  1. Udi's bread is fantastic for sandwiches, toast, etc. You can order it online direct from Udi or you can call them and ask what stores near you carry it. They are extremely helpful. When I called they gave me store names and addresses. Pamela's pancake mix makes great pancakes and waffles. You can freeze the waffles. We like the pancakes made into...
  2. I called Cape Cod this summer and they said ALL of their products were gluten free. The woman I spoke with was very friendly and went on to say they were coming out with a new flavor in a few months and she didn't know the ingredients but to call back and check. All great answers - unfortunately I can't find them anywhere locally!
  3. We've been spending a lot of time searching for a gluten-free decongestant for my son. Triaminic says their Thin Strips Cold and Stuffy Nose are gluten-free and Motrin Cold is tested for gluten. Both are kid items, but perhaps you could see about adult dosages. I was surprised how hard it was to find a gluten-free decongestant and very frustrated with...
  4. We use Gifts Of Nature gluten-free oatmeal regularly. My son has it for breakfast 3-4 times per week plus I make cookies, granola, and fruit crisps with it.
  5. Betty Crocker Fruit Snacks Pudding Cups Fruitabu Stretch Island Fruit Leather Freeze Dried Fruit - Brother Bear has neat packaging (Disney stuff)
  6. WARNING: Wal-mart's Beef Boullion in no longer gluten free. The boxes no longer say "Gluten Free" and wheat is listed as an ingredient. We used to buy it regularly and just happened to realize that it changed a couple weeks ago. Also, this was the old style box, not the new white box. Our Wal-mart still sells the broth in the old blue box, but with the...
  7. I just hung up with a representative from Jel Sert. They said their Pop Ice products MAY contain barley or rye. They said they are trying very hard to get their flavor suppliers to tell them if they contain rye and barley but because they are not federally required to do so they would not. What a load of crap!
  8. If you don't mind my asking, why are you eating gluten free? You say you don't have Celiac. Is it for health reasons or because you want to lose weight or something? If it's part of a weight loss diet, cross contamination is not an issue at all. If it is because you suspect you have Celiace, you should consider getting a diagnosis first. If it's because...
  9. We have one little ole zucchini brownie left...they were very yummy!
  10. Kinnikinnick white and chocolate cake mixes are fabulous...again, no one could ever tell they were gluten-free. I personally like homemade frosting better than store bought, so we make buttercream and chocolate. And it keeps really great in the fridge and makes an excellent dip for "graham" crackers or animal cookies or you can just dip your finger in it...
  11. OK, ice cream sandwiches are good, but warm brownies from the oven with vanilla ice cream are even better! Or warm chocolate chip cookies with ice cream...oh, and let's drizzle hot fudge on top too! Now that we've all caused each other to gain 20 pounds just reading, let's all head to the kitchen and gain 40 actually eating this stuff!!
  12. These are better than Envirokidz Chocolate Drizzle according to my son and you could omit the chocolate on top if you want. INGREDIENTS 1 cup white sugar 1 cup light corn syrup 1 cup peanut butter 6 cups crispy rice cereal 1 cup semisweet or milk chocolate chips DIRECTIONS Butter a 9x13 inch baking pan. In a saucepan over medium heat, combine...
  13. How about flax, crispy rice, or buckwheat (or some combination thereof)?
  14. I've never worried about it much, but my son was 8 1/2 when diagnosed. Playdough is the only thing I won't let him use. It gets under the nails and is very difficult to wash off. If they eat in their classrooms you would want to make sure his desk gets wiped off properly, but I'd insist on that even if he had gluten free supplies because you never know...
  15. Here are some of my son's lunch items: PB&J on Pamela's pancakes is WONDERFUL! Apples with peanut butter to dip in Tuna salad with potato chips to dip in (my son's new favorite meal and snack) Leftover tuna casserole Sloppy joe (my son never liked it on a bun even pre-diagnosis) Scrambled eggs Quiche pulled pork pasta stew soup Corn chips...
  16. A huge help for me was to make a list of foods I already cooked and see how I could adapt them (if necessary, many were already gluten free just because they were). This helped me tremendously in planning meals and shopping. It was a great way for me to get organized and manage all the changes. It was wonderful for things like leftovers as well. I could...
  17. For the meals you can microwave - we take frozen lasagna pieces, pizza (frozen or cold), and fried rice (cold) and then just microwave it. For other meals you could do PB&J on pancakes. Just take the pancakes and make the sandwiches the day(s) you need them. The pancakes usually are good for 2-3 days. My son LOVES tuna salad with potato chips. ...
  18. We use Tall Tree. Freeda are also gluten free, but my son didn't like the taste as well as the Tall Tree.
  19. I'd be happy to post our favorite bread recipe. It's a hearty, multi-grain bread, not a light and fluffy "white" bread kind of thing. We like it fresh from the oven on day one and then toasted when it starts to dry a bit. Then I cube any leftovers and freeze them for stuffing. Yes, Joan's are mail order. The shipping is expensive because the bagels...
  20. My son was in the doctor's office for bronchitis every spring and fall like clock work until he was diagnosed. We were thrilled. So far it's been 2 spring and 1 fall with no illnesses at all - including the yearly strep he used to get (one year he got it back to back to back - literally 3 prescriptions of antibiotics because it wouldn't go away/would come...
  21. My son eats the frozen mac and cheese often with no problems.
  22. We eat a great deal of pasta and bread. It's just gluten-free pasta and bread. We used to eat a lot more of it right after diagnosis because I was overcompensating, but we still eat it a lot. Lasagna is one of my favorites to make a freeze leftovers for quick future meals. Spaghetti and alfredo with store bought sauce are good "emergency" quick meals...
  23. I wasn't much of a cook before our son was diagnosed, but I did know how to make more than I realized. I sat down one day and made an Excel spreadsheet (it doesn't have to be a spreadsheet, it just works better for me that way) of all the things I knew how to make. It included everything from breakfast, lunch, dinner, sides, desserts, snacks, etc. Then...
  24. I find it interesting that a few of you feel you have issues with the Chex cereals (where General Mills is making an effort to ensure gluten free status), but you don't have problems with Kix (where there is no effort at gluten free). Or did I miss that Kix is now made in a dedicated facility or tested for gluten-free like the Chex??
  25. Thank you for posting this. I keep reading differing opinions on meat labeling and your post caused me to take the time to answer a question I've had for awhile. After much research online and 20 minutes of phone calls to various departments in the USDA, here's what I found out: ***Please be sure to read all of the information as it contradicts itself...
