I just wanted to say, I love Disney World for their willingness to bend over backwards to make sure I have *DECENT* gluten free food and for introducing me to French Meadow Bakery brownies and cookies (although it's not like I needed to add more sugar to my diet - but whatever!). :) gluten-free living is vastly different today from almost 10 years ago when I was diagnosed and every day it just keeps getting easier.

  2. What are the ingredients? I would be surprised if they did since "cookies" are usualy made from wheat flour but that would be nice to have another kids cereal option, wouldn't it?

    BTW, I wanted to mention that Enjoy Life chocolate chips are awesome and they are soy free. :)

    No Kidding! I can't find the enjoy life chocolate chips in my area, but my local grocery store did start carrying their chocolate bars made from rice milk that do not have soy and I have been so happy!!

    I'll type up the ingredients when I get home this evening.

  3. So my husband was at the store shopping yesterday (a rare occurance indeed) and he noticed that in Cookie Crisps there are no more gluten containing ingredients. It does still say "may contain gluten ingredients" I'm assuming because it's not being manufactured in the GM dedicated factory, but I'm wondering if this is the next cereal product for them to move over? I did eat a bowl last night and don't think I am having any issues but my symptoms are way more subtle than most celiac's so please don't take my word for it. I've just been so desperate for anything with chocolate that doesn't contain soy. But it looks as though they are using the same ingredients in the cookie crisps sprinkles.

  4. Hi Lockheed - check out the Specific Carbohydrate Diet. I'm on the low FODMAP diet at the moment and am limiting my carbs per serving and spacing them out...

    Okay so somehow naturally I'm really close to a low FODMAP diet and those foods don't seem to give me an issue. I'm going to look into it further. Thanks for recommending!

  5. I'm sorry, I should be more clear. These are items I eliminated from my diet 8 years ago. I've been gluten-free for a while and I really pay attention to being gluten-free. But really.. I think I'm starting to have an issue with rice... like the same kind of issue I have when I get something with gluten. And it doesn't seem to matter the brand or type or source. And I'm thinking if I add rice to the long list of grains that I already can't have.. then perhaps I should consider eliminating all the grains together. Maybe I just can't tolerate grains. And I really don't miss the illness that came with eating most carbs. I do miss fast food french fries (the cross contamination on those has gotten to be enough in the last couple of years to set me off).

    Further, I've always wondered about the celiac's diagnosis. I don't present with the leaky gut syndrome or the immediate severe illness that occurs for the tradiational celiac model. My reaction is the exact opposite - everything just stops functioning including me. So maybe the end result is the same as a traditional celiac in that we both have severely damaged intestines and malnutrition resulting from not absorbing vitamins and nutrients, but maybe it's not really the gluten that I'm having the issue to. Maybe it's something broader that includes glutens?

  6. I am not a fan of eliminating a whole food group from your diet, but I'm seriously beginning to wonder if I would feel better if I just avoided grains entirely. I have celiac's so no wheat rye barley. I also react to oats, amaranth, millet and spelt. I recently seem to be having issues with rice also. I thought for a long time maybe I just needed more excercise and more water - although that helps me on the physical fitness spectrum, it doesn't help the severe digestive issues I'm having. Has anyone else eliminated all grains? How do I do that safely? Is there some research out there about this? Or am I just crazy?

  7. I had this exact kind of reaction to muscle relaxers. They apparently put my brain to sleep without putting the rest of me to sleep. It takes several weeks to recover from. I had one reaction that was so severe that my significant other at the time called my parents to come and stay with me for a week to have me evaluated by a neurologist. They were concerned I had had a stroke or a seizure or something else that was brain damaging. Fortunately the severe effects wore off after a week or so and the fogginess wore off after a month. But I don't take muscle relaxers anymore. In specific I had the reaction to cyclobenzaprine.

  8. Each year for my new year's resolution I set a goal to learn to cook something new. Last year it was beans and honestly I was a complete failure. I made split pea soup once with a ham bone which was fantastic but that was about it (so I'll have to repeat beans and lentils another year). This year I am more determined and my goal is soups. So if you would like to share, please post your favorite gluten free soup that you make. Tonight I am actually going to try to make vietnamese pho. The reason I picked soups is because I need to incorporate more veggies into my diet and soups just seemed like a wonderful way to do it.

  9. Is there another doctor in Houston that is highly recommended also? Dr. Verm is not on BCBS TX PPO. I just have a bad feeling my current GI doc is missing stuff left and right and I was told by my previous GI doc in Dallas that they had removed tubular adnoma polyps - the kind that become colon cancer. But my screenings for the last six years have shown nothing and my current GI doc keeps wanting to take me off my gluten free diet (Heck no!).

  10. So before recently the only mac n cheese I could find here in town was the Deboles. It has rice bran in the noodles and as such taste a little more fibery than I would prefer for mac n cheese. Recently, the store here has started carrying Annie's Rice Pasta and Cheese which is such a tremendous improvement in flavor over the Deboles and that made me wonder if there was something out there even better? Maybe I could buy it over the internet and have it shipped or something if it's not too expensive. So what is your preference for mac n cheese?

  11. We're traveling to Holland and Ireland later this month. Any suggestions on traditional dishes that are safe or that we should avoid or any tips or tricks for finding out information? In Ireland we're staying mostly at bed and breakfast places so I've contacted the booking person at these places to ask some questions. I just don't want to spend the majority of the trip either being sick or starving for fear of being glutened. Also, my 2-year old son who is also celiac (we think) will be traveling too so any kids dishes would help as well. Thanks in advance!

  12. Also, Legal's seafood has a gluten free menu. The local grocery store that I fell in love with there is Wild Oats and the store has a buffet area of fresh veggies and fruits which are all gluten free too not to mention they had a gluten free foods section. Most places we went understood gluten free and were able to provide me with information, very much unlike my home state of Texas.

  13. My doctor isn't recommending that I eat soy. Maybe I've confused everyone on that some how. He's aware that I have a sensitivity to soy and don't eat it. But soy when processed in the body synthesizes and estrodial like compound. That's why it is fairly effective in dealing with post-menopausal symptoms. What occurred to me though was that by being on a limited diet, maybe I'm not eating enough of the foods that support the production of estrogen or synthetic estrogens. Soy is just an example of one of those foods that I'm abstaining from for good reason. So now I'm on a quest to broaden my dietary horizons and see if diet alone can fix this issue. But it's probably also a genetic thing, because I don't know of that many gluten-free Soy Free women that are also infertile because of low estrodial levels. But honestly, I don't know that many gluten-free Soy Free women either. I'm pretty happy with my doctor because he will explore these unknown areas with me and if I know him he's probably on the phone with every specialist he can dig up in the country anyways.

  14. Currently I drink whole milk, cheese (mostly cheddars), red meat, eggs, etc. I will admit I'm not big on nuts and good seafood in the middle of Texas is hard to come by. I did send him a follow-up question on eating more cholesterol. I asked him if he meant LDL or HDL or just in general. He's pretty responsive so hopefully I'll have an answer from him by tomorrow.

  15. Okay, so I may not be posting this in the right location, but I'm hoping that it is close enough that people are okay with it. I have a 15 mo baby boy who is just fantastic! I stopped breastfeeding shortly after he turned 1 mainly because I wanted to have another baby and my cycle had not returned and knowing that breastfeeding can discourage cycling, I thought this might help. Well 16 weeks later and I'm still not cycling. I've been really depressed about it. DH and I were just convinced that since our first baby was an "oops" baby that it would be easy the second time. So doc did some lab work. Turns out my estrodial (estrogen) level is really low. Lower than in postmenopausal women. This might explain the slight decline in my bone density despite supplementing with an extra 2000 mg of calcium a day and 800 iu of Vit. D and throw in some magnesium there along with weight lifting and low joint impact exercise (namely walking a lot). I'm doing it all right? But being good celiac that I am (sometimes...) I go back to my diet. Am I getting enough calcium - yes, am I getting enough vit. d- yes, am I getting enough magnesium - yes, am I really gluten free - okay 99.9% of the time I am absolutely positive that I am gluten free so the absorption shouldn't be an issue or as much of an issue. Right? But it's all still going wrong! I have lost weight and I do feel fantastic but my body still isn't normal. So after doing some research I found this article: Open Original Shared Link which sounds like me after having the baby to a T. I was really shocked. I never thought my issues after having had the baby were related.. and then in the article it makes a rather off handed comment about soy helping with post menopausal issues and it occurs to me - I don't eat soy. Maybe I don't eat any of the foods necessary to produce enough estrogen. Maybe my bone density is low, now because of a lack of calcium but because I don't have enough estrogen to encourage bone growth because I'm not eating the foods that do that. But then I think, no I never would have gotten pregnant the first time if that were true. Then I read the comment on Black Cohosh also helping. I had been drinking black cohosh tea to get rid of a nasty yeast infection (which also was probably caused by the lack of estrogen) when I got pregnant with my son. I had no clue! I had only been drinking it because a friend of mine recommended that and I didn't have the time or money to go to the doctor and still had 30 days till my insurance kicked in. So now I'm off to add things into my diet that promote estrogen such as Black Cohosh, Chaste Tree Berry (or chasteberry) and my doctor also recommended adding cholesterol into my diet as it is essential in the conversion process so I guess I'm looking at nuts and shrimp for that one. I'm now apparently a case study in his office. I'm so excited to see if this really works. I just wanted to post in case someone else is in the same boat.

I just found out that I have celiac disease about two weeks ago and lately I have been so bloated which is why I went to the doctor in the first place) I have been working out at least five times a week and eating a healthy diet with no dairy or sugar, only good fats and whatever fat is in meat, no wheat, and since i found out,I'm trying to eliminate all the gluten but I cannot seem to loose weight. In fact, even though my body is looking better and more toned (my kickboxing instructor even commented that I look great) my pants are fitting tighter. It seems like my symptoms are just now occuring at the age of 19. Was weight gain a problem for anyone when you started noticing your symptoms or could this just be bloating? I cant figure out if i am bloated or getting fat!!!

    It was around the 3 month marker for me before I started to lose weight and really.. that's not even true. I stopped gaining weight at that point. It wasn't until I was gluten-free for a year and then seriously almost overnight the weight melted off. It happened so fast I thought I developed Diabetes or something and went running back to the doctor for metabolic tests (which everything came back normal).

    On the flat tummy thing.. Lots of crunches and a prune juice a day seem to help me.. but certainly the more your glutened the worse the belly will be. But it's still something I have to work at daily.. but it could also be from the baby I had too.

    And about feeling so bloated you look pregnant.. I had an ex that actually asked me to wear a looser dress to a formal dinner one time because he was afraid people would think I was knocked up. It's a good thing he's an ex..

  17. Okay I saw a previous post that mentioned the prune juice but you mentioned that your baby is already on miralax.. I'm not sure I would mix those two.. Okay.. well I wouldn't want to change that diaper.. those diapers. The miralax will work and it will work in a few days, but if you'd rather do a natural method like the prune juice instead of the miralax that would also probably work well. Lots of other fluids too. Plenty of water or really watered down 100% fruit juices (make sure they are gluten-free - avoid anything that says Natural Flavors unless you've confirmed with the manufacturer that the natural flavoring is gluten free). Also, in our house, my 15 mo *LOVES* Pamela's Pancake mix and I make it with safflower oil instead of veggie oil. We're not using Veggie oil anymore since it's really just soybean oil and we're getting rid of soy in our house (DH and I both have issues with it). Mashed potatoes if you don't suspect an issue with nightshade family. All Natural White Cheddar Cheetos (you can find them in the alternative/health food section in most grocery stores or in the regular chips aisle at wal-mart), Ener-G doughnut holes (we buy a case a month.. really I swear we should get a discount), eggs are always good, soups and veggie purees and remember that you still have all meats and seafood to work with too. Dairy depends on the kid.. my son has dairy issues that I suspect he inherited from his dad but I don't have dairy issues and did just fine with dairy when I went gluten free.. but my son on the other hand can't seem to tolerate it. Just time and persistence and a ton of worrying in the mean time! But you're doing the right thing taking care of your baby now.

    on the not baking front.. I'm not really sure what to suggest since you are doing away with rice and nuts as well. Starches are also out.. hrmm.. really limited.. Maybe moving to sauces and reductions might bring some gratification. using veggies and fruits for sauces?

  19. Okay I always refer to the frog in boiling water situation. I don't think you actually become more sensitive so to speak but your body has a more noticeable reaction for several reasons: 1) your immune system is no longer suppressed on a daily basis by the offending agent, so it is functioning better and can give a better reaction to attack and remove toxins from the body 2) because you now know what it feels like to feel well, you really notice when you feel bad. Like a frog if you slowly turn the heat up he'll sit in the water and boil to death, but if you throw a frog in hot water he'll fight to stay alive.
