ARCHIVED Any Recommendations For Melting Chocolate
CeliacMom2008 posted a topic in Gluten-Free Recipes & Cooking Tips
My son would like to make chocolate candies - the kind where you melt the chocolate and pour into a mold. Does anyone know of a good quality one that would make some great tasting chocolates? I've never done this before, but I assume there is a huge difference in these kinds of chocolate and of course they need to be gluten-free! And if you're answering... -
I'm a year into the gluten-free cooking and am just starting to get a handle on the flours, so I'm sure others will have much better answers but I'll give it a start...and please someone correct me if I lead her astray! You need a mix to get a good taste and texture. No one flour will give you a result. Rice flours are a good base, but they don't give...

ARCHIVED Gluten Free Pizza
CeliacMom2008 replied to CMCM's topic in Gluten-Free Recipes & Cooking Tips
"Bet you can't tell the difference between this crust and Pizzeria Crust !! Open Original Shared Link" We use this pizza crust every weekend and it is fantastic! In fact, two weeks ago my husband and I were out for pizza for lunch (we're not Celiacs) when I remembered that I had promised my son pizza for supper that night. I told my husband that he... -
ARCHIVED White Cake Mix Or Recipe?
CeliacMom2008 replied to CMCM's topic in Gluten-Free Recipes & Cooking Tips
We like Kinninnick - in fact we serve both the white and chocolate and many family functions where my son is the only Celiac and no one is ever the wiser. -
ARCHIVED Deep Fat Fryer
CeliacMom2008 replied to melrobsings's topic in Gluten-Free Recipes & Cooking Tips
I just bought a Presto Cool Daddy at Kohl's. I'm not sure if it counts as "compact" though. It's definitely big enough for anything we'd ever put in it. I haven't used it yet, but hubby found reviews that said it was good. -
ARCHIVED Q's For Those With gluten-free Kitchens/homes
CeliacMom2008 replied to SGWhiskers's topic in Coping with Celiac Disease
Our son is the only Celiac in our family. We chose a gluten-free household for a couple of reasons. 1) A safe haven. We think it's important for our son to have one place he can relax a little about food. 2) I'd be a basket case in a mixed house. I would be cleaning every other minute. I'd be paranoid my son would accidently grab something he... -
ARCHIVED Wellshire Kids' Gluten-free Products Have Gluten!
CeliacMom2008 replied to Kibbie's topic in Parents, Friends and Loved Ones of Celiacs
Thank you very much, Richard! I wondered what that was about but hadn't had time to research it. We love Kinnikinnick cakes and donuts around here. I know they are healthy, but I don't expect a birthday cake to be healthy - just gluten free and yummy (not too much to ask, right?? ). -
ARCHIVED How Do I Tell Her?!
CeliacMom2008 replied to Mackenziesmom's topic in Parents, Friends and Loved Ones of Celiacs
We like Gluten Free Pantry Sandwich bread. But my son LOVES PB&J on Pamela's pancakes. Just to give you another option. Good luck with everything! -
ARCHIVED Wellshire Kids' Gluten-free Products Have Gluten!
CeliacMom2008 replied to Kibbie's topic in Parents, Friends and Loved Ones of Celiacs
Here is the letter off of Wellshire Farms website (www.wellshirefarms.com): QUALITY CONTROL November 21, 2008 To Whom It May Concern: There have been some questions about the status and production of our Wellshire and Garrett County gluten free Dino Bites as a result of a recent article printed in the Chicago Tribune. Our understanding after... -
ARCHIVED Gluten-free Pizza In Orlando?
CeliacMom2008 replied to bbuster's topic in Traveling with Celiac Disease
We ate at the shark restuarant at Sea World last spring. The meal was safe for my son, but I don't think they really "got it." He just had shrimp and plain veggies. The chef didn't come out. It was just the waiter. I wasn't all that impressed. We also visited Discovery Cove at that time. It's an all inclusive park and they said they could do gluten... -
ARCHIVED Disney World
CeliacMom2008 replied to CeliacMom2008's topic in Traveling with Celiac Disease
When we went in the spring I thought I'd still have to do some cooking. Not so. We ate all but one breakfast in the room, but that's just easier for us because there are 5 of us and no one seems to get rolling at the same time. We were talking about how next time we go we may leave Disney and go to some other places. I plan to ask the chef to make some... -
We just returned from Disney World. I know I posted about our positive experience with Disney the last time we were there, but I just had to reiterate that they are amazing! It is so fun, relaxing, and wonderful to dine there. We tried a walk up restaurant this time in addition to the sit down places, and it was just as great of an experience. The...

ARCHIVED Elisa Gluten Test Kit For Food
CeliacMom2008 replied to jmj0803's topic in Parents, Friends and Loved Ones of Celiacs
I'd check the Centrum. When I called them (last Jan.) they said all of their children's chewables contained gluten. But that's been almost a year. Are you sure on the A-1? I've never checked A-1, because my hubby was a Heinz 57 fan (which does contain gluten from malt or something, I can't remember). I too would ditch the Lays and Fritos for awhile... -
ARCHIVED Halloween Pudding Cups
CeliacMom2008 replied to CeliacMom2008's topic in Parents, Friends and Loved Ones of Celiacs
Here's the cookie recipe. It's too buttery for my tastes, but my son like them. This recipe is for sandwich cookies, but I just made the headstones (single layer, not a sandwich). They sound like Oreos, but they aren't. They cookie is thicker and softer. 1 1/2 cups butter or margarine 1 cup sugar 1 egg 1 TBS milk (rice, soy, or cow) 1 tsp baking... -
ARCHIVED Halloween-how'd It Go?
CeliacMom2008 replied to celiac-mommy's topic in Parents, Friends and Loved Ones of Celiacs
I too was shocked by how little had to be removed. Despite that that means a lot of candy around the house, it was fantastic! A nice story...our neighbor went online and looked up gluten free candy. She bought her candy to hand out based on what my son could eat. How sweet was that?!?!? Now it's time to start thinking about turkey day! -
ARCHIVED Halloween Pudding Cups
CeliacMom2008 replied to CeliacMom2008's topic in Parents, Friends and Loved Ones of Celiacs
They're on two cookie sheets. We live less than 3 minutes from the school, so I don't anticipate a problem. Still, I'll be the slow one creeping around corners at 2:00! -
ARCHIVED Halloween Pudding Cups
CeliacMom2008 posted a topic in Parents, Friends and Loved Ones of Celiacs
I know this is going to sound like I'm totally bragging...and well...I probably am. But more importantly I wanted to share an idea! I signed up to bring the treats for my son's Halloween party so they could be gluten free. My son and I came up with Halloween graveyard pudding cups. Here's what we did: I layered chocolate pudding and then vanilla pudding... -

ARCHIVED Thanksgiving Update And Families
CeliacMom2008 replied to torontosue's topic in Coping with Celiac Disease
This isn't a quick solution, but you could invite your family over for smaller meals several times (just parents one time, siblings another, whoever is a problem) and make them some of your "weird" food. I think people only believe it is "weird" until they eat it. I mean a turkey, mashed potatoes, sweet potatoes, cranberries...most Thanksgiving foods are... -
ARCHIVED Oh Wow! Hi!
CeliacMom2008 replied to saraphym's topic in Parents, Friends and Loved Ones of Celiacs
Welcome to the family and welcome to the roller coaster of emotions that the first few months bring. My posts were crazy those first few months...is he being glutened...does he have the flu...can he not tolerate milk...did he eat something with lots of flax or some other new ingredient...is he eating too many fruits and veggies... I can tell you it does... -
ARCHIVED Having My Son Evaluated For Celiac Disease
CeliacMom2008 replied to mamaesq's topic in Parents, Friends and Loved Ones of Celiacs
Here's the great news - Dr. Fasano is supposed to be one of the top Celiac doctors in the country. So I would rest easy knowing that you're in with the best. Are you overreacting? Absolutely not. The weight issue - my son was in the 90-95th percentile for height and weight for 8.5 years. Now I'm 6' and my hubby is 6' 2". So he should've been tall... -
ARCHIVED Gluten Free Toothpaste For Toddler
CeliacMom2008 replied to nitu-752002's topic in Parents, Friends and Loved Ones of Celiacs
Please double check me, but I believe all Crest toothpastes are gluten-free. Again, please call to confirm, but when I called to check on the regular paste I think they said all were. -
ARCHIVED Things Are Getting Better
CeliacMom2008 replied to sugarsue's topic in Parents, Friends and Loved Ones of Celiacs
How wonderful! The eating thing amazed me - the quantity. I always thought my son was a big eater. Then we went gluten free - OH MY! I would pack his lunch box jammed full! And my mom would take him lunch twice a week to give her extra big meals. They don't get very long for lunch and she would come home laughing about how the other kids talk and carry... -
ARCHIVED Fellow Soccer Mom Wants To Make Treat Son Can Have
CeliacMom2008 posted a topic in Parents, Friends and Loved Ones of Celiacs
We had a very nice gesture tonight at our soccer game. One of the players came up after the game and asked if my son could have whipped cream. I said, "Some, why?" Her and her mother want to make an after game treat our son can have too (usually he takes his orange slices and eats those while the other kids get their Oreos, chips, crackers, etc.). He...
