  1. I've been doing some research into some cook books and came upon this one:

    Gluten-free, Sugar-free Cooking: Over 200 Delicious Recipes to Help You Live a Healthier, Allergy-Free Life

    by Susan O'Brien, Robert H. Lerman, Barb Schlitz

    Do any of you have this one? The only thing I don't see mentioned in the review is if this cookbook offers help for those that have egg allergy and not having to use an egg replacer as I have not had much luck with them. I've been living gluten free for about a year and a half now so I am good with the basics but I also struggle with cholesterol and I'm also trying to shed about 30 unwanted pounds so the above cookbook looks like a good possibility but isn't available in the local bookstores for me to check out before I buy it.

    If any of you can recommend another book it would be great too!

  2. I am a bit confused on something and thought I might find a quick answer here. I am cooking a turkey in a bag this year and it instructs you dust the bag with flour to avoid it bursting so I picked up some "Soy Flour" can I use the Soy Flour alone for this purpose and the purpose of coating baking pans?

    The reason I ask is because I find many people use a "flour mix" instead of soy or rice flour "alone." I of course know when actually baking from scratch it would be better to use a mix but for a fast dusting does it really matter?

  3. Generally I sleep 7 to 8 hours although there are times that I have needed 9 and felt GREAT after getting it. When I sleep about 8 hours I wake feeling ready to go and rested, 7 hours I may have to kick start with a hot hot shower and a good gluten free breakfast!! I think overall if we listen to our bodies it will tell us what we need.

  4. Okay I am wondering if there is any butter or margarine that is soy based vs milk/dairy based along with gluten-free of course. I do have a milk intolerance, I can eat cheese and such but when I get near basic milk or even sour cream I don't do so well. I find that when I use GV Brand butter in very small amounts I am okay but really by that time it's like what's the point in using it and then my food is just bland. If I consume my milk/product early in the day by the time I go to bed I am good but I still spend the day belching and let's just say that taste is not something I care for lol.

  5. I don't cook too many things in the microwave but sweet potatoes are one of them. Just wash, poke a few holes with a fork and hit sensor cook or baked potato button. And yes, they are naturally gluten-free. Split the finished s. pot. and add butter or sub., cinnamon, maple syrup, whatever sounds good to you.

    Oh thank you I had no idea it would be that easy and I am getting really tired of having basic pan cooked potato with dinner nightly and I love sweet potato that I get at diners with the brown sugar and cinnamon in them.

Is a fresh sweet potato gluten free and does anyone have a good recipe for a sweet potato casserole/dish that would be gluten free, egg free, corn free and preferably instead of using milk I would use "Silk-soy." I am having a hard time finding a recipe on how to cook a regular sweet potato in the oven like a baked potato? I know I probably sound like a dork.

I am curious because I find publications that say Heinz ketchup is safe yet I ate some of it with some homemade potato's a couple months ago and it gave me horrible digestive problems and mild gluten symptoms so I just gave up using ketchup until Great Value brought out their gluten-free ketchup I have been using this without any issue at all and enjoying my potato's once again!! I also had an issue with Heinz cocktail sauce with shrimp and am now wondering if these products have gluten or are cc. Any thoughts or confirmations AND anyone know of a main brand of cocktail sauce that I can use?

  8. I make my own gluten free trail mix and eat a handful between my meals sometimes that satisfies me so much that I skip lunch or "can" miss lunch if I have to. Dairy in cheese form doesn't bother me like pure milk does so I also use a small serving of colby/jack cheese or mozzarella with a slice or two of gluten-free Great Value lunch meat. All these things along with finger fresh veggies and fruits get me through the "hunger" times of my days.

  9. Well, it's not a chicken recipe but I thought maybe you might like a new breakfast one. They're kind of modeled after IHOP's (now long gone from the menu) griddle cakes.

    buckwheat pancakes

    1/4 c + 1 tbsp buckwheat flour

    1/4 c not quite level cream of rice cereal (dry)

    1/2 tsp. baking powder

    1/8 tsp. salt

    1 tbsp. milled flax seed

    1/2 tbsp. oil

    1/2 tbsp. scrambled egg (raw) or if you're not able to do eggs, use a little bit of gelatin or xanthan gum

    1/2 c. milk

    Combine dry ingredients, stir in wet. Mix well, add a bit of buckwheat flour if it's too wet.

    Cook on a hot skillet as usual for pancakes. This makes 2 large or 3 4" pancakes (ie enough for 1 person.)

    Oh this does sound yummy too and I am always looking for any new recipes that are GERD friendly. Don't suppose any of you know where I can get a hold of some safe oatmeal? I sure miss eating those steaming bowls of oats with fresh fruit mixed in!

  10. I did not know that Kraft dressings were safe, since only 4 months gluten-free Ive tried to only use things labeled gluten-free so I have no questions. I do come here and trust what I read here as long as the labels match the advice. This gives me lots of new ideas :) also thanks for that honey mustard idea I love sauce like that I just have not had to do a lot of from scratch things. I'm finding it to be a lot cheaper though!!

  11. Thank you all so much for the recipe and cooking ideas I am very excited to hit the store and try them out. I didn't know that McCormick Lemon Pepper is gluten-free my husband never goes without it so it's perfect as long as his gluten hands don't contaminate it lol I will have to get my own bottle most likely. I use half/half salt because of my Meniere's and I saw one recipe that calls for egg but I know I can use a replacer.

    Keep them coming in if you have any more ideas.

  12. I've never had an issue with fresh frozen shrimp, but it's always a good idea to check the ingredients to be sure no flavoring was added.

    Have never had the scallops from Schwann's, sorry, can't help you there.

    Thanks for the info on the shrimp, I have not seen any conflict with ingredients at Walmart. I will have to keep checking the Schwans scallops out.

Okay so I've been gluten-free for about 5 months now and a lot of my digestive health issues have cleared up although I do still suffer from GERD and I believe I get stress related sour stomach. This leaves me still having to be careful with what I eat. My staples are gluten-free cereal for breakfast...I sure wish I could find some safe oats as I LOVE oatmeal or some gluten-free bagels that are egg free too! Anyway I can eat a small amount of spaghetti if I watch what sauce I use (if it's too acidic my GERD will flare or my stomach will sour and it will last about 10 hours after I eat it) I only eat this at lunch time because of the issues. I wish I could come up with a good white sauce for a change, again egg free limits me and I don't do well with garlic I believe that is related to my GERD. I can't do salsa at all even if it is gluten-free. Great Value lunch meat is good and I will have a few slices of cheese with it for a quick lunch. My next staple which I eat every night and do like but would love for some new recipe ideas is CHICKEN, I cook it with a tad of salt, and pam on a skillet or broil in the oven. I add sauteed mushrooms and eat it with rice. I'm getting very bored with the bland diet going on here. I picked up some lemons, lime, oranges, onions and chives in hopes to grate some flavoring into my dinner. Sometimes I add mandarin oranges on top of the rice and it makes it a nice change.

    Any ideas? I am not into cooking all that much, I like to cook something up within 30 minutes. So any ideas that don't require me to be a top chef would be gratefully appreciated. I seem to get sick from pre-packaged spices and have had trouble finding ones that are labeled gluten-free so I will not use them so I am looking for fresh food ideas please.

    Any gravy recipe would be appreciated too for my mashed potatos :)

  14. You guys are great :) thanks so much. I was not aware that Great Value brand chocolate chips were labeled gluten-free I buy a lot of their products so I can eat without worry. I appreciate all the suggestions on the other chips. I have heard about the Betty Crocker gluten-free line coming out but they haven't hit our store yet. I also have to stay egg free as I am allergic to that too but I just sub in an egg replacer or apple sauce. Luckily I did not ingest more than 2 cookies and it was just the chips that were bad so today I seem to be doing pretty well other than slightly irritable and sleepy. Thank goodness by midnight last night the stomach pain stopped enough to let me sleep a bit.

    Again thanks so much, before I try new things I will turn here first and do some more investigating.

  15. Okay so I have been gluten-free since April 09 and have had a few "oopsy" moments of course painful. So I purchase "Cherrybrook Kitchen" Chocolate Chip Cookie Mix which is labeled gluten-free, egg free, dairy free, nut and peanut free. The first time I used it things went well they are DELISH and they didn't upset my tummy at all. I was upset that there weren't more chips in them though so this time I added Hershey's brand chocolate chips, I ate 2 with my dinner (nothing new) this was about 4 o'clock. About 8 o'clock I start having a little reflux (I haven't had an issue with this in MONTHS) and then my tummy starts twisting and I feel UGGHHH, begin to get the chills. It is now 10:30 and my tummy is starting to settle down a bit (thankfully cuz it usually takes about 5 hours to initially feel better and then I am still sick for about 4 days later). So I am wondering if I actually glutened myself here or if possibly the extra "richness" from the extra chocolate chips may have upset me? Just wondering because I have about a dozen more of those cookies in there and I'm thinking that the kiddos are going to finish them cuz I am scared now :unsure: I have been successful with Hershey's choco bar, choco bar with almonds and their MMs. Did these baking choco chips poison me?

    Any feedback, thoughts welcome. Thanks!!

  16. Rum is made from a sugarcane base rather than a grain base so yes, all pure rums will be gluten free. the only place you might find gluten would be in an added ingredient however Malibu is one of my few 'safe" alcohols (I react to all the wheat or mixed grain based alcohols like Van Gogh)

    as for Pina Colada, should be, the ingredients are essentially pineapple juice and coconut cream, daquiri's are rum, lime juice and sugar so are also gluten free by extension so should a mojito be safe.

    if you like dark rum you could try a "dark and stormy" dark seal rum, Jamaican ginger beer (not a true beer so no malt or barley) and lime juice

  17. Thank you for all the info, you all have made very good points and I like you am not sure. Perhaps some of the upset is just the fact that I have only been gluten-free for a short 3 months and I know it can take as long as a year or so for my system to balance. I do like the suggestion of getting with my allergist again and having him do some food allergy testing, some allergists don't like to do that and believe that the results can be misleading. I am military and deal with the military health system sometimes they just don't want to "bother" but recently my allergist on-post is only seeing active duty which means I can get a referral off-post which means I may find an allergist that is more willing to help me out and do more testing. Now on to answer some of the questions that were asked above.

    Gummy coke bottles.... they don't bother me at all. Their major ingredient is corn sryup.

    Corn chips... I can not eat AT ALL they give me horrible heart burn and indigestion.

    Corn Puffs... they don't bother me but I still can only eat a couple handfuls of them or they will cause some upset.

    Corn on the cob... I was eating nightly and didn't seem to have an issue with it but since eliminating it for the past two weeks I have notice a lot less gas, burping and such at night, perhaps this is a "time of day" problem associated with my GERD.

    Cheese cubes... don't bother me at all.

    Cream cheese... tolerate well but still have to eat in moderation.

    Yogurt... tolerate well.

    Cheese slices... tolerate well.

    Ice Cream... I can eat early in the day but it does give me GERD and makes my bowels irritable.

    Milk... I could drink but would make me gassy, and irritate my system.

    Soy Milk... I love and doesn't bother me at all.

    Chocolate... doesn't bother me but of course I eat in great moderation.

    Anyway that is pretty much it so again who knows I guess it's a process of elimination and as I said just because I went gluten-free a few months ago doesn't mean that all my problems (IBS and GERD) are going to just POOF that fast. I am happy to not be suffering from severe gluten attacks on a daily basis but I do want to optimize my days and eliminate all my digestive suffering eventually!!

    Thank you for all your help and input it does help A LOT and it is a blessing to be able to come here for brainstorming and answers. You guys are great!!

  18. Okay so I don't drink much but when I do I have a cocktail and it is usually

    "Malibu Rum" with pineapple juice and grenadine. I visited the "Malibu Rum" site

    and phoned them and received date back that their rum is gluten-free.... I am looking for confirmation

    here as I trust this community more so than the manufacturers out there lol sad I know.

    Also does anyone know if Grenadine is gluten-free?

    Is all "rum" in itself gluten-free?

    Are Pina Colada's gluten-free and daquiri's?
