  2. You'll be pleasantly surprised to find they are not very expensive. I have several and especially like the Hamilton Beach Stay or Go, which is available in both 4 qt. or 6 qt. sizes. I have both and it's especially nice that the lid has a gasket and clips to lock it on so it's easy to take somewhere (if that's something you need) so the contents don't slosh around and make a big mess. Of course, there are many others available, too, but for around $30, I'm pleased with these.

    I'm away from my apartment for about 8 hours and have been afraid to leave it unattended. However, I'm really tired of spending hours in the kitchen everynight.

    Do any of you use the crockpot liners? My sister does and wondered how you guys like them if you do.

  3. I went whole foods and kept a food diary the first year. It really help me pinpoint certain foods my body did not like to digest. I have some trouble with certain fruits, milk, some corn products, and soy. Once I figured out soy, a lot of my cramping and bloating stopped. I started off very basic and simple. I also went totally grain free, I was in so much pain, it was worth a try. When it was first suggested I try whole food/grain free, it made me sad, but it was really worth it to me.

  4. I went to the DR and she took blood work. No heart attack, but perhaps reactions due to my celiac and food problems. That or I've been somewhat depressed and under a lot of stress!

  5. I feel the same way at times! I have a very small fridge/freezer in my apartment, so not much room to cook a lot and save. Some of my fast/easy meals include scrambled eggs, or baked potato. I have made a gluten-free pasta salad and eat on it for a few days.I have also used the Hormel chicken breast strips on a salad when I really didn't want to cook to take something for lunch. They aren't my favorite, but make do in a hurry. Sometimes I may have some chicken meat, olives, cheese, pickles and gluten-free crackers or chips. Not a well rounded meal, but fast and easy. Hang in there!Can you eat peanuts? I know if I could, I'd be eating a lot of peanutbutter!

    I would worry about the person preparing it at the house & cc issues.

    My sister in GA is bringing both to NC, but not sure what location. I'll have to find out. It will be prepared at my older sister house. She has done a good job keeping the turkey at Thanksgiving gluten-free by using gluten-free bisquick in her baking bag. She has also cooked me a gluten-free egg dish and I did ok. I will still prepare me something and ask a lot of questions or give my sis advice.

  7. I've been searching the forum to see if the hams and turkeys are now gluten free. I went to their site and will call. I didn't find out any info for my state.

    I know we all react differently, but I wanted to know if anyone has eaten these rescently? My family will have both the ham and turkey for an upcoming dinner. I was planning to bring my own complete meal, but thought to find out if they are gluten-free and soy free.

  8. So, I made homemade pimento cheese. I had that with celery, baked chicken and my usual gluten-free soy free crackers. I started cramping up/I've been bloated since Christmas eve. After I had eaten this evening I started the bloat really bad with twisty gut pain, with pain up my back. So I know I'm reacting to something. Then my fingers begain to tingle and now my arms ache. I've never had my arms to ache, so I'm thinking heart attack. If I didn't have the arm pain, it would be a normal bloated, extreme painful reaction to something, usually gluten or soy. Do any of you have arm pain?

    This is my second one gluten-free and much better food wise this year. I made a spicy thia rice noodle salad and marinated cheese to take to my family last night. Of course they had a ton of gluten filled snacks all around, but loved my stuff too. Today I made ham, potato salad with dill, greenbean casserole and quiche. It was just me and my kids, but felt wonderful.

    I know the holidays are not really all about food, but I feel better this year that I have more of a handle on cooking gluten-free and soy free.

  10. Good advice given already.

    I would most certainly request the full panel of blood testing. Some doctors hesitate to order this panel or even think of it. My sisters' gastro only gave in and ordered it for her because I am celiac. He told her it was doubtfull she had it too. Crazy!

    I was told after my colonoscopy that I had IBS. I went on the diet for it and my pain was worse, so I started eating salads. I felt better and told the doctor, only then did she order the panel for Celiac.

  11. There might already be a topic on this beer, but I just thought I would let everyone know that it makes a FANTASTIC beer batter for fish (or chicken...only tried fish so far). I bet that your non-gluten free family and friends can't tell the difference. We used grouper and the flour was Bob's Red Mill gluten-free All-Purpose. It was amazing!!!! :)

    Thanks for sharing, I never thought to do that. What part flour mixture to beer did you use?

  12. I'm curious, the Jason Deli near me states that they have gluten free items for gluten-free sensitive people and recommends that they are not safe for people with Celiac on their menu. I know this is probably a cover my .......but does not make me feel safe in eating there. I know others make a similiar statement, but Jason's Deli actually put Celiac on there.

    I've chosen not to eat there as I am celiac and very sensitive to CC.

  13. I've eaten at a local RR once. I had the Avo-cobb-o salad without tomato(allergic) and without blue cheese( I don't like it) Of course no bread. I had it with honey mustard dressing. They had a gluten-free allergen menu plus a book of what other gluten-free people have ordered filled out. I did not get sick, but my tummy grumbled some. Perhaps some soy in dressing(wasn't totally soy free yet). The resturant wasn't busy, but the manager did not bring it out as others mention here. I questioned the server over and over again! I think with all chain resturants, there are some good and bad. Depends on management etc.

    I was recently diagnosed with Celiac @ age 31 and I have been gluten-free for 2 weeks now. I already feel better! I can't believe I've been sick my whole life and never knew it. I even used to think people with "celiac" were a little wacked out in the head. It turns out it was me that was wacked out in the head afterall. :D

    I'm looking forward to the future now that I finally know what's "wrong" with me and I hope to learn a lot from you folks.

    Welcome! You will learn alot from all the wonderful people here, I did as a newbie! I still do everyday and I love the reciepes and helpful advice.

  15. I had my first gluten free dining experience at P.F. Changs in Baton Rouge LA. What an experience! I had the lettuce wraps as an appetizer and chciken fried rice. The server brought out the sauces and informed me of the gluten free ones and the others with me got gluten filled sauces. My group allowed me to serve first (shared appetizer) and did not cross their foods over mine. The manager brought out the appetizer and the main dish and informed me that it was cooked in "clean" pans with "clean" utensils. I was really impressed. Will visit there again!

  16. I am soy free also and have found two lines of dressings that I do okay with. Olde Cape Cod "All Natural" I like the Balsamic. I also do well with Marzetti line of "Simply Dressed" Salad dressings. They are all natural as well. I use the ranch and champagne varieties. I use the Champagne in pasta salads.

    I like the above suggestions with other toppings. I do think it would depend on what you have on your salad. If you like avocado, you add some olive oil, some fresh lime juice, salt, garlic and smooth it out. You could also mix it with sour cream instead of olive oil for a taco salad.

  17. My husband (who has gluten intolerance) has eaten the Mongo Beef entree from the gluten-free menu many times with no reaction symptoms. I've eaten the Ginger Salmon (from the gluten-free menu) many times and never had reactions. I'm much more sensitive than my husband, because I get excruciating gut pain and bloating from eating gluten. So I'm certain PFC's gluten-free menu entree items are truly gluten free.

    HOWEVER, if you have other food allergies (esp. soy), bring your own 'coconut aminos' soy free sauce, and inquire about the ingredients in your chosen entree, because PFC (like most Asian style restaurants) frequently use soy in preparation.

    If you had reactions after eating gluten-free entrees at PFC, you might consider what other delayed reaction allergies you might have.

    I've eaten at pf Changs and been fine. However, I did get sick once, I really think it was the server.

    I go to a different one now and I am fine. I do have to avoid the dishes that have soy in them. I got eggdrop soup and shrimp with lobster sauce. I had no reaction when I ate there last month and didn't get sick. I do have my entire table order gluten-free.
