ARCHIVED Pie Crust Recipe.
CeliacMom2008 replied to Imanistj's topic in Gluten-Free Recipes & Cooking Tips
Check out Living Without's website. I get emails from them with recipes and there was one a couple weeks ago for a coconut pumpkin pie. I believe it had a coconut flour crust. -
ARCHIVED Disney World
CeliacMom2008 replied to CeliacMom2008's topic in Traveling with Celiac Disease
We just returned from another trip to Disney World. Yep, it was just as wonderful as the other times! Here are some restaurants we tried this time: The Coral Reef Restaurant at EPCOT - OUT OF THIS WORLD!! Their signature dessert is already gluten free. It's a flourless chocolate cake with molten chocolate center served over raspberry puree with... -
ARCHIVED Gluten Free Gravy
CeliacMom2008 replied to Mommy2Many's topic in Gluten-Free Recipes & Cooking Tips
This has nothing to do with how to make gravy (I do use the cornstarch method), but thought I'd share what do with the leftover gravy and chicken or turkey. My son loves gravy, rice and little chunks of chicken/turkey in his lunch (thermos). It's a great way for me to use up the meat we don't eat and makes a great lunch for him. Also, I've never had... -
ARCHIVED Food List To Get At Walmart?
CeliacMom2008 replied to asteria's topic in Gluten-Free Foods, Products, Shopping & Medications
You can search Wal-Mart's website for their gluten free items and then even check online for availability at your particular Wal-Mart (you enter zip code and select your desired store). A word of caution though - their list has many inaccuracies on it. I believe I found Wheat Thins on it several months ago. At least it's a starting point, though. Also... -
ARCHIVED What Things Have Gluten In Them That You Would Not Expect
CeliacMom2008 replied to Glamour's topic in Gluten-Free Foods, Products, Shopping & Medications
Just to be clear, just because a product says "Gluten Free" on the label it does not mean they have tested it for gluten. Some test and label as such, but others can claim Gluten Free without testing. There are no laws regulating that yet. -
ARCHIVED Cornmeal
CeliacMom2008 replied to CeliacMom2008's topic in Gluten-Free Recipes & Cooking Tips
A Horse's Soul - Was it the Bob's Red cornmeal that says "gluten free" on the front or the regular cornmeal?? -
ARCHIVED Cornmeal
CeliacMom2008 replied to CeliacMom2008's topic in Gluten-Free Recipes & Cooking Tips
Bob's Red Mill just came out with a gluten free line of corn meal. That's what I ended up buying. Now Ijust need to find a great cornbread and cornbread pudding recipe and I'm all set! -
ARCHIVED Good "sick" Foods For Sick Kids
CeliacMom2008 replied to nmlove's topic in Parents, Friends and Loved Ones of Celiacs
My son recently was sick and he wanted egg drop soup! It's so easy to make and when you think about it, it's rellly very similar to Campbell's chicken noodle soup, which is basically just broth and noodles. The egg just becomes the noodle. -
ARCHIVED Children's Triaminic
CeliacMom2008 replied to Joey's Mommy's topic in Parents, Friends and Loved Ones of Celiacs
Have you tried hiding it in applesauce, pudding, or flavored milk? Also, if you check around with little pharmacies you may be able to find one that can put it in a different form. We have one here that for no extra charge will put medicine in suckers and stuff. It's not chain drug store, it's an old fashioned pharmacy. Good luck! -
ARCHIVED Lunch Help, Please.
CeliacMom2008 replied to hilwacat's topic in Gluten-Free Recipes & Cooking Tips
PB&J on pancakes Tuna salad eaten with potato chips (like a dip) Fried rice scrambled eggs Crepes with ham and cheese wrapped inside Pulled pork (we eat it bunless) Tortilla Chips and Green Goddess Veggie dip (https://www.celiac.com/gluten-free/lofiversion/index.php/t60204.html) A leftover makeover - I roast a whole chicken with an apple stuffed... -
ARCHIVED Craving Cinn. Rolls
CeliacMom2008 replied to Chrissyb's topic in Gluten-Free Recipes & Cooking Tips
I use this recipe. They are out of this world! Cinnabon has nothing on these! And they aren't as hard as they sound. I use two 2-gallon ziplock bags with the sides cut open so they make one big rectangle and roll the dough between them. I sprinkle one bag with sugar before starting to roll. It's pretty easy and actually fun - in a Play Dough sort of... -
ARCHIVED Cecelia's Gluten Free Product Alert!
CeliacMom2008 replied to Jodie2DQ2's topic in Gluten-Free Foods, Products, Shopping & Medications
I had checked Kellogg's a couple weeks ago and they said their fruit snacks were not gluten free. BUt good news - General Mills fruit snacks are labeled gluten free! And you can buy mega packs of Scooby ones at Sam's Club - perfect for Halloween! -
ARCHIVED Nuts Without Cross Contamination?
CeliacMom2008 replied to bethmon's topic in Gluten-Free Foods, Products, Shopping & Medications

ARCHIVED Gluten Free Bread
CeliacMom2008 replied to twe0708's topic in Gluten-Free Foods, Products, Shopping & Medications
You might also call Udi's and see where they sell it around you. -
ARCHIVED Nutella (again Probably), And Iffy Rice Cereal.
CeliacMom2008 replied to majicbunnies's topic in Gluten-Free Foods, Products, Shopping & Medications
My son eats Nutella too. I'd suspect cross contamination with the cereal. I have a hard time believing cereal that isn't made with the intention of being gluten free ends up being gluten free. Have you ever seen how much dust comes out of box of cereal when you pour it. I have to imagine a factory that makes cereal with and without gluten ingredients... -
ARCHIVED What Are The Best Prepared Foods And Where Can You Get Them
CeliacMom2008 replied to KathyBHI's topic in Gluten-Free Foods, Products, Shopping & Medications
Udi's is good. You can call them ask where you can buy it near you. They were wonderful about that when I called. We make Gluten Free Pantry bread regularly. It's very good fresh and freezes (slice, wrap slices with piece of plastic wrap between, and put in freezer bag) pretty well. We use frozen slices to thaw and make french toast or put PB&... -
ARCHIVED Reese Puff's Cereal
CeliacMom2008 replied to killernj13's topic in Gluten-Free Foods, Products, Shopping & Medications
I wouldn't take it as CYA. General Mills is being so good about their labeling. I wouldn't trust these to be gluten free at all. Kix doesn't have this sort of statement. The Chexes are clearly labeled gluten free. I think they're trying to tell you they are quite possibly cross contaminated. Just my opinion though. -
I've been hesitant to try recipes with cornmeal because I haven't researched the gluten status. Bob's Red Mill not being packaged in a gluten-free package made me nervous about all cornmeal. So rather than start from square one, I thought I'd try here instead. I found a post that someone uses Kinnikinnick cornmeal. Anyone use any other brands? I've never...

ARCHIVED Lost On What To Feed My Little One...
CeliacMom2008 replied to RobynJ's topic in Parents, Friends and Loved Ones of Celiacs
Here's the recipe I use for crepes: 3 eggs 1 Tbs cornstarch 1 Tbs potato starch 3 Tbs milk pinch salt 1/4 tsp vanilla (optional) Combine cornstarch, potato starch and milk. Mix well. Add in vanilla, salt and eggs. Mix until there are no lumps. Cook in small nonstick skillet. Make them as thin or as thick as you like. I tend to make them thinner... -

Sorry, yes, it probably is French Meadow. I was going from memory. You can order online from Apple's Bakery. -
ARCHIVED Gluten Free Licorace - Strawberry Or Cherry
CeliacMom2008 replied to Genna'smom's topic in Gluten-Free Foods, Products, Shopping & Medications
We got the Candy Tree licorice at the Gluten Free Grocery in the Chicago area, but that was about a year ago. It was OK...my son liked it, but it was reminded me more of a fruit snack sort of texture than licorice. Licorice is the single food we have not found a replacement for. The Candy Tree came close though, like I said. -
ARCHIVED Lost On What To Feed My Little One...
CeliacMom2008 replied to RobynJ's topic in Parents, Friends and Loved Ones of Celiacs
I don't know the answer to that. If the low enzyme is lactaid, then I'd think so. Lactaid is produced/released from the tips of the villi in the small intestine. The damage from Celiac starts at the tips and works its way down as it the damage increases. So once it is healed the gut starts producing lactaid again. At least that was how it was explained... -
ARCHIVED Can't Figure Out What's Going On...
CeliacMom2008 replied to lizbeth93099's topic in Parents, Friends and Loved Ones of Celiacs
We're coming up on 2 years (WOW!) of gluten free. For us the first few months were constant ups and downs. I'd think we had the hang of it, and then I'd think he'd been glutened. I'd come on here saying I suspected this or that and we'd avoid products for awhile. Then somewhere along the line it all stopped being like that. I'm not saying that it ever... -

CeliacMom2008 replied to nutrifoodie's topic in Gluten-Free Foods, Products, Shopping & Medications
OK, my son is the Celiac and I'm the baked goods lover (and not a Celiac). Here are my favorites (yes, I LOVE gluten-free cookies!): Premade: Pamela's Chocolate Chunk (actually I like most Pamela's, and the ones I don't like are because I don't like that type of cookie, having nothing to do with it being gluten free) We buy these by the case from Amazon... -
ARCHIVED Your Favorite Throw-together Dinner
CeliacMom2008 replied to miles2go's topic in Gluten-Free Recipes & Cooking Tips
We grill year round. I buy Market Day meats that are individually frozen. They thaw in a minute or two in the microwave. Toss them on the grill, add veggies (raw, canned, steamed, whatever is fast and handy), add canned fruit and we're good to go. LaChoy Chow Mein is gluten free. Loaded with bad things like sodium, but very fast, anyone can make...
