I do something very similar for a quick, healthier version of eggplant parmesan. I just use a single or double layer of eggplant though. BUT, my hubby hates eggplant, so for him I just slip in a chicken breast and cook it the same way (making sure it bakes long enough to cook the chicken). That's tough. I would be nervous if they use each other's desks a lot. If they stick to their own (and at 9 I doubt they're on the floor at all), then you're probably OK. My son's teacher last year used to make sure his desk wasn't touching other kids when there was food in the classroom. That way crumbs couldn't just be pushed onto his desk. Good... -

We just found these too and my son loves them! You're so good to just dip them in milk...he did eat a ton of them plain, but he was so excited to make smores out of them. We nuked a marshmallow for 11 seconds in the microwave then rolled them onto cracker with a piece of chocolate. He wouldn't share with me, but he said they tasted just like he remembered... -

Unfortunately, it often seems that almost any symptom can point back to Celiac. Diarrhea, constipation, throwing up, no stomach symptoms, etc. And yes, the symptoms you've described definitely sound like they could be Celiac. I'm sure there are many other things that it could be, but I'd definitely talk to your doctor about Celiac. -

I can't answer the actual question because I change my mind too frequently, but I can give some help on the rice. We use plain wild rice blends and then I cook them water with a bouillon cube or with broth (beef or chicken). Hang in there! I'm sorry you're feeling bad. Your system might just be revolting from the sudden changes. I'd ease into things. If you've had a very limited diet, adding in a lot of things can be traumatic. What a great project! My suggestion - make it a gluten free restaurant that would appeal to gluten eaters. I was amazed to find out how many of my recipes were easily converted to gluten free. There are so many recipes that gluten eaters would never even know were gluten free. It would be tricky to get the word out to those needing to eat gluten free... -

I googled low fat Chex mix and found recipes with butter ranging from 3 TBS to 6 TBS. 3 TBS with all the other ingredients isn't all that much. And if you use pretzles, o cereal, Chex, Gorilla Munch, and omit the nuts I think it would be pretty low fat. We also like Yoplait french vanilla yogurt with fresh berries and granola for dessert/snacks, but...
