  1. I just ran across issues with "candida" and people trying the diet. I'm more than willing to give it ashot since my symptoms fit pretty well. However, much of the information I've run across seems to be very conflicting. Does anyone, who has had success with this, have a food list that they used to achieve success?

    I'm particularly interested in brown rice, carrots, and processed cheese. Thanks! :)

  2. It does make me chuckle,sometimes, at how free we all are here in discussing a subject that most would never think to bring up outside this forum :o . Its nice to have a comfortable place to ask questions that we could not ask anywhere else. :)

    When I don't want to go into a litany of woes, I simply say that the long-term consequences of gluten intolerance are vast and can, eventually, be deadly. But that the short-term effects of being glutened can be (here, I pause slightly for dramatic effect) "inconvenient". Believe me, EVERYBODY understands what I mean.

    Brilliant! :D Thanks to the OP for asking this, I can't believe it never occurred to me. I think a worry-weight has been lifted off of my chest after reading these responses.

  3. I'm amazed that so many people can get away with not having to explain the symptoms! As soon as I mention it, 4 out of 5 people ask "So, what happens when you eat it then?". 3 years in and I still don't have a good answer. It's not the most feminine or attractive thing to say "Well, I bloat up like I'm 8 months pregnant and have gas that would clear this room and have the bio-hazard team in here within seconds." :P I think the food poisoning comment is a great idea! I'll try that one out next time.

  4. So, this has made me feel really guilty because I'm pretty sure I am an exact mirror of your situation. I'm still having my gassy symptoms but I blame it on my addiction to chewing gum, regardless of the fact that it's not always consistant. I'm nearly 3 years in as well and have definitely become lax. I'm sorry that things have taken such a turn for you but thank you so much for posting. I think you've definitely helped me make up my mind to be more strict with my diets. I am not nearly as cautious as I should. May I ask - what foods did you discover weren't safe that you thought were?

  5. Based on my previous tests, I'm guessing I would vomit:

    A while back I decided to have a naughty day and ate half of a Pizza Hut Hawaiin Stuffed Crust pizza. Mmmm... lol It caused me to throw up as well as have excruciating stomach pain - I couldn't stand up straight. Thankfully, I slept and felt better when I awoke. Not too long ago I wanted to see if it was a wheat thing or if I actually have Celiac, since I never had the biopsy. I had a small bowl of Rice Krispie treats and had D for a couple of days but nothing much worse. I think I'm quite lucky on that front.

  6. I found them! Yay! I noticed that my local Walmart had them on the shelves. I was so excited! I tried them straight from the box and, I'm sorry, but they taste absolutely nothing like regular RK. I can say that I've had RK recently, the regular ones in a rebellious is-it-really-Celiac test, and they are very, very different. Normal RK have very little after taste but these "brown rice" ones stick with you. However! I made RK treats and I am beyond happy to say that as they cooled they began to taste exaclty like the original! If my husband (a gluten eater) hadn't eaten what I had not, by the time he got home from work, I would have devoured the entire pan. Considering that two of us managed to eat nearly the entire thing in one day, I'd say the gluten-free RK treats certainly pass the taste test!

  7. Lol.. I looked at all the gluten free stuff and there are some cute ones. One says "gluten is icky". lol.. But one I don't understand -- it says "Celiac is the medical term for starvation." Personally I don't feel like I'm starving on this diet. Unless, do they mean that when you're undiagnosed your body is not absorbing nutrients like it should? Hopefully it's that, but I'm not sure that non-celiacs would understand, since I'm always getting the comment "what can you eat?!" :rolleyes:

    I think the "Starvation" shirt is for the types of Celiacs that were diagnosed in their late teens who are faced with the pressures of suddenyl having to cook "fresh" meals. I was 20 when I was diagnosed and I would have loved that T-shirt :)

  8. I may be completely wrong but I struggle with binging/purging; I am constantly hungry and when I binge is the sweetest stuff I can find in the house. I've just started anti-anxiety medication (after therapy failed) and I feel loads better. I'm not insatiably hungry like I was before. I don't know what eating disorder you may suffer from but it may be worth considering. Good luck!

  9. I was diagnosed with Celiac a few months after my husband and I started dating. He has tried being gluten free twice. The first time were not living together and simply caved into temptation. The second time he tried was just recently. We live together now and it is just the two of us in the house. The problem is, when he went gluten-free, his mood changed drastically. He became quite irritable and grumpy. As soon as he started eating gluten foods, he went right back to normal. I don't know if it was just a mental rebellion against not being able to eat the foods he wanted to or if he did have a chemical response to the lack of gluten. I do know that he does want to go gluten-free for my sake but, in honesty, really doesn't want to and has a ton of trouble with it when he tries; the self control and avoiding temptations.

    I guess what I'm wondering is, do you think my husband should go gluten-free just for my sake or is it possible to live safely in a non-gluten-free home?

  10. a study showed that 1/60th a teaspoon of wheat flour a day was enough to prevent intestinal healing in celiacs.

    that makes the amount of gluten in 1/60th a teaspoon super tiny, as there are 100s of protiens in wheat besides gluten.

    this is the good part: they havent done studies with even smaller amounts, so it is possible that it's ditto for 1/2 that amount or less.

    considering this, is it so strange to think you could get it off a spatula, or cutting board, or a cooks hand who just ate a sandwich, and didnt wash??

    i thought i was gluten free for almost 3 years, and got sicker and sicker, kept losing weight. not until i stopped eating in resturants and eating processed 'gluten free' products that may be slightly contaminated did i begin to show improvement.

    my experince echoes what the study proved.

    Is this for real? 1/60th a teaspoon of wheat flour had a traceable reaction? That's crazy! Do you happen to know where this study was stated? I'd love to read about it.

    I'm wondering if I should go completely unprocessed. I'll have to review what I eat and see if I can make the modifications.

  11. I've always had fantastic luck at PF Changs. I adore their food. I'm sorry you didn't have a good experience, rdunbar :(

    I haven't been to the Bonefish Grill at Eastview since I just started to enjoy seafood. I'm not sure I'm aware of the other one. Any idea what it is?

    I'll have to look into the Geneva restaurant. Maybe I'll make my hubby take me their for our anniversary in September :D Thanks for the recommendations! If you haven't tried it, The Distillery has my faovirte gluten-free pizza to date.

  13. Interesting point! I think this is also why the owner of the completely gluten free restaurant/bakery near us (in upstate NY) INSISTS that no one bring ANYTHING (food, drink) into the place to avoid CC. Deliveries to her store are brought around back where the boxes are wiped down before they are brought in. Employees are educated on gluten and celiac. Extreme? Not at all! I think it's awesome!! It's the ONLY place I KNOW I can eat safely. In fact, the first time I went there for lunch, post DX, I cried because I KNEW I could eat anything off the menu and not be sick afterward. It is my "safe haven".

    We need MORE places like this ! :)

    Oooh! Where in upstate NY? I get the feeling you're more toward the Saratoga or Albany area? I'm in Rochester and it seems we call ourselves upstate and everyone else outside of NYC calls us Western NY :lol: I'd love to visit this resturant though. Thanks sounds amazing! Is the food yummy?
