ARCHIVED Omg The Stupidity!
CeliacMom2008 replied to Mandy F.'s topic in Parents, Friends and Loved Ones of Celiacs
Maybe you should! I started my own business 13 years ago. It was scary and the pay (or should I say lack there of) in the beginning really stunk, but now we have a successful business with 25 employees. It's definitely not all sunshine and roses and being self employed is assuredly harder than working for someone else, but there is a huge sense of satisfaction... -
ARCHIVED gluten-free Caramel?
CeliacMom2008 replied to munkee41182's topic in Gluten-Free Foods, Products, Shopping & Medications
I don't know of a store bought caramel, but I made these at Christmas (very easy outside of the stirring ). When eating them I thought many times they would be awesome incorporated into a brownie somehow. I'd love your recipe since I had no idea how to work a caramel brownie recipe (I'm not a creative chef - I just know how to follow recipes!!) Caramels... -
ARCHIVED Reactions To Cooking Gluten
CeliacMom2008 replied to bjn555's topic in Coping with Celiac Disease
My guess is that it's more likely that they aren't cleaning up enough and you, not knowing that gluten has been in your kitchen, don't know to be careful in your own kitchen. I know I'm more cautious at my parents' house than I am in my own. Outside of the dog food on the floor, I know in my house the pans, cookie sheets, strainer, countertop, towels, etc... -
ARCHIVED Dh Gluten Insensitivity?
CeliacMom2008 replied to HopeMum's topic in Parents, Friends and Loved Ones of Celiacs
You could be describing us! My husband started taking DDS probiotics last fall and it has made a HUGE difference! He's been through lots of doctors and tests to no avail. In fact, when our son was diagnosed he was tested twice (and we requested 2 different labs for the test!) and then he went on a completely gluten-free diet for a month. Then we decided... -

Mandy, you may just be that poor man's angel from heaven! I'm so glad you were led to take that job. I know with 3 jobs it will be very hard, but just think what you can do for another human being! You could talk to your manager when she returns about what you know about Celiac and how critical his complete gluten free eating is. Then offer up to try... -
ARCHIVED Newly Diagnosed 8 Year Old Help!
CeliacMom2008 replied to cancan's topic in Parents, Friends and Loved Ones of Celiacs
Poptarts - Silly Yak bakery in Madison Wisconsin (online ordering) has a poptart replacement. I've not tried them, but I've seen them on their website. Just in case you need a splurge treat! Lunches- PB&J on Pamela's pancakes (today I made them in the shape of Mickey Mouse heads - his absolute favorite!) Mac & Cheese (either homemade or Amy... -
ARCHIVED Can Anyone Recommend A Multi Vitamin For Kids?
CeliacMom2008 replied to mimommy's topic in Gluten-Free Foods, Products, Shopping & Medications
We chose Tall Tree because it had iron and was a "complete" vitamin. A lot of the gummy ones I could find only had a few vitamins in them. We got ours at Whole Foods. -
ARCHIVED Newly Diagnosed 8 Year Old Help!
CeliacMom2008 replied to cancan's topic in Parents, Friends and Loved Ones of Celiacs
First, welcome! My son was 8 1/2 when he was diagnosed. The first few months are tough, but it really does get much easier. My son just told his gastro last week (1 year follow up visit) that this diet isn't hard at all. Here are our breakfast line ups: Scrambled eggs Bagels from Joan's gluten-free Bakery (online ordering) Pamela's pancake... -
ARCHIVED Please Help!
CeliacMom2008 replied to flaca247's topic in Parents, Friends and Loved Ones of Celiacs
Another thing I thought of...the ingredients in gluten free foods can take some getting used to sometimes. For example: Garbanzo bean (also called chickpea flour) can cause gas (OK, all the bean flours can do this). Flax is a natural laxative (but very healthy, you just have to ease into it). Something in my PB cookies gives my mild heartburn (doesn't... -

1 - your mom has not been on the diet long enough to know. She is still in the learning curve and may be accidently getting gluten. If she's been sick for decades could take her a year to heal. A battle has been raging in her intestines a few weeks is not enough time. 2 - I do believe I have read posts from people who felt worse for a little while... -
ARCHIVED My Neice Needs A Voice.
CeliacMom2008 replied to AuntDeb's topic in Parents, Friends and Loved Ones of Celiacs
Rinne, Could we delete the whole thing once AuntDeb has read it - like tomorrow or whenever she says so? Then she could just start new threads with questions and such. That way if her sister did come here and do a search on her past posts she wouldn't see it. Even if she edits it her sister might be irritated with her business being discussed. My post... -

CeliacMom2008 replied to AuntDeb's topic in Parents, Friends and Loved Ones of Celiacs
Obviously we are only hearing one side of the story here, but your side breaks my heart. I agree with RiceGuy that the picture you've painted sounds like child endangerment. I believe it is in Dr. Peter Green's book that he sites an example of a child that was taken away from his parents because the state thought the parents were starving him to death.... -
ARCHIVED Joint Pain In Children?
CeliacMom2008 replied to mimommy's topic in Parents, Friends and Loved Ones of Celiacs
Add my son to the list of Celiac's who had leg pain. He was tested as a toddler for arthritis. We were told he was getting us up at night complaining of leg pain for attention. We were told his arches weren't formed yet and that was causing ankle pain. We were told he was having growing pains. All of these were told to us by his various pediatricians... -

ARCHIVED How Do You Get Your Whole Grains In?
CeliacMom2008 replied to clnewberry1's topic in Gluten-Free Recipes & Cooking Tips
We eat Quinoa pasta. We also eat quinoa cooked in chicken broth then add sauteed mushrooms and fresh grated parmesan cheese. It's OK. It's more of "eat because you need to and it's not bad" kind of thing. We added gluten-free oatmeal to the diet over Christmas and now eat that 3 times per week. Bob's Red Mill Mighty Tasty Hot Cereal is another good one... -
ARCHIVED Gluten Free Pancake Mix And Gluten Free Oat Meal

We like Pamela's Pancake Mix and Gifts of Nature oats. We buy both in bulk. -
ARCHIVED Birthday Party Help
CeliacMom2008 replied to Caseysmommy's topic in Parents, Friends and Loved Ones of Celiacs
Another option to adjust the time so that it doesn't fall on a meal. Then just have lots of snack foods, which can easily be gluten free. I'd go ahead with a gluten free cake. We serve Kinnikinnick gluten free cakes all the time to our extended family and friends and they never know it. -
ARCHIVED Glutened From Popcorn?
CeliacMom2008 replied to 3groovygirls's topic in Parents, Friends and Loved Ones of Celiacs
I'd think the popcorn would be safe. Disney is so careful about food issues. I'd think it was probably from some other source or perhaps just a nasty flu bug. You were at Disney - kid central and thus germ central. -
ARCHIVED Coke, Pepsi Max, Pepso
CeliacMom2008 replied to UnhappyCoeliac's topic in Gluten-Free Foods, Products, Shopping & Medications
Coke - I called them to ask if their lemonade was gluten free shortly after our son was diagnosed and the rep told me their products should be gluten free, and they were guaranteed to be gluten free down to 200 ppm. I thought that was irritating, so we decided to boycott them just because I was easily irritated early on when having to deal with manufacturers... -
ARCHIVED Lasagna With Other Noodles?
CeliacMom2008 replied to amybeth's topic in Gluten-Free Recipes & Cooking Tips
I think that could work. Really, a lof of pasta dishes are just variations of the same ingredients. I don't think you can go wrong with pasta, sauce, meat and cheese!! As for cooking time, I'd just say it's done when the cheese is the desired doneness. And you can keep lasagna warm in the oven for awhile, so I don't see why you couldn't with your Super... -

Turtle Cheescake Preheat over to 300 F. Crust: 1 1/2-cup toasted almonds (I toast them by cooking them in a pan on stove until lightly browned - I'm not sure if that's the "correct" way to toast them, but it works for me) 1/2-cup sugar 2-tbsp unsalted butter, melted 1/2-tsp almond extract (optional - I've done it with and without and it works both... -

ARCHIVED Rachel Ray Beef And Chicken Stocks Say Gluten Free
CeliacMom2008 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
We discovered Rachel Ray's chicken and beef stocks (Stock in a Box). They both say "Gluten Free" right on the box. And they worked great in gravy and pot pie! -

ARCHIVED Still Struggling
CeliacMom2008 replied to honeypond's topic in Parents, Friends and Loved Ones of Celiacs
When we're at other people's houses I always have my son use paper towel instead of the kitchen towel when he washes his hands. This probably stems from my own bad habit of wiping my hands with a towel too often without washing them, thus why we go through at least one hand towel a day in the kitchen, frequently more! I figure I'm probably not the only...
