The bread recipe that I make calls for rice vinegar and I have sometimes used apple cider vinegar in it too. I think the recipe turns out really good, but I have only made a couple of different recipes and they have all had vinegar in them, so I guess I have nothing to compare it to. -

Just thought I would address the problem with digesting fats. It could help you to take a digestive enzyme every time you eat. I would look for one that tells you how many grams of carb, fat, and protein that it will breakdown. Your doc likely won't know too much about it, but you could ask. Some people are so sensitive that they will be sick for 2 or 3 weeks just from cross contamination. 2 pretzels for a person with Celiac or gluten intolerance is actually quite a lot of gluten. My story is very similar. I had an endoscopy and after the procedure the doc told me that I had very bad inflammation and put me on an antacid. When the results came back it did verify Celiac. It does sound strange, but it was good. I think it is the closest to mimicking cow milk, but if you don't use it much it might not turn out quite how you would like. I have tried sausage gravy with coconut milk and it turned out pretty good. If you have a strong enough sausage you won't taste the coconut flavor much - if at all. My whole family liked it when I tried it. -
Yes, I am sure that I can find ways around it. It's not so much the money as it is the principle of the matter. I just think that really, the money for your own information was another rock in the barrel. It just is making every other thing seem a little more sour. Personally, I wouldn't eat it. For one thing they don't say what type of test they use, so who knows how much gluten it has to have to be detected. Also they don't say how often they test. Do they test every batch or do they test once a month? Who knows? That is just my thoughts though.

Hey Patti, I was just wondering about how long did it take after going gluten free to notice that the numbness was gone? I have had very similar issues and am wondering about how long it might take to go away. Doctors really don't know much about this stuff in relation to Celiac disease and gluten intolerance.

My kids took at least a month to show noticeable improvement (granted they are a little too young to really describe pain or lack there of - the oldest is 4 yrs). You probably know this already, but if it does happen to be the protein in dairy it could take over six weeks to see any results. Dairy can take six weeks to clear out of your system. So a couple of weeks might not be enough to give you accurate results. I hope you figure out what is wrong and start feeling better! -
