  1. I'm so sorry for what you're having to go through. I figured he'd be back on gluten once you saw the doctor. If he has Celiac the next few weeks might be really rough on both of you (because of the gluten in his diet). Hang in there and don't be afraid to come here to rant and even cry on a virtual shoulder or two. Stay focused on the goal - figuring...
  2. Sorry if you posted this before... Have you had him tested for Celiac?
  3. PB&J on Pamela's pancakes Hard boiled or deviled eggs Thermos ideas: mac & cheese, scrambled eggs, soup, spaghetti or other pasta
  4. We do broth instead of water with mushrooms added a lot.
  5. We do something that sounds similar, but I fry the tortillas in a little oil until they're crispy, then layer pretty much the same as you, but then I nuke in microwave for a few second to melt the shredded cheddar. It was our replacement for Taco Bell's Mexican Pizza that my son loved pre-diagnosis. They're definitely crispy and need to be eaten with a...
  6. First, welcome, Paula! Second, it's going to be OK. Gluten free is a doable lifestyle change, but the first few months there is a lot to learn. To answer your question - you need to aim for zero gluten. It isn't like diabetes where you can just get close. When your son ingests gluten it sets off an immune response in his body that in turn damages...
  7. Muffins, oatmeal (you may need to wait a bit to try oatmeal - and then you have to get gluten free oats), lots of varieties of Chex (Rice, Corn, Cinnamon, Honey Nut, Chocolate, Strawberry) - but you need to make sure you get the boxes that say GLUTEN FREE on the front some of the old formulas are still on the shelves, Bob's Red Mill Mighty Tasty Hot...
  8. Here are our "cooler" and car foods: PB&J on pancakes Tuna fish salad (my son uses it like a dip for potato chips) Veggie dip and tortilla chips (dip is diced tomatoes, cucumbers, green peppers with shredded cheddar and mozarella cheeses with Kraft Green Goddess dressing over it) "Rice krispie" treats Stretch Island fruit leather Nuts Hard boiled...
  9. Wal-Mart's Great Values chicken broth used to be gluten-free (marked right on the box). Their beef broth is no longer gluten-free and they didn't have chicken when I was there to see if it was still gluten-free, but you can check.
  10. I had no idea anyone would find a single thing to fault in the article. Being upset that Dr. Fasano said the diet is challenging is mind boggling to me. I've referred to myself as the Mary Poppins of Celiac. I have a very positive attitude about how doable the diet is...for us. But I have the time and ability to educate myself on the disease and gluten...
  11. The article is now available online: Open Original Shared Link. Happy reading!
  12. The July issue is still the one available online. I'll watch for the August to come up and put a link to it when it does.
  13. There is an excellent article in this month's Scientific American magazine (August 2009). It covers a wide range of information - from the basics of the disease to current treatments being researched. It also has several diagrams and illustrations that were very informative. Happy reading!
  14. The Wal-Mart Great Values brand Beef Broth used to be marked gluten free and is no longer. It now lists wheat as an ingredient.
  15. The blood test is about 98% accurate. Many/most doctors will recommend a biopsy to confirm the diagnosis, as the biopsy is considered the "gold standard test" for Celiac. You'll find controversy on the biopsy. Some feel that with the high reliability of the blood test the biopsy is costly and unnecessary. Others will tell you that the biopsy is necessary...
  16. I say don't ditch the pancakes and eggs yet...I tend to go overboard on birthday parties, but I truly love it and really get into the whole theme. Pancakes and eggs are really easy, can be made ahead of time, and they are what your daughter wants...so now you just have to incorporate it into the princess theme. Which for me popped out immediately - Sleeping...
  17. A thermos is a great investment. I send my son to school with mac & cheese, quiche, lasagna, ham & beans, fried rice. The trick is to put boiling water in it for 10 minutes before adding hot food. It's always warm when he eats it. As for cold, we regularly put blue ice packs in with tuna salad, a veggie concoction dip with tortilla chips, hard...
  18. Maria's restaurant in Washington, Illinois now has a gluten free/dairy free menu. They are open for dinner on Thursdays and Fridays and lunch Tuesdays - Saturdays. The owner is allergic to many foods, including gluten. Her menu includes many sandwiches, wraps, salads, pizza, chicken pot pie and even gluten-free brownies. She is very willing to try to...
  19. I contacted Cape Cod to ask if their chips were run on dedicated or shared lines. Here is their response: Currently none of our products contain gluten. We do wash and sanitize our equipment between production runs. We do not use seasoning when we run the russets. I hope this helps you out. Please let me know if I can be of any more help...
  20. Be sure to double check those Doritos. I believe some, but not all are gluten-free. I don't believe the traditional flavor (nacho, I think) is, but cool ranch is I think.
  21. Isn't it just amazing! We also saw dramatic improvements in so many areas of our son's life. And we too wished we'd known sooner. When I look back at all the Ibuprofen we gave him just so he could get some sleep at night (he'd complain of his ankles and legs hurting so much as a toddler), it breaks my heart to know that his little body needed Calcium to...
  22. Regarding the dog food, we have gluten dog food in our house, but our son is almost 10. He isn't crawling around on the floor and then putting his fingers in his mouth. When he does play on the floor he knows he has to stay well away from where the dog eats. If he were a toddler I'd be finding the gluten free dog food. Your question was how careful...
  23. My husband and I eat almost entirely gluten free despite not having Celiac. We like the food and it's easier for us to have a gluten-free house.
  24. OK, I don't have Celiac and I know the psychological portion of Celiac is probably the hardest part. I'm so much better on the day to day stuff with my son than I am when I start thinking things like, "he's NEVER going to be able to __________." So I know my "choice" to eat gluten free most of the time doesn't come with the psychological baggage that HAVING...
  25. Gluten Free Pantry Sandwich Bread mix and Whole Foods 365 Days gluten-free Sandwich bread are both good mixes. They aren't the same as gluten bread, but they are definitely edible and they are WAY better than the packaged breads that have shelf lives of 2 years or whatever they are! We used to use Guten Free Pantry bread for PB&J until my son discovered...
