  1. Here's our lunchbox list: PB&J - Very easy on gluten-free pancakes Fried Rice in thermos Pasta (with marinara, spaghetti, or alfredo sauce) in thermos Lunchmeat roll ups and cheese chunks Hard boiled eggs Fresh fruit and veggies Left over chicken with ranch salad dressing for a dip Cold shrimp Beef Stroganoff leftovers Cookies Larabars...
  2. I have a recipe for turtle cheesecake that is actually quite easy, looks like a very fancy dessert, and is YUMMY! Let me know if you want me to post it.
  3. Kakaiba, Yes, M&Ms are gluten free. Enjoy!
  4. We make it with chicken stock or broth instead of water and then add saut
  5. I finally got a response from my email. It says Strawberrry Chex, but I had actually asked about the Strawberry Chex, Chocolate Lucky Charms, Honey Kix, and Berry Berry Kix in my original email: Dear Valued Consumer: Thank you for contacting General Mills regarding gluten in Chex strawberry cereal. This product is very new, it has not been verified...
  6. I emailed General Mills and didn't receive a response, so I called today. The rep told me that they are very careful about cross contamination, but she didn't seem very knowledgeable about the whole gluten thing. I want to be excited and want to try these, but I don't understand why they make such a fuss about the Rice Chex and do nothing about all the...
  7. I personally don't think it's gluten. I have suspected that they cause intestinal symptoms in my son, but I don't think it's gluten. He used to eat the lemon ones quite frequently. In fact, in the first 6 months after diagnosis they were one of his mainstays for the lunchbox and car snacks. His gluten test at the 6th month mark shocked the doctor and...
  8. Dr. Peter Green's book, Celiac Disease: The Hidden Epidemic, is also excellent.
  9. We just tried Joan's gluten-free Great Bakes (gfgreatbakes.com). The shipping is very high because they ship everything in a cooler insulated box so it stays frozen, but we are definitely going to be repeat customers! We tried the cinnamon raisin and plain bagels as well as the raisin english muffins. Again, they are not cheap, but they were outstanding...
  10. We eat Bob's Red Mill Mighty Tasty Hot Cereal a lot. Also eggs - scrambled, omelets, quiche (crustless), etc. We just added oatmeal (certified gluten free).
  11. Something that always helps me with my willpower is to visualize the positive consequences and the negative consequences of the action. I was diagnosed with extremely high cholestrol at a very young age. I was able to change very bad eating habits (I was one of those skinny people who could down a dozen donuts and not even flinch) by visualizing myself...
  12. Our son was diagnosed at 8 1/2. Leg pains were a huge symptom that we had no idea was related to his stomach issues. When he was a toddler he started having bad leg pain. Over the course of 6 years he was checked for arthritis, told he had growing pains, told his arches weren't formed yet and causing trouble, told to make sure he always wore shoes, told...
  13. My son is the Celiac. He's very paranoid about eating anything that isn't prepared by myself, my husband, or my mom. The two times (outside of Disney) that he's eaten at a restaurant there have been issues. So he is just overly cautious. Over Christmas we had two great experiences with the gluten thing. First, our neighbor had a Christmas party and...
  14. We do a very similar fried rice, but we use shrimp, ham, mushroom, peas, and carrots (and eggs, rice, and soy sauce of course). Fried rice is excellent in a thermos for a meal away from home.
  15. I second that you may be hungry because you're body is trying to make up for lost time. My son (8 1/2 at the time of diagnosis) ate like a mad man for many weeks. It finally got a little more "normal" but he still has a hefty appetite. You should've seen the lunches I'd pack for him and when I'd take him lunch at school it was downright amusing to watch...
  16. I have a 9 year old boy, so my advice in the girlie department is that when we were at the Mickey store at Downtown Disney I walked past a room full of little girls that had enough hairspray to ignite all of Orlando if anyone lit a match!! It was some sort of beauty salon/princess do up place. I went straigh tot my hubby and said, "Thank heaven we have...
  17. Welcome! First, I'd like to assure you that this will get easier. The first couple of months are extremely challenging and emotion filled. My son (now 9 and half) was diagnosed one year ago. I can tell you life is pretty darn good now - and 12 months ago I thought the sky was falling! Danna Korn's book called Kids with Celiac is a GREAT book. I wished...
  18. Roda, Sorry to hear you're having a gross day...I hate those! Why don't you get some sleep then think up the one food that would you feel "all better" - then look on here or post a request for a simple recipe for that replacement. I'm guessing some sleep and some comfort food would do you a world of good. Maybe some cookies (peanut butter with kisses...
  19. We just celebrated our one year anniversary as a Celiac family. We've been to Disney World twice in that time. After our first visit we became Disney Vacation Club members - yeah, it's that great! We're going back again next spring. Our experiences have ranged from great to supercalifragilistic! When we were there in November we discovered...
  20. Congratulations and Merry Christmas!
  21. We're taking a lasagna to the in-laws. Easy to make ahead of time and easy to deal with on the road.
  22. One of my all time favorites at the holidays are the beef and cream cheese logs that get sliced up and put on a cracker. I don't know what they're called, but if you've had them you know what I'm talking about! It's dried beef laid out in a big rectangle and then you "frost" the beef with cream cheese, line up green olives at one end, then roll it all up...
  23. I love amazon for bulk...here's what's in my fridge: Brown rice flour (I buy through amazon subscription for added discount) - we use this alot because of pizza White rice flour - just started using for cookies Sweet white rice - I need a little bit in my pie crust recipe Tapioca - use it for all kinds of things (I buy this in bulk) Potato starch ...
  24. We use Hormel pepperoni (says gluen free on it), Hormel Naturals sliced ham (says gluten free on it), Hormel real bacon bits (I believe it also says gluten-free on it), plus mushrooms, pineapple, Kraft mozarella, Kraft cheddar, Kraft grated parm. cheese. I make my own sauce out of tomato paste, tomatoe sauce, sugar, and spices. Don't wait another day...
  25. Rosie's Mom - that strainer has to go! Strainers are really hard to remove the gluten from. You can pick up a new one for a few dollars at Wal-mart. Have you had her blood tested recently? I think that would tell you if her tTg levels were still elevated, thus glutening still ocurring. I have to second (or third or whatever) the idea about trying...
