  1. Fresh fruit and produce! Now is the time for farmer markets to start. I have an ALDI near me and their produce is cheaper than regular grocery stores. Lean meat! 100% ground turkey with Manwich..freeze leftovers. Corn tortillas with chicken, fish etc.... A crockpot! Many recipes here for that. If you have room, you can cook and freeze a lot! Try jasmine rice for a change up...walmart has it cheaper than the rest.Cook it in chicken broth, add veggies, cheese(if you can eat it)and or meat. There is so much you can eat without the cost...what are some of your likes??

    I like to make different breads with gluten-free bisquick. They last for a few days and will make plently for just one person.

    There are also the fruity pebbles ceral bars on the market now!

    The ideas are endless : ) Google gluten free recipes, there are several great blogsout there!

  2. I have been through I don't know how many brands of pasta to date.

    Some are edible, and some just stink IMHO!

    I have tried everything that was recommended here, and some that got great reviews I found to be horrible. I guess we are all different.

    Finally got some Sam Mills corn pasta.

    The form I got was penne rigate since that was all I could find locally.

    Wow,.......this stuff is great! I can hardly tell the difference between it and the real thing.

    It can be cooked al dente like I prefer, and can be reheated in the microwave after being stored for days without becoming a gummy mess. Unlike some other corn based products, this does not taste like corn at all to me.

    I called the company to commend them on their product and to try and find out where I could get different varieties. They sent me 9 different varieties in full one pound packages free of charge!!

    I can't wait to try the regular spaghetti and the fettucini, along with the other 6 that I have never tried.

    If you can eat corn, I HIGHLY suggest that you give this product a try.

    I don't eat corn, but my children really like the Sam Mills as well. I didn't tell my son his pasta was gluten-free until after he ate it! It makes a good mac and cheese as well!

  3. You could try to eliminate all processed foods. Eat only produce and meat and see if that helps.

    I do this and it has helped me. I had to figure out what fruits I could eat that don't bother me as well. Corn and soy make me hurt and bloat. It wasn't until rescently that I had a pain free day. Everyone is different, but think your intestines are damaged. It will take time to heal and digest food well again. Hang in there! Keep a food diary and add one new food at a time.

  5. I've used this with lean ground beef and turkey. I mix the meat (one pound) with two eggs, ketchup, mustard and gluten-free worcestershire sauce. Heavy on the ketchup (daughter loves) I add gluten-free bread crumbs, there is a kinnikinnick panko bread crumbs thats good too. Salt pepper, if you like add onion and green peppers. I eyeball it all according to what my daughter likes. Right before it is done, I add ketchup to the top for a glaze. If you like it on the sweeter side, you could add brown sugar to the glaze. My daugther likes straight up ketchup.

    You can make this with any seasonings you like. I think the egg and bread crumbs are important to hold it together. I've made this with gluten-free italian seasoned bread crumbs also.

    I believe that honesty is the best policy. If you hide it during the interview, you will still have to deal with it later. They may then wonder why you hid it, and what else you may be hiding.

    I agree, it shouldn't matter in this position. Being Celiac has nothing to do with your job. Just think, at some point they will know you are a celiac! Tell them and best of luck to you!   7. That is the story to my life...I'll do it tomorrow,tomorrow and then tomorrow!! :P I'll do it..that's just how I am, just like I am NOT a morning person. There are times I just MAKE myself do things! Gluten has nothing to do with it either..... for me anyway.....I have always put certain things off until the last minute. Still do, but trying to be beter at it!

    Goldfish Crackers

    1 1/2 c. sharp cheddar cheese grated

    3/4 c. gluten-free Bisquick or gluten-free flour (many brands)

    1/4 t. onion powder

    1/4 t. salt

    cayenne pepper (optional)

    onion salt (optional)

    1. Preheat oven to 350º

    2. Mix all ingredients in a food processor for about 2 minutes until the dough forms a ball. I added a few shakes of cayenne pepper to give them a little kick. This is optional.

    3. Roll dough out on a lightly floured surface to about 1/8" thick.

    4. Use mini cookie cutters about 1" in size.

    5. Sprinkle a little garlic salt on top before baking (also optional.)

    6.. Baked on an ungreased parchment lined cookie sheet for 10-12 minutes.

    7. Store in an airtight container.

    8. Makes about 100 little crackers.

  9. So, last week I had two pain free days!!! It was amazing to finally feel human! I stopped to think WHAT did I do differently??! All I could come up with is I didn't use my lip balm (Burts Bees) and a different eye pencil those days. My food had not changed. I stopped using both and I've had some good days. The balm has soy in it and some products I was eating (not often) included soy. I stopped all soy and my bloating is better everyday. The bloat got better after giving up corn, but not totally gone.

    I'm kinda sad to see this go as well, but I am so happy to be free of pain! I have been in some type of pain everyday for 18 months, I feel like I have finally figured it all out!...for now ;)

    Ladies that are soy free, any suggestions on replacing my lip balm and glosses. My new pretty pink lipgloss has vitamin E derived from soy. Thanks!

  10. We just found out my daughter has dermatomyositis and has celiac. We are devastated but hoping a gluten free diet will help. If anyone has any suggestions, we would appreciate it!

  11. One restaraunt in Asheville NC called Posana Cafe. From what I'm reading they are 100% gluten free and fabulous.

    Yes, they are! I got to speak with them at a local gluten-free Expo! They are also in the proccess of finding out other food issues their customers may have. I told them they had been mentioned here. They depend on the Celiac community to spread the word. The noodles I sample were great! They are 2 hours away from me, but I'm thinking of a road trip!

  12. Thanks for the replies! I'm going to have them both tested with the full celiac blood panel. I don't feel the need to do the gene test. Only my sister who has lupus was tested for Celiac. My other siblings don't feel the need to, they say they have no symptoms. My parents are both gone, I wish I could ask more questions to see which side of the family this came from. However, I believe it was my mother.

  13. I'm days away from my one year of being gluten-free. I have learned a lot here in the past year,thank you all! My daughter just announced she wants to go gluten-free to help me. I have not had my children tested yet. Their doctor thought we should wait for signs, I disagree. Both of my children may already have signs. My daughter has headaches and mood swings. My son has had tummy issues in the past or will eat a meal and say "I feel like crap" How he discribes this feeling is different than I had. He also has attention problems. If you're a celiac mom or dad, when did you have your children tested? If it was negative, do you plan to have them re-tested? My son is "running" from being tested, but I feel it's time. My children are 14 and 18.

  14. Were they peanuts out of a bin? Those can get CC. I did eat Planters nuts and trusted them. I was eating a lot of almonds etc this past summer. I was still having a lot of side cramping and tummy bloat. I was allergy tested and found out I'm allergic to peanuts, tomato, almonds, and some melons. My reactions to these food were all gut related. It took me a few months to learn my bodys reaction to certain things. Going whole foods really helped alot. I now know the true gluten feeling versus a food reaction. Keeping a food diary will help alot! Hang in there!

  15. When I went gluten-free at first I did not realize how much I was cross contaminating myself. I went to a gluten-free deititain that helped a lot. I kept a food diary and slowly learned what bothered me. You have to understand your digestive system is shot. You won't digest normal, sugar gets digested late and causes issues too. Hang in there, it took me 6-7 months in to feel somewhat better. I'm almost a year and finally had a pain free day yesterday!!!! It's a learning thing, what works for you beyond being gluten-free. Look at your kitchen also, protect yourself there.

    When I get CC or glutened? Depends on how much, it can last a day to up to 4! I would suggest looking at ways you might be getting cross contaminated. Look into all meds and products as well as food! Hang in there!!!

  16. Two quick things I like gluten-free camping. Baked potato with any gluten-free thing you can thing ofon top bacon, veggies,herbs, butter, chili etc. Also fresh bananas grilled! Pull open one end only, split banana alittle add marshmellows and chocolate chips. Pull that end up wrap in foil and grill!

    Dish to share? What types of cooking methods will you have at hand? Do you plan to make ahead or there?

  17. my wife actually mocked me last night. I was complaining about all the gluten in the house and how there are crumbs all over the kitchen. She went and got a hostess fruit pie out and starting eating it and said 'mmmmmm gluten'. I said thanks thats real nice, and she said 'what, you expect me to go gluten-free too? I'm not the one who is sick all the time'

    You know, the family going gluten-free would be like a dream come true, but I understand people have limits. I just don't

    expect to be mocked and made fun of. pardon my language but f that s

    NateJ and everyone, HUGS! I'm like Wow too! To have someone see you sick and be so insensitive to it.

    I'm a single mom so all I have to worry about is my kids. They are almost gluten-free. I only cook gluten-free and limit the snacks etc they have. Gluten filled snacks are kept away from my kitchen in zip lock bags. They may have some frozen dinners, but are instructed on how to deal with them away from my stuff. I've educated them every step of the way, because one day one of them may test positive for celiac. I still get CC at times from living in a shared enviroment. It would send me over the edge to be around so many crumbs and gluten products. OP I'm so sorry your parents are this way. Hugs to you all!
