  1. The sauce I use: INGREDIENTS: 15 ounce can tomato sauce 6 ounce can tomato paste 1 tsp ground Oregano 1 tsp garlic powder 1 tsp ground paprika 1 tsp Italian seasoning or basil (we use Ital. seasoning, it
  2. We LOVE this one. My gluten hubby prefers it over all pizza restaurants' crusts. My son's best friend begs his mom to make it (they don't need a gluten-free diet, he just likes it!). I make my own "mixes" by mixing the dry ingredients (excluding sugar and yeast) and putting it in ziplock bags. It speeds up Friday pizza and a movie night. I also make...
  3. We like it. I prefer Kinnikinnick, but the Betty Crocker was good in our opinion.
  4. My son LOVES cheesecake, so we make a lot of them around here. As for the chips, I'd suggest starting with Ghiradelli or Nestle and then call the manufacturer to be sure there is no cross contamination (assuming the ingredients list looks OK). For crust, I toast almonds then put them in food processor (or blender if you don't have a food processor...
  5. We use the rat poison analogy here. It helps people understand that a little does matter. Where it breaks down is that if you ate a tub of rat poison you'd be dead but a tub of gluten isn't going to kill you immediately. None the less, we use it and find it a very effective way of explaining it to people. Our dietician was the first place we heard it...
  6. I believe you have it correct.
  7. I found this recipe online and adapted it to be gluten free. They were DELICIOUS! If you're looking for something easy to do with that overflowing rhubarb, you might want to give this a try. Or if you haven't tried rhubarb before, give these a whirl. NOTE for those unfamiliar with rhubarb: It is VERY high fiber. So don't gorge yourself on it unless...
  8. Off Breyer's website: User: Can you tell me if Breyer's Carbsmart Fudge Bars are gluten free? Agent: We recommend consumers read the label each time before buying our product. If gluten is present, it is clearly listed in plain language on the ingredient label (i.e., wheat flour, rye, barley, oats, and malt). Malt is a barley based ingredient...
  9. Last week's episode of "Chopped" had the gluten free chef and consultant Sunshine Best as a contestant. Although she was "chopped" in the first round it was still good exposure for Celiac. She even used tapioca flour!
  10. You are not serious, are you?!?! It's pizza for goodness sake. It's a nice gesture. So you can't eat it. Get over it. If you had high choletrol or were lactose intolerant you couldn't eat it either. Do you get a gluten free paycheck? Be thankful for that and move on. You've wasted enough of your time and energy and your company's money worrying about...
  11. Oh I don't think that would be any fun! I'm sure it's most enjoyable if you're...oh about 10, but that goes to show you how sophisticated my sense of humor is!
  12. For those of us who make many calls to manufacturers (many of which can be very frustrating and time consuming), here's one manufacturer call that should lighten your day. If you have a free minute... Call the Nestle Hot line at 1-800 295-0051. When asked if you want to continue in English or Spanish wait quietly for 10 seconds and you will smile...
  13. lunch meat hard boiled eggs leftovers in a thermos cheese pudding
  14. I'd capitalize on the great spring weather...drinks and a walk by a lake or river, botanical gardens, zoo or miniature golf or something you might have locally that you can use the spring weather as an excuse to go. A "we can't waste this beautiful weather" kind of approach. Assuming of course that spring has hit where you live.
  15. Most people who are concerned with skin contact are concerned because of the possibility of it ending up in their mouth (and thus intestines). Things like Blistex on the lips, lotion on the hands that touch food, shampoo in the mouth, etc. There is much debate on this board about gluten being absorbed through the skin. The medical community will...
  16. I find it much easier to have a gluten-free household. We don't go without in any way, in fact, we eat much better than before!
  17. My son eats the mac & cheese and enchiladas regularly...
  18. Oh my gosh! There definitely is dessert after gluten! Our sweets/baked goods/dessert intake went through the roof two years ago when our son was diagnosed with Celiac. We never had that kind of stuff like we do now. I struggle with high cholestrol so I tried not to have it in the house. We love all kinds of gluten-free goodies - prepackaged as well as...
  19. There's a gluten free individual packaged rice crispy treat by Glennys. It even comes in a blue package - just like the gluten ones! They regular, vanilla, and chocolate. You mentioned rural. We are in a rural area as well. I depend on Amazon for lots of staples. There are WAY cheaper than the closest natural food store for us and have a bigger selection...
  20. Don't sweat the trip! Disney is FABULOUS! Are you staying on Disney property? Do you know which parks you are going to? Do you already have reservations at any restuarants? We actually now go to Disney just for the ease of eating! Literally! We don't go to the parks unless there is a restaurant inside one that we want to go to. We just eat at the...
  21. Chicago...go to DaLuciano's if you like Italian. There menu looks amazing! And with 4 Celiac kids in the family you have to think they "get" gluten free! We made a huge fuss with the 1st anniversary. I decorated the house with balloons and had my son's tTg number plastered everywhere (he was down from 100 to 2.8). We had his grandparents over for...
  22. We use Kinninnick. We've served it at many birthday parties and team parties and NO ONE has ever been able to tell it is gluten free. I make homemade buttercream or chocolate frosting. Both are very easy. Let me know if you need either recipe.
  23. IF you have time for any fun or get to splurge on any restaurants, Disney is absolutely amazing for anyone with any type of food issues. We've had so many chefs make comments like to our son like, "The only thing you can't have is gluten. Well that's easy enough." When my son was first diagnosed and I was having trouble figuring things out we had a trip...
  24. I know you said you wanted homemade, but I thougth I share that we use Kinnikinnick mixes all the time and I have never had anyone know it was gluten-free. As for the "cool" factor, you can get Wilton pans for about $12 in all kinds of great shapes and they really are pretty easy to decorate. You get a very professional looking cake and all you need to...
  25. Have you been eating a lot of bean flours or beans? It could be a reaction to a very different diet.
