  1. So frustrating! 

     

    When we ate for Thanksgiving this year, I basically set aside food for me and hid my food. LOL!

     

    The portion of the food that got set out for others did inevitably get contaminated. I found pieces of glutenous food sitting in my cast iron skillet. I ended up reseasoning it when I got home, to be safe. I guess, no more cast iron for family gatherings.

  2. I've been contemplating chickens still. Doing more research and thinking. I'm looking at them from a pet standpoint too, as if we get them, we'll be allowing them to retire to a life of luxury after they're done egg laying. (no need for meat, as we're vegetarian)

     

    It sounds like they can supplement their diet with table scraps, which is great, because we have a lot of those around here.

  3. It's entirely up to you. If you proceed, proceed cautiously though. You don't want to end up in the hospital.

     

    I ended up in the ER from my gluten challenge. (my doctor agreed that was the cause as well) I felt that was good enough reason to just be gluten free for life. I'm almost 5 years into the gluten free diet and it's totally possible to do it, even without a doctor's note.

     

    Good luck on whatever you decide.

  4. I get neuro symptoms from glutening. From more mild glutenings, just a headache and a low grade fever for a day. For more severe glutenings, days of severe headaches and some speech difficulty. My worst ever to date was from my gluten challenge, where I had a full blown TIA. (transient ischemic attack or mini stroke)

     

    I'm sorry that you're feeling bad and I hope that you are on the mend quickly!

  5.  BUT, if she doesn't have celiac and just has a gluten intolerance, I don't want this label placed on her.  I mean, if she can go to a birthday party and eat a cupcake then she's not odd-man-out.  

     

    I have an 8 year old and I was really relieved when she tested negative after being gluten challenged. (we had tried to take her gluten free years earlier due to bad medical advice) I was glad to close that chapter and get on with letting her eat whatever. So I get where you're coming from, on not wanting her to have celiac.

    But if your daughter has NCGS, then the treatment is the same. She still couldn't have the cupcake at the birthday party. NCGS people can get just as sick from gluten. And if your daughter gets very ill from glutening, then probably gluten still couldn't be introduced.

     

    I wish you well in figuring things out. Have you considered gluten challenging her and retesting after the challenge?

  6. Get a diagnosis, if you can. If you can't, don't worry about it.

     

    It's perfectly possible to follow a strict gluten free diet without a diagnosis. Just take your own food everywhere and never cheat on the diet. People will eventually believe you. I'm going on 5 years of being gluten free without a diagnosis. Most friends and family understand why I won't touch the stuff. I just explain that I can't afford to be sick or hospitalized. *shrugs*

  7. One of my big issues with gluten free food is that most of them have some form of processed rice in them. I've started consciously avoiding most commercial gluten free products with rice (based on Consumer Reports recommendations on limits for weekly rice consumption) and so I end up just passing by most gluten free foods! I eat a lot of naturally gluten free food, but for treats, I'd like more options that don't have rice.
