  1. For your thermos, my son really likes fried rice (which is really easy to make, let me know if you need instructions), pasta with alfredo sauce (we use Bertolli's and I add chicken or shrimp for variety), Mrs. Leeper's leftovers (these are Hamburger Helper like box dinner mixes), sloppy joe (son never liked it on a bun pre-Celiac so this is his preferred...
  2. Our son has been gluten free since Dec. He was accidently glutened back in Apr/May by some popcorn salt and ended up with D about 4 days later, smelly gas, fatigue, irritability. All what we expected. Four weeks later his TTG levels were amazingly at 2.8 even with the glutening. Not exactly what we expected, but we were happy. Fast forward to last...
  3. When my son was diagnosed, his ped. GI told my husband and I to be tested. When we came back negative he said to be retested every couple of years or at the first sign of any symptoms. I'd assume a similar recommendation would apply to kids whose parents tested positive.
  4. The Outward Bound trips I've heard of are usually pretty isolated and can be long lasting. If that's the case with your daughter, I wouldn't hesitate to look through the food. Heck, I'm a worry wart, I'd look anyway! When I'm feeling nervous about my over protectiveness I usually just fess up really fast. "I know, I'm a worry wart. But a quick look through...
  5. OK, this is only my experience, so take if for what it is worth. My son was diagnosed in Dec. Prior to diagnosis he was a wonderful, amazing, smart, kind hearted kid. His teachers loved him. Our family loved him. He really was a good kid. Buuuuut, he had these mood swings... Funny you mentioned Legos. We had many experiences with Lego frustration...
  6. We do the "better than" thing too. My son doesn't like white or yellow cake, so he likes it when he goes to birthday parties that he always gets chocolate! And for his school treat bag (which I thought would be really tough on him), he sees it as a positive too. His treat bag is filled with HIS favorites, so he's alwasy assured of something he likes! ...
  7. You are so lucky! You owe that pediatrician who suggested the blood test a huge thank you! I don't think you know how blessed you are to have found a doctor so quick to help your daughter. So many doctors just don't know about Celiac. It's one of the most misdignosed diseases out there. You are so lucky Paige didn't have to get incredibly sick before...
  8. Well you're already off to a great start. Your attitude is terrific! My son is definitely a success story. He has done so well with the changes. He has so much more energy. He no longer has to take naps regularly and he loves staying up "late" vs. the old 7-7:30 (he just turned 9). His mood swings have disappeared. His intestines are normal. He...
  9. I know this is an old post, but in case anyone else does a search and is looking for this product ~ I couldn't find this anywhere on Kraft's website. I ended up calling and they told me it was calle dKraft Marcaroni & Cheese Cheese Topping. The bar code is 2100061505. She also asked my zip code and then was able to tell me the closest store...
  10. First of all, it really does get A LOT easier. The first month is tough. There's no getting around it. You have to relearn so much about your kitchen and the food you eat (at least I did). But, I used to HATE cooking. Baking was OK - mostly because I have a sweet tooth and I liked the results! Now I actually like being in the kitchen. I'd love to quit...
  11. Just wanted to chime in to say I hope the biopsy went well! Let us know if we can help in any way!
  12. My son is the only Celiac in our family (or so the tests say). We see such a dramatic change in his mood when he is glutened and compared to pre-diagnosis that we have a running joke around here. If my husband or I is in a bad mood the other is usually quick to say, "Perhaps you should try a gluten free diet!" The mood changes are one of the best things...
  13. My son just had his 9th bday and chose Transformers as the theme. I baked a 3 layer 8 x 8 cake and frosted it with grey icing. Then I made a darker grey/almost black and made straight lines around the cake in funky maze like patterns. The lines even blended into the Happy 9th! I had written on top. The hardest parts were linig up the layers and keepign...
  14. My son likes Gluten Free Pantry's bread mix. It freezes well (I slice it and then freeze it with saran wrap between the pieces so I can pull out however many I need at a time). How did your cookies turn out? We love Gluten Free Sensations chocolate chip cookies. EVERYONE who has tried them loves them. They always disappear at family functions (where...
  15. That's wonderful news! Good job to all of you! Doctors can be frustrating. My dad routinely reminds me they are just practicing medicine. And sometimes you'll have a great experience and others not so great! My son was always in the 90-95th percentile so our doctors kept telling us he was fine and to stop worrying. Well I'm 6' and my hubby is 6...
  16. My then 8.5 year old was diagnosed in Dec. He is the first in our family to be diagnosed, so we had no idea what our life would become. He has transitioned wonderfully and has done so well both physically and mentally with his new lifestyle. In the way of "tips" for making it easier: I was shocked to find out how much candy and treats he was getting...
  17. It is a huge accomplishment and I'm really proud of all of us! My mom has been so incredible - she bakes bread for cold lunches, she has us over for dinner a couple times a week, she helps shop/research, has been a shoulder to cry on, and even takes a "hot" lunch to my son once or twice a week or brings him home. My son has been more than incredible - he...
  18. There was a post recently about foods people were craving. If I remember correctly peanut butter, cashews, and dates were common favorites. I found it facinating how so many Celiacs craved the same things. These three in particular aren't really "normal" craving foods - chocolate, potato chips, yes, but nuts and dates?!?!? My son falls into the peanut...
  19. I can barely contain my excitement! Our first follow up blood test came back today...2.8!!!!!!!!!!!! My baby's TTG dropped from 100 in November to 2.8!!! We had been told to be happy with any significant decrease. I was prepared to be happy with 50. 30 would've made my day. But 2.8! WOW! Even with his accidental glutening last month, his levels are...
  20. Dave, My son was diagnosed with Celiac in December. He turns 9 next month. So recently I've had to deal with what you're going through, only as a parent (and many times I wished it were me not him). I know this will sound a little crazy to you, but you have so much to celebrate! The symptoms you described may sound "mild" to you now, but as you heal...
  21. I know many prefer "from scratch", but Bell Evans has GREAT breaded chicken products - chicken tenders, chicken nuggets and chicken patties. They're frozen and EASY for those times when you need easy! And they are white meat. We use the tenders, and they're pretty "healthy" (for a breaded chicken product, at least!).
  22. I know many prefer "from scratch", but Bell Evans has GREAT breaded chicken products - chicken tenders, chicken nuggets and chicken patties. They're frozen and EASY for those times when you need easy!
  23. My hubby and I just watched an episode of Rules of Engagement (CBS sitcom) that we had taped this week. They had a reference to a wheat allergy. They didn't come out and say "Celiac", but they said: Did you use flour to make that cake? My son is allergic to wheat. It will kill him. You tried to poison their son! One of the stars baked a cake...
  24. I hope someone has an answer for you, because we have the same problem. My son got sick the last few times he had pizza (a few days of terrible D). I started with store bought crust, store bought sauce, shredded moz., and bacon. Then went to homemade crust, store bought sauce, cheese, and bacon. Then went to homemade crust, homemade sauce, cheese and...
  25. I'd like to chime in just to give you words of encouragement. As a Celiac, you have to be gluten free, but in time you'll see it isn't as bad as you might think now. Our family went gluten free when our son was diagnosed. Now I know there is a HUGE difference between my choice to eat gluten free food and my son't having to eat gluten free, but I can tell...
