  1. I actually seemed to get worse on a gluten-free diet at first...... still sorting out other food issues. My daughter did improve but not enough so we went back to the Dr. and she was diagnosed with irritable bowel syndrome which is apparently quite common in people with celiac. Since we've restricted the poor thing's diet even more (my husband said, "you're starving her") she is actually improving and able to eat some things that were triggers like soda and watermelon. Hang in there but check out trigger foods for IBS because maybe one of them is causing issues. If you're drinking milk or eating dairy, we were told to take a lactose enzyme for a while until the villa that digest lactose have repaired themselves. Also, take fish oil-were told it helps with healing. Goodluck!


  2. We've had them bring out the ingredient list from the taco meat box at Taco Bell and Del Taco and the beef has wheat protein listed in the ingredients. Nothing fried there is good because they also fry the flour tortillas for the taco salads in the same oil. The chicken is OK. We get the bean cup minus the sauce, the grilled stuffed burrito minus the tortilla served on a bed of rice/lettuce, minus the sauce is pretty good :) The veggie works burrito served on rice with a classic chicken burrito minus the tortilla served on top is good too. You get some weird looks ordering but whatever! At Rubio's the chicken meat has flour but the steak (carne asada) is OK and very good.


  3. Wonderful ideas!

    We love sauteed chicken breasts with Mrs. Dash's served with gluten free gravy over mashed potatoes, green beans or substitute a turkey breast.

    Carne Asada tacos with the meat marinated in lime juice, chili powder, garlic, cilantro with warmed corn tortillas and Far East spanish rice.

    Chicken tortilla soup in the crockpot or in a pot-chopped chicken, 6 cups chicken broth, 1 sm. can diced green chiles, 2 chopped carrots, 1 16 oz. can diced tomatoes or chopped fresh, 1/2 c chopped onion, 1/2 c diced bell pepper, sprinkle of cumin. Serve with crushed tortilla chips, grated cheddar cheese, cilantro sprigs and gluten-free cornbread! A family favorite.

    Super Nachos, another favorite. Spread refried beans on the bottom of a large casserole, top with beef or chicken taco meat (Schilling is gluten free), pour a bottle of taco sauce over, cover with shredded cheese and bake on 375 for about 25 minutes til bubbly. Serve with sour cream, salsa, fresh tomatoes and avocado and scoop with tortilla strips.

    Chili topped baked potatoes with a green salad

    Paninis, another favorite. Spray grill with non-stick spray or spread slices of gluten-free bread with margerine. spread pesto on the inside and layer with deli meats, cheeses, sauteed peppers and onions. Grill until cheese is melted. Serve with veggies and dip or fruit.

    Open-face sandwiches and Campbell's Bean with Bacon soup

    My hubby has an infared cooker and makes an amazing prime rib, roast chicken, etc. in it, along with baked potatoes!


  4. Today the principal brought in bagels, cream cheese and coffee..... Panera bagels look sooooo good. I've been gluten-free since Feb. and am getting better about just taking it in stride. I do take control sometimes such as when we do our Stone Soup potluck, I offer to make the soup so I can control what goes in it and I always bring some gluten-free cornbread muffins. Lucky for me, one of my co-workers is gluten intolerant also so we can commiserate and share things we've baked or bought sometimes. I try not to take it personally because it isn't. I never thought about it before either unless someone told me they had a food issue.

  5. It can take a while. My daughter was 13 when diagnosed so she had been ill for a while. Our pediatrician said 6 mos. for recovery. He recommended giving her fish oil too as apparently it is healing for your insides. Prior to diagnosis she was pale, thin, had eczema, not a whole lot of personality, always looked sad. About 3 mos. in she started getting more color in her skin, started gaining weight. She looked better but still had stomach problems so we went back and she was also diagnosed with irritable bowel syndrome. We've been filtering out what foods are triggers and for her dairy is definitely out. Give it some time but don't wait too long if you aren't getting any results. Oh! Her eczema is gone!!


  6. Hang in there! My daughter and I have celiac and we eat wonderfully well. She's gained weight (needed to) and I've lost weight (needed to)! That doesn't mean there aren't times when I pine for sourdough bread or things like that, but there are a lot of great options out there. Tonight we had Trader Joe's chipotle marinted chicken kabobs with pineapple salso, spanish rice, refried beans, gluten-free cornbread muffins and a green salad :) We don't always eat that well but there are many options. We love tacos, baked potatoes with all kinds of fillings, pasta salad made from rice or quinoa pasta with cheese, cold cuts, veggies and italian dressing, spaghetti with rice pasta, lasagna w/ gluten free pasta, I make a great chicken tortilla soup. My 14 yr. old daughter is determined to have her cake and eat it too so she bakes up a storm. She's made the best banana cream pie I've ever had, chocolate cheese cake, all kinds of cookies and bars, chocolate pecan pie, brownies with all kinds of add-ins, chocolate dipped gluten-free pretzels, crepes with Nutella and bananas inside (your kids would be wild about those!). My husband goes on (Company Name Removed - They Spammed This Forum and are Banned) and buys Pamela's baking mix and bread mix and they are very good, plus their choclate chip and gingersnap cookies are really good! I had a frozen soup for lunch today that was really good (Kettle something). We love Far East spanish rice and wild rice, Betty Crocker cakes and brownies. I used to get low blood sugar after going gluten free but discovered that increasing the amount of protein in my meals helped to combat that. Cheese sticks are my friend :) Hang in there! If there's an Olive Garden, Outback Steakhouse, BJ's or PF Changs near you, go!! They have a gluten free menu :) Cheesecake Factory is coming out with one soon.


  7. Oh for a big hunk of sourdough bread...... there are those days...... I think mostly I feel terrible for my daughter though because I'm an adult, I've gotten to enjoy all the now forbidden foods at some point in my life before my diagnosis, while she's only 14 and having to deal with going to school or slumber parties where there is nothing she can eat..... She's so good and compliant it makes me wanna cry but my heart breaks for her sometimes :( She has always been kind of shy so asking questions about ingredients and food prep. requests make her squirm........

    So annoying too when you ask for a minor change in food prep and get told "No...." Asked them to heat up the corn tortillas for my tacos on foil so they wouldn't get CC'd and they said "No." Sigh....

    Anyways, I hear ya. So hard to have to be so vigilant all the time, my husband tries to be really good but you can see that he is a little impatient or just doesn't get it that it can't be ANY gluten at all......

    So proud of my girl, BTW. She's 14 and wants to open a gluten-free bakery. She has been baking up a storm to make up for what she can't get "out there." Just plopped down a plate with gluten-free banana cream pie in front of me! Last week it was grasshopper brownies and oatmeal-butterscotch cookies, prior to that tiramisu and chocolate cheesecake! I'll have to look up a recipe for waffle cones!!


  8. I think I've always had GI symptoms but didn't get diagnosed until age 44. I remember as a little kid having a barium swallow x-ray, having to avoid "white" foods because of C and in middle/high school having horrible spasms, etc. Went to several GI doctors, the last one indicated that my mom and I were slightly obsessed over finding a diagnosis and I was fine.....?

    My mom died at 57 of non-Hodgkin's lymphoma which originated in her small intestine...... I was tested because my daughter started having severe GI symptoms at age 13 and luckily our pediatrician is a gastro doc and picked up on it.....

    I've heard you are born with a genetic predisposition to develop the auto-immune disease and when you are exposed to certain viruses, it triggers the disease, just like juvenile diabetes (which my sister has!).

    Very sad that my mother never was diagnosed, maybe she'd still be around but very glad I have a chance to avoid it!!


  9. Couple of ideas. My daughter continued to have stomach issues after going gluten-free and the Dr. said irritable bowel syndrome is common in people with celiac so you might look up IBS triggers and try cutting out some of those foods.

    Not sure how old you are but I started taking a natural estrogen supplement and wow, did it upset my system!!

  10. We feel your pain. My daughter was diagnosed, then I was. She did start to gain weight and look better but her stomach pain symptoms persisted so after 6 mos., the diagnosis of IBS was added and one of my daughter's triggers is dairy. I feel like such a mean mom continually having to remind her of what she can and cannot eat. This is a kid who used to snag the margerine out of the fridge as a toddler and hide, scooping out handfuls, loves extra butter on her popcorn, etc........ She loves the almond milk, not such a fan of soy milk except the chocolate. Soy ice cream is OK, just got her the coconut milk kind and havent' tried it yet. We use Country Crock margerine-it's non-dairy and I buy the pre-packaged slices of soy cheese so she can do grilled cheese, works out pretty well. They also sell a veggie-version of the grated kind. Didn't buy any but saw dairy-free cream cheese at my local organic store. Will have to try that. The soy and coconut yogurts are OK, especially with some granola sprinkled in.

    Eating out is a pain, I'll admit and traveling. We were just up in Yosemite and they don't carry most of the stuff she can eat at their grocery stores.......

I was tested because my daughter was positive, really didn't have major stomach symptoms at the time but once I started eating gluten-free, I developed stomach issues, mainly bloating...... made me feel like I was going crazy but 5 months in and that is going away plus I've lost about 10 lbs from all the non-consumed carbs!! Can't beat that :)

    Are your kids being tested? I think you mentioned eczema? If so, my daughter has had eczema since she was about 3 wks old. Guess what? It's gone..........


  12. You are in for an adventure in food :) Things have improved so much as far as what is out there for those of us with celiac disease. My then 13 yr. old daughter (now 14) was so thin, miserable and I was so glad to finally have a diagnosis and one that wasn't fatal!! Then I got diagnosed and although I do have occasional sourdough bread pangs, I'm glad because she has someone like her who understands what she is going through. There are times like our recent vacation when I feel really bad for her because we don't have our familiar stores to supply us with food we can eat (she also can't do dairy) so she couldn't have yogurt (no soy brands) and ate dry cereal for breakfast several days...... but we celebrate when we find something really good or another restaurant develops a gluten-free menu and we can feel "normal."

    The biopsy is very simple, not painful and quick! Don't be surprised if you find a few more food allergies or like my daughter, she has irritable bowel syndrome. I tell her the gluten-free diet is mandatory, everything else is up to her. She knows what upsets her stomach so she gets to make the choice on dairy, onions, peppers, watermelon, etc.

    Parties are difficult but for now that won't be too much of an issue. Several of my daughter's friends actually make things for her or provide gluten-free food at their parties which is amazing :) You really find out who your friends are.

    Still trying to train the husband as to what cross contamination is and which places we can eat at. Hang in there :)


  13. My daughter and I have both had the biopsies and really, compared to other surgeries I've had and my youngest's heart surgeries, it was no big deal. One thing that did help when my non-celiac daughter was 5 and had to have a an angiogram was a dose of Valium that morning. She has a medical anxiety (can't blame her) so the Dr. just prescribed one pill, we gave it to her on the way to the hospital and she was soooooo relaxed, just whimpered a little with the IV which was amazing because when she was 2, it took 3 nurses to hold her down!!

    It's over very quickly. My daughter had some coughing afterward but wanted a milkshake on the way home. I was just sleepy for the rest of the afternoon. Just keep reminding yourself it isn't a painful procedure and your son will be fine :)

    I third the recommendation for the Betty Crocker cakes! We've been trying all different kinds as my daughter likes to bake and so far these are the best cakes and brownies. If you have a Sprouts in your area, the freezer section has many choices for things like gluten-free chicken strips, corndogs, donuts, bread and some really good frozen chocolate and carrot cake loaves. We ate the carrot loaf in about 15 minutes between my daughter, myself and her non-celiac friends, it's that good! So as a new mom, if you don't have time to bake, just get a couple of the chocolate cake loaves, some frosting and go to it, make him a train or car or something w/ fun candies :)

  14. Recently we ate at a BJ's restaurant, eager to try their gluten-free pizza. When I asked the manager about how it was baked, he said it goes in the same oven as the rest of the regular pizza. When I questioned that the pizza was truly gluten-free he said that the extreme heat in the oven burns off any gluten??? My daughter was so excited to get pizza so we tried it and it was quite good and I didn't experience any side effects. My daughter did but w/ her it's hard to tell if it's gluten or her IBF reacting to the dairy and fat......

    Does anyone know if this is really true about the heat of the oven burning off the gluten?


  15. I've had symptoms on and off pretty much since about 6 yrs. old. I remember having a barium swallow for something at about 6, having problems with constipation and being fed wheat bread and such to try to help it..... When I was around 14-18 was probably the worst. Horrible stomach issues, saw many Dr's, never really got a diagnosis except to say that maybe I had issues because I'd been on so many antibiotics for ear and kidney infections. As a young adult, I don't recall too many symptoms but had preterm labor with all 3 of my daughters which can be related to celiac, some stomach issues I attributed to being pregnant. Always had a tempermental stomach if I didn't eat on time. Got diagnosed after all these years because my middle daughter got diagnosed. Please stay on your diet. My mom died of a celiac related cancer, never was diagnosed with celiac disease so the gluten is doing damage even though you might not know it! Hang in there. I'm hoping the other things such as arthritis since I was in my mid-twenties are going to get better!!


  16. Curried Chicken Salad!!

    1/4 cup mayo, plain yogurt or something like that

    1 tsp. curry powder

    1 Cup cooked, chopped chicken

    3/4 cup chopped apple

    1/3 cup diced celery

    3 TBSP raisins OR 1/2 cup sliced grapes

    salt and pepper to taste

    Serve over canteloupe!

    Asian Chicken Salad

    Chopped chicken

    sliced almonds

    mandarin oranges

    chopped water chestnuts

    diced green onions, celery

    salad greens

    oriental dressing (gluten free)


  17. So far we have a mixed household. I used to make bread, desserts, etc. and my teenage daughter still does so I have regular flours in the cupboard and my husband and 2 of my daughters eat bread. I wipe up their bread crumbs, etc. and try to keep everything really clean, wash pans really well, etc. How do my daughter and I know if we've been glutened? My daughter's blood test just came back good but she still has an upset stomach, Dr. has said she probably has IBS. How do I know?


  18. As an educator, that teacher's response to your daughter was horrible! How in the world can she live w/ her conscience and how did she get to be a KG teacher??? It takes a special person to work with little ones.

    It is hard knowing your child has to deal with other people and their insensitivities. My daughter was diagnosed last year at the age of 13 and she is much better able to rationalize and deal with the situation than your daughter but we still have situations arise because at her age slumber parties are a big thing. Pizza for dinner, donuts for breakfast. I encourage her to take food but most times she refuses, doesn't want to be "different."Some of her friends have been wonderful, calling and asking her what she can have and trying to provide things for her. In middle school there are so many teachers it isn't possible to inform everyone so there are parties we don't know about where she can't eat anything. We got some great cookbooks and make totally indulgent desserts and such to make up for for she's missing.

    I got diagnosed after she did and while it does make things more difficult in some ways, I am glad she has someone to share this disease with.

    Hugs to your little one. Hope you get the other teacher next year. Whenever I have students with dietary restrictions, I go out of my way to have treats they can eat..... I would never want them to feel left out!


  19. Wow, so I'm not the only one whose stomach randomly goes beserk!? 2 episodes, pre-diagnosis I can think of..... living in a 1 bath apt. shortly after my first daughter was born. Hubby in the shower, suddenly had to go so bad...... ended up using a trash can....... :(

    2nd episode, Hubby and I were in Taiwan visiting a night market with fish, snakes, etc. out, suddenly my stomach did a flip and it was one of those moments where you know you need a bathroom NOW. Had to ride the subway back to our hotel and at every stop, we'd jump off the train and find the nearest bathroom. Their toilets are in the floor, usually no TP provided....... Was so relieved to finally get back to our hotel and a normal toilet with TP. Yikes! Thought maybe it was food poisoning at the time although we had actually eaten at Burger King for lunch that day......

    I've had others where luckily I was at home and could deal with it, when I was pregnant, WOW, my digestive system was way off, would cause contractions and such.... Sorry all of you have to deal with this too. Hoping things will get better now :)


  20. I'm so sorry you are feeling so down about having celiac disease. My daughter and I both were diagnosed in the last year and there are times when I feel really guilty for having passed it on to her..... Eating out is definitely not as pleasurable as it used to be but we're figuring out what restaurants are OK. Doesn't your Olive Garden have a gluten-free menu?? I really like to cook/bake and luckily my husband has gotten into making food that is gluten-free for us too. Being alone would definitely be harder. I'm so busy with work, 3 kids, etc. that I don't have a lot of time to think about the downside but I must not be as sick as you. Still trying to get my daughter feeling better and she was recently diagnosed with irritable bowel syndrome so we are cutting out further foods, the only time she's ever said "It's not fair..... :(" The right partner is out there for you, someone who will love you for you and not what you can eat! Keep working on getting healthy, you can do it! My mom died of a celiac related cancer, wasn't ever tested/diagnosed with celiac at the age of 56 and this inspires me to eat well so I don't end up like her. Is there any way you can see a counselor just to have someone to talk to? Hang in there.


  21. Let's see, my daughter's a lot more picky about gluten-free alternatives than I am but we both agree:

    Any store bought bread except Udi's is like eating cardboard (buy either Pamela's mix or frozen Udi's)

    Every mac n' cheese boxed mix we've tried (using quinoa noodles and a pkg of the Kraft cheese sauce works OK)

    most nutrition bars.....

    Favorites:

    Just about anything by Pamela's, Kinnickkinnick, Udi's. Got some carrot cake bread out of the freezer section of Sprouts the other day that was amazing-we ate the whole little $5 loaf in about 1/2 hour! My daughter's friends liked it too. Gonna have to stock up on that for her to take to slumber parties!
