  1. I'm gluten-free, soy, and nut free. I can eat some corn products, but not often. Great responses here, but I also look for "natural" products as well(they have natural on the lable). I find those to be soy free and corn free. I finally found salad dressings and crackers to eat. I do make most of my own foods from whole foods as well. Good luck to your friend!

  2. Chocolate Mug cakes are all the rage now. They're good for a simple treat after the kids have gone to bed. I've tweaked this recipie and it's good gluten free.

    Chocolate Mug Cake

    Ingredients:

    -1 T gluten-free flour plus 1 T ground almonds

    -1 T cocoa powder (unsweetened)

    -1/8 t baking soda

    -pinch of sea salt

    -1 egg white or 2 T egg substitute

    -2 T milk or almond milk or rice milk

    -About 2 t sugar (or 1 packet Splenda)

    -1 tsp vanilla

    - 1 T oil, yogurt or applesauce

    -1 or 2 T chocolate chips

    - Cinnamon, or if you're feeling bold, a shake of cayenne pepper

    Grease a coffee mug (nonstick spray is fine if you have it). Add the dry ingredients. Mix in the wet ingredients and the sweetener. Mix well to get bubbles out. Add the chocolate chips last, placing most of them in the center of the mug.

    Microwave for about 2.5 minutes. Be forewarned that the cake will rise up over the rim of your cup, and you will panic, but it will not get all over your microwave. It sinks back down when it's done cooking.

    I use almond flour because I like the taste with chocolate but you could use 2Tblsp of flour instead of almond flour/gluten-free flour mix.

  3. I eat the pickles just fine. However, I cannot handle even gluten-free mayo because of soy. It took me many months to figure out I was bloating and having a similiar reaction to soy like I do gluten. Did your tuna contain soy? keep a food diary and that should help pinpoint problem foods for you. Kraft is a good company I trust to lable.

    The prior post all offer great suggestions, it's a learning process, it does get better :)

  4. I have Raynauds as does my sister who has Lupus. I am not on meds for it at this time. I seem to only have problems with it if my hands or feet get too cold. I protect them in the winter with gloves , thick socks and thankfully I've had a mild winter so far. In the summer I have to watch the air conditioner also.

    I have outside a.m. duty at my school and on very cold mornings I use hand warmers that hunters use in my gloves. I get to stay in my car if the temp is below 40.

    Are you having a difficult time with your Raynauds? I've never been given an option of meds for mine. Good luck to you and be well :)

  5. I cannot do nuts or soy and I try to stay away from corn. Although, I can eat some home made popcorn without problems.

    I was whole foods for over 6 months and started adding a few things in two months ago.

    My lasted find and love is Crunchmasters 7th Ancient Grain Cracker!!!! No nuts, soy or corn! The lightly salted is also dairy free.

    My junk food of choice is CapeCod Kettle chips, they have gluten-free listed on the bag and I've never had a problem with the regular chips or salt and vinegar. I love them with humus!

    I don't eat much gluten-free replacement foods Udi hotdog buns and these crackers.

  6. I had a piece of Udi's toasted, a piece of sausage and AN EGG !!!!! :D

    I have not had an egg in almost a year(other the egg in Udi's bread ) I Have been eating Udi's bread on occasion and I have not had any reaction (from the eggs) even though I have recently increased my consumption quite a bit .

    So I decided to reintroduce/ test eggs and I had an egg for breakfast. So far so good :D . I have not had any reaction as of yet. Here is hoping I can have eggs again :D

    I am a bit emotional about this, I know silly right :unsure: but being able to add eggs back into my diet would be a GIANT step forward. :D

    I would be excited/emotional to add something back in too! I'll hope this is true for you! I would love to add back some more dairy, like yogurt and milk. I haven't gotten up the nerve to test yet.

  7. I got back some routine blood work yesterday and was told my white blood cell count was low(did not get exact count) They want to redo the bloodwork in a month. My sister who has lupus said she has this happen sometimes, it's common with autoimmune diseases. Have any of you experienced this? Should I be concerned and do I do anything differently? The nurse that called was not very helpful. Thanks!!

  8. I'm sorry you had to tell your Dad that. I think we've all experienced some type of situation like this. My sister asked me if I'd ever be able to not worry about CC when I heal. I also had a pharmacist to say the company is "reasonablly" sure it didn't contain gluten. I said if I were a diabetic, would you say, I'm reasonably sure it doesn't contain sugar? It's a learning process for not only ourselves, but our family. Hang in there, hopefully he will understand soon.

  9. rice crust quiche or whatever you want to fill it with

    mix 3 cups cooked and warm long grain white rice with 1 egg and 2 tbl parmesan cheese and press into a pie pan bake at 350 for 15 min until brown. Remove and fill with what you want, cook until done. I have made this twice and next will try brown rice. filling possibilities are endless.

    eggs and cheese, ham

    eggs and hamburg with chse

    taco meat topped with cheese

    very thick white sauce or cheese sauce with chicken/ham etc...

    layer veggies and meat

    etc...

    Do you add any milk or cream to the egg mixture? We love quiche, but the cost of a gluten-free crust is $$ This would be great.

  10. Thanks everyone! Thanks for the name of a safe tuna! I'll try some of these ideas this week as well. I think my kids would love the ham and bean soup. I don't keep alot in my freezer or fridge. I'm in an apartment and my fridge is an older smaller model. It's freezer is about the size of a small cooler.

    I appreciate all the suggestions! If you can think of others, let me know.

  11. I've had a paycut this year at work and during part of the month I'm really scrapping by. Which is this coming week.

    I need cheap lunch ideas for me gluten-free of course, soy free, nut free, tomato free. I'm thinking canned tuna and chicken. I eat a lot of boiled eggs for my protien as well. I don't do a lot of dairy either. I can handle some hard cheese.

    I feed myself and three teens dinner and I always cook gluten-free. I'm running out of ideas. I've done tacos, beans and fried potato, hotdogs, fried hotdogs with kraut and breakfast. Of course sandwich night for them. They make thier own.

    Does your mind ever draw a blank at what to eat? Any suggestions are welcomed!

  12. I always ask them if the salads are prepared away from gluten. I have one Chic fil A that is super awesome. I get the chargrilled chicken salad. I cannot wait to try these as well! I don't like the chargrilled chicken fil A, (never did before going gluten-free) so I haven't tried that. I also try to go when it is less busy. I'm going to try the fries soon! If anyone tries these nuggets, could you please post how you like them? I think this is great for children. To be able to get their own kids meal! :)

  13. I've had two people get sick of hearing gluten free from me. One I worked with asked me to never talk about it in our classroom again! She said I needed to think of other things. I was only 6 months gluten-free at the time and finding my way still. It does hurt. So hugs, I understand!!! I love coming here because I feel "normal" with being gluten-free, soy free and having allergies, everyone understands. I was able to go to a gluten-free expo in April and it was soooo nice talking to other Celiacs! Hang in there!

  14. Yup...sorry to say they are going with the "SAFE" response. As long as they continue to list all of their ingredients, I will buy their products. The caster oil that I posted, should be so minimal as not to be a concern. B)

    It's only worth a post to those of us who used to be fed caster oil to make us all "happy and regular". :ph34r:

    I remember castor oil! My Mom kept it in the fridge, so it was extra thick.
