  3. Medicine counters "nature" all the time. Just because it's "natural" doesn't make it sacrosanct. If we can find a way to safely allow ingestion of gluten I'll be the first to sign up. Especially if it means never having to eat or drink the sorry gluten-free excuses (empty, high-glycemic grains) for bread and beer again.

  5. I'm desperate to find gluten-free beer that actually has some character to it. These rice/corn beers are so weak they taste like water. hops are NOT a problem, so I don't understand why the gluten-free beers are so light on hops and taste. What I'd give for a gluten-free IPA!

  10. I figured it was too comprehensive to be the cause of everything. I am a relatively newly diagnosed Celiac sufferer (if that is an accurate word) and thus am just trying to get a feel for the literature.
