  1. I have Celiac and have been gluten-free for a little over a year. I also try to avoid dairy as much as possible. I am going on a 15 day trip to Haiti to work with orphans in a few weeks. I am not sure what food will be available in Haiti and do not want to get glutened while I am there. Any suggestions for food to pack with me that is easy to travel with?

  2. I am supposed to have my annual celiac bloodwork panel done this week? I was accidentally glutened two weeks ago and then again last week. I have been strictly gluten free for the past 11 months. With these two recent times of being glutened, will it affect my bloodwork? Should I wait before having the test done? How long will it take for the gluten to not show up in my bloodwork?

  3. I was diagnosed in September of this year with Celiac. This was biospy-confirmed. I have been strictly gluten-free for about six weeks now. My only symptoms before being diagnosed were constipation, abdominal pain, and severe bloating. After being gluten-free, I still experience the occasional abdominal pain and bloating and now I am experiencing severe fatigue and exhaustion. I am sleeping 10-11 hours per night, napping frequently and having to miss work. I have had lots of blood work done which have all come back great. No thyroid issues, not anemic, no mono, etc. Has anyone experienced similar symptoms after being recently diagnosed and gluten free? Any help or advice would be greatly appreciated.
