Single mother raising a 3 year old with celiac disease. She was diagnosed at 5 months. After she was diagnosed I also found out that I had celiac disease. We have both been on a gulten free diet for two and a half years. She still gets sick from coming in contact with gluten from other children or contaminated toys. Hopefully as she gets older, life for the two of us will become easier. I have made up many fabelous gluten free recepies. Cooking has become easier and more reliable. I find that if you are making pizza crust, stoneware is the absolute best to bake in! I make everything from breads to crackers to the very best cupcakes. We also substitue our milk for soy milk. She was having a problem with digesting soy milk so I started to make our own soy milk instead and she handled it a lot better.
