm thinking of buying them for my family members next so they can learn - as can your mil.

    Good luck! You'll do great. She'll see that things don't look so different (and threatening) to her. You know...fear of the unknown. Just give her a taste! Who knows...maybe she'll even feel better herself!

  6. Does anyone know if the Arby's chicken salad sandwich or wrap served without the bread or tortilla, of course, is gluten free? I checked their website and they say it is not gluten free, but I just ate it and right now I'm ok. What in the world could be the gluten ingredient? I get it served on lettuce in a bowl. anyone had one before? tasty with the grapes and nuts.

  7. Well, I have been TRYING to eat gluten-free since July. My daughter had a positive result from Enterolab and she and I both had positive dietary responses. Another daughter got on the bandwagon after seeing our success and she is doing great (eliminating casein too) Now, my son (who lives on his own) is trying this as his fiance is positive he has this as well ---I do too! Now, for hubby......

    Here is my problem: we are now empty nesters (at least during college months) and he likes pizza, pasta, chinese food, ice cream cones, etc. He wants to support me, BUT he likes to try new places like a restaurant called "noodles"...does that even sound like a place a gluten-free person should enter????? It's hard walking into Panera, Einstein, etc. I know I am preaching to the choir here. You all know the story. How can I get him and my other extended family to see that this is real for me and not just another trendy fad thing I am doing for a short while before I slip up again?

    I have been glutened a few times and he is amazed at the speed at which this affects me. I can tell with 20 -30 min if I have ingested something wrong. You can too, right? My extended family thinks I'm crazy (mine and in-laws) and anything in moderation is fine and so "having a little" is ok. Like my very well intentioned sister who dumped all the spaghetti sauce onto the wheat pasta before "we" got our chance to put a little on our rice pasta..... See what I mean? So what do you do?

    My husband is a great guy, but I just don't think he really gets it. Anyone else in this situation? I'll look for your advice.

  8. Wow! Your responses are just terrific! thank you so much. I'd like to give it a try, ...I have to give a tad more research to this and see some sample menus. I can think of a few right off the bat but I fear the boredom and then I'm back with the old habits.

    chicken, beef, pork, fish. yum!

    veges - yum!

    fruit - yum!

    nuts - love 'em

    i love dairy tho...this will be a toughie.

    quarter pounder with cheese, large fries, and a diet coke? haha-just joking

  9. You have all been so supportive since I started as a member of this forum. I love "talking" to you, reading your stories, and your advice. I have another question for you... I have begun reading about the Paleolithic Diet and how it is a wonderful way of eating for celiacs and those with gluten intolerances. Have any of you tried this? Is it difficult to stick to because of its restrictiveness? Just looking for your comments, advice, experiences....

  10. If any of you out there have had stool tests done by Enterolab, about how long did you have to wait for your results? I know they say that if you don't hear within three weeks to contact them, but I am wondering if it takes them the better part of three weeks to e-mail you the results?Or did you get the results sooner??? I am just looking for your experience with Enterolab so I know what to expect.

    Anybody?

    Living Gluten Free for dummies by Dana Korn. It's humerous and has lots of good info and some great recipes.

    Celiac Disease: A Hidden Epidemic by Dr. Peter Green is also great.

    I bought both together on Amazon for about $30 as a pair.

    You are so right! I have recently read both of those books and the Gluten Free for Dummies is super. I really enjoyed the read and would recommend it to anyone starting out on this "adventure"... Great advice!

  12. Does anyone out there know if Portillo's Italian beef (not the bread of course...), but just the beef and the au jus is gluten free. I ate some tonight and I am not feeling too good. I looked on the packages and the meat package had no listing and the gravy package was not readable (I was a guest at someone's house who was serving this so I didn't want to rummage through the garbage...)

  13. I have been making soy and 'naked juice' brand juice smoothies since going gluten-free this month. BUT now I see maltodextrin as an ingredient. I read the safe and unsafe foods list and the special note about US FDA making sure maltodextrin is made from corn or potato starch. How do I know Naked Juice is ok for sure??? Has anyone out there found any problems with the 'naked juice' products?

  14. I have a wheat allergy that gives me all of the classic celiac symptoms you mentioned including D & C but I do not test positive for celiac disease. So I only have the allergy. It is just as important to stay away from gluten with an allergy as with celiac with the small bonus that I will not (according to my allergist) suffer the same long term health effects of glutening that celiacs have to endure. But I am not willing to find out the hard way so I completely avoid any gluten products. You should see someone who specializes in food allergies about this. But I will warn you, there are people on this board that suffer from both gluten allergies & celiac disease so it is possible to have both. That might be something to get tested for also since celiac has very serious long term side effects. Hope this helps! There are many wonderful, very knowledgable people on this board on both food allergies & celiac. They helped ALOT when I was first diagnosed.

    Thank you so much for the info. I will recommend that he get tested but he currently does not have health insurance, so I doubt he will. We will see what the Enterolab results are for my daughter and remind him that it is an inherited disease and he should try this! You have many of the same allergies I do as well as my daughters and my son. Can you tell any difference going off the gluten? I know you said you tested negative, but I was wondering if you could tell a difference since eliminating gluten?

  15. I have been thinking about things since my daughter and I have had a very (nice) positive dietary response to being gluten free. I remember that my son, who is now nearly 26, was allergy tested as a young boy. He was probably around 10. Allergies to wheat, rye, barely, and oat all came up! No one ever mentioned celiac disease to me. With time, he was eating all this but still had eczema behind the knees and inside elbows, and asthma. He still uses an inhaler.

    Now that I am becoming educated about celiac disease (it is a slow process, but I am trying to immerse), I have noticed his huge problem with gas. Could it be a coincidence??? I don't believe he suffers from D or C, but the allergy testing from years ago now has me stumped. Hmmmm.

    Have you ever heard of a person with these food allergies who is NOT a celiac? I told him to go gluten free and see what happens. Don't think he has.

    Please advise!

  16. No, it's really not that bad. I'm 1-1/3 years in and except for eating out, it seems so easy. The biggest challenge is learning which brands to buy - once you have that down, you just buy the same ones all the time.

    My goodness, Elizabeth...after looking at your e-signature and all the food sensitivities you have (sugar, corn, dairy, gluten...) what do you eat? I am whining about gluten and probably dairy. You are uplifting and positive! Good for you! Do you have special food favorites??? :rolleyes:

  17. I have been at this a VERY short time - about 2 weeks, but I have to say it isn't bad. I feel better and that's the biggest bonus. I usually cook anyway, now I just adjust. Like all of you, the biggest hurdle (which is really is not that big of a deal) is having to read all the labels. I think that after awhile, I will know what to buy and what my favorites (and safe) things are. I do have a question for you "seasoned" celiacs tho: If you have been glutened by accident and cannot figure out the culprit, how long before you feel good again and how do you figure it out? I have been racking my brain trying to figure out what I did today that was different. Maybe just the Chai Tea Latte from the little corner coffee shop. maybe the little Lifesaver tiny tarts.... thought it was all good. Apparently not...

    I hope to feel better soon. Anybody have words of wisdom or advice? I love this forum...I read it and check it all day when I am home.

  18. I didn't read the other answers to your problems, but I will quickly tell you what worked for me.

    I am 50 yrs old and have known I had celiac for about 20yrs, and I have had, and sometimes still have, the exact skin problems you describe. I was told by a dermatologist that I had Rosacea and was given a topical antibiotic with an alchohol base in an aplicator bottle with a dobber on the end. It works beautifully!

    I just use head and shoulders original formula for my scalp itch.

    And the doc told me to use white wash cloths, no dyes, and to avoid foods with stimulants, like chocolate and coffee, and to avoid red food colorings...seriously.

    I've also heard the iodine irritates the skin problems, like iodized salt.

    I use natural soaps and take lots of vitamins and herbs to make up for the low nutrition levels, and I flourish and am one of the healthiest people I know, except when I get some sneaky form of gluten....still happens....be extreme about caring for your body, it has to last you a long time.

    thanks for all the advice, it really does help. it honestly might be too hard to give up coffee but everything else definitely seems do-able! keep passin that wisdom on...

  19. Does anyone know if thew Breakstone's "live active" cottage cheese (2% milkfat) containing fruit is gluten free? I did not see (were my bifocals too weak???haha) the words "with probiotic fiber" on the label when I bought it. It says it contains inulin and modified food starch. Of course, the way the label is glued on it overlaps itself, cutting off the end words. I googled it but I got nothing as this appears to be a newer product. Well, I just ate one of the little single serving tubs. Keeping my fingers crossed! :(
