  1. I think I would have to get a copy of that! By the way, I just noticed what it says under your photo and people tell me that all the time. One time I had a temperature of 105 degrees F, and my MIL said I didn't look sick to her. (She's really nice - just for clarification )
  2. I'm anxious to see if anyone knows what this might be, because I have been haveing the same thing since January. I went gluten free in November, but I haven't seen much improvement if any at all. Some things are worse, this dizzy thing being one of them.
  3. I have bought their coconut milk ice cream several times in the past and loved it. Last week I was at the health food store and wanted to get some so I went to look at the flavors and they had several with cookies in it that were made from wheat (at first I was excited because I thought they had a gluten free cookies and cream - I almost didn't check the...
  4. Corn chips are very often cross contaminated. Even if they don't us gluten in the ingredients they are some times fried in the same oil as other thing with gluten. I don't trust them. I agree with what most people said... buffets are a scary place indeed.
  5. Yum... I'm still too scared to eat out, but I'll have to keep that in mind.
  6. Something interesting that one of my doctors happened to mention a couple of months ago when I was asking about B12 deficiency, was that usually you only see B12 deficiency in people who either drink a lot of alcohol and don't eat much, have some kind of health problem that involve the small intestines not absorbing nutrients properly (Celiac), or who have...
  7. Oh! And one more thing, I really believe that most of my gallbladder attacks were from gluten cross contamination. I found out after the surgery that the rice flour I was buying from a local grociery store was selling some of their flours under a gluten free label that were milled in the same mill as wheat and other gluten grains. The company it self...
  8. I had my gallbladder out in February. I had very bad pain in my back that would spread to my front until it felt like all the way through the middle of my torso was in excruciating pain - I really wanted to die, that is no exaggeration. It would last for hours and the more attacks I would get the longer in duration they would last. I would also throw up and...
  9. yes. brown rice should work in most recipes just fine. i sub it for sorghum all the time.
  10. One thing that stuck out to me was the tuna. I don't know about Whole Foods tuna, but I stopped buying tuna, because every brand I checked said that it was processed in a facility that processed wheat. The other thing you could check as far as gluten goes is the ice cream. I called Breyers several months ago and what ever answer they gave me about cross...
  11. That is sooo ignorant and just plain unprofessional. I think you should bring a bagged lunch anyway and just wait to bring it out until they have brought everyone else their food. I doubt that they would have the guts to tell you that you couldn't eat it then. I'm sure these situations are why huge purses are in fashion now a days.
  12. Sorry if I offended you or said something that you thought wasn't right. I was just trying to help with what I have learned so far, and if you know better about that stuff then that is good. I just feel bad when I hear of other people struggling with their health and I want to help if I can, because I have had such a hard and lonely road in trying to get...
  13. I was just thinking about the salt thing and I remembered that it wasn't gluten that I returned the salt for, it was MSG. Msg definetly could have caused the reaction that you described and I know that a lot, if not most, people are sensitive to it.
  14. Is your treatment killing bacteria? It sounds like it does. While taking bacteria killing drugs you should NOT take probiotics, because it will just kill the good bacteria too and will not help your gut with absorption - you'll end up throwing money away. However, as soon as you are done with your treatment you should start taking a probiotic right...
  15. Hey there, I am not sure of what the ingredients are in the Morton's low sodium salt, but when I was first diagnosed I bought that same salt and didn't even think of checking the ingredients. When I got home I was putting it away and looked at the ingredient label and saw some ingredient that I was at least leary of. I don't remember if it actually contained...
  16. 5'6 1/2". I used to be at least an inch taller - I seemed to "shrink" about the time I had my first baby. Growing up the doctors and many other people would say I was going to be 6' tall, but I didn't grow at all after I turned 12. (my dad is 6' 3" and my mom 5'1" )
  17. Hi all, I just wanted to spread the word that you can vote for a gluten free cooking show. Shauna James Ahern known as the "Gluten Free Girl" has auditions for a cooking show on Opra's new cable network, OWN. (I don't know her personally, but started reading her blog just before I was diagnosed with Celiac 9 months ago. She was diagnosed with Celiac...
  18. I wonder if you could explain to her that if she keeps eating things with gluten in them she may end up getting very sick. You could tell her about different health problems that could happen from continuing to have gluten in her body. Maybe if she knows someone with asthma or other health problems that are known to be caused by, or link to Celiac disease...
  19. Is he the one that has Celiac? My 2 1/2 year old daughter who has Celiac kept getting yeast diaper rash and thrush. I had read a up on what to do to help yeast problems and found that coconut contains medium chain fatty acids that kill yeast as well as give you really healthy fats that are easier to digest. At first I would apply coconut oil directly...
  20. I use to have this happen when I was a kid. In fact I'm a little freaked out right now, because I have never heard of anyone having this happen before and whenever I would describe it to people they would just act like they didn't believe me. I haven't had it happen since high school, but it was very frightening. I don't remember if I had the vibrating...
  21. The bread I make ends up being just a little over double the size when it is completely done baking. When it is rising it usually is just under double the size before I start baking it. If I over raise the dough it falls while baking and ends up being dense.
  22. I'm glad that helped you out a bit. I actually really liked the cashew and pecan variation - I think they are my favorite pick, but unfortunately I can't have nuts right now. I'm hoping that I will be able to add them back in after a while. Oh, and by the way, I just use a coffee grinder to grind my flax and nuts. It works great and is much cheaper than...
  23. It's true that if they do not list gluten containing ingredients that it does not, except in the case of when they use the word "flavors" or "spices" it could possibly contain barley. The other thing you have to be careful of is although they may not contain gluten ingredients they may be cross contaminated because of being made on shared equipment or...
  24. Brownies: Gluten Free and Flour Free 2/3 C. butter or coconut oil 1 12oz. package semi-sweet chocolate chips 1 1/2 C. sugar (you can cut down the sugar to half depending on what you like) 1/3 C. flax seed - ground 2/3 C. ground almonds or coconut flour (I have also used cashews and pecans with good results) 1/3 C. unsweetened cocoa powder 1/2 tsp...
