Thank you for all the suggestions, I'm going to try yours with chicken broth. I love the sauerkraut, but not sure my son would eat it. Sounds good though. Thanks, this is whats for dinner tomorrow!

I need it to be tomato free as well, so I'm running into roadblocks.

Thought I'd google one and see. Does anyone have a favorite? I'm planning on using ground lean turkey meat. Thanks

I am 32. I have the pain in the upper quad and diarrhea every morning. Unexplained weight loss. I notice that if I do not have a meal with gluten in it I have less pain then if I was having gluten. I have not completely omitted gluten but I have been staying away from it in a little experiement that I have been doing to see if that is what is causing the pain.
I would see if your DR would do an endoscopy at the same time! If your insurance could handle it. I had the colonoscopy done first. No answers to my pain, then 2 months later after a positive blood test I had the endo done. My DR looked at me and asked why we didn't do the endo when we did the colonoscopy? I said "talk to you physician assistant!" She kept telling me my only problem was IBS. At your age, I vote for the endoscopy too if possible with several biopies taken.

Search for The Spunky Coconut, I believe she does a lot of cooking like this.

Keep it simple at first and it will be easier, you won't feel so overwhelmmed. In time you will be thinking of and making some yummy stuff! Just think of it this way...I will eat three meals a day, does not matter what they are called. A lot of us eat leftovers for breakfast, breakfast for lunch, or dinner. When I know time will be short, I cook ahead. I keep clean or cut fresh fruit on hand to grab, boiled eggs, slice chicken breast and leafy green salads. Love deviled eggs too! It depends if you can do dairy etc also. Yougurt with fresh fruit is a good one. I don't do grains much, but others eat gluten-free granola as well. You can get a lot of ideas for meals by reading the "What you're cooking tonight" thread. Hope I got the name right. I know I have! Tip...make sure you carry a shelf stable item with you in case you get stuck with no food. Hang in there!

I'm heading to Atlantic beach, NC for vacation in a couple months and was looking for any restaurant / grocery recommendations. It's a fairly touristy spot so I imagine there are some good options around. Anyone have any good experiences?
Sorry I cannot help you with an actual place, but offer suggestions. I would do a search of restrurants etc. I went to Ocean Isle SC last summer and could not find any gluten-free bread anywhere unless I wanted to drive into Wilmington NC. This year I plan to pack a cooler with a few items and bring other food items. If you would, let us know how your vacation goes with being gluten-free!

okay.. just talked to MIL>.. she is irritating me and not seeming to take this seriously at all. I think she doesnt believe me. grrr
they are cooking the meats ahead of time and bringing them in nesco roasters (brats, hot dogs, burgers)
i guess i'll bring my own food.. so much for being inconspicuous... i didnt want to make a big production or have fuss but honestly, i'm feeling a little hurt that she is being dismissive.
because we have to travel, i'll have to make something that i can eat out of a cooler... very very irritating.
I think we all can understand hurt feelings! My co workers still do not understand why I will not eat their potato salad and "gluten-free" food they bring. I've explained CC to them, but they act like I'm going overboard with it. You have to think about CC from everywhere. I felt sad etc at family dinners until I accepted if I want to stay well,it has to be this way. I bring my own food . I make something really yummy and either get mine first or take it seperate. It can get you down, hang in there!

I went whole foods and it helped me a lot! It really helped me figure out foods that I cannot eat. Corn is one of my biggest problem foods. I ate very basic with only adding or taking away one food at a time. The longer you're gluten-free, you'll understand your body more. Well, that was so for me. I can now tell if I get CC or a food that I cannot digest well. I happen to have an overian cyst now and something wrong with my uterus(DX by ultrasound)
A year ago I probably could not have told you if it was gluten or what. Now I understand my body's reactions so much better. Hang in there!

I have found the kettle brand chips in two baked varieties. I love the Sea salt ones. Eating the baked kind helps me have a snack without all the fat of regular chips. I have eaten these several times and I've been fine. I sensitive too. Let me know if you try them and how you like them. They are great with gluten-free dips or my favorite, avocado smashed.

I got a disc shaped sore on my outer calf that lasted a year and a half. They treated it as fungus since it looked like ringworm. It never went away with the medicine though. It had raised edges and itched like crazy at night. After 2 years it went away.
I have a disc shaped sore on the back on my leg near my knee and I've been wondering if this is DH starting. It doesn't itch though. It reminds me somewhat of ring worm, but it's not raised. I'm not sure what to do at this point with it..Watch it?

I'm trying to find a pretty pink, gloss or lipstick that is of course gluten-free and now say free. It appears that Afterglow is both? Even though I'm a year gluten-free. I'm still nervous about spending money only to get the product and I read wrong on the website. Also, has anyone ever tried the Juice Berry ( I think that's the name) line? They are gluten-free, but I cannot seem to find it they are soy free. Now that I have extra time on my hands this summer, I want to find more gluten-free, soy free "beauty" items. I'll pass on any info I find out. Thanks!!

Some days all I feel like I do is work then cook, wash dishes, cook some more, wash more dishes. Some days I hate cooking, I'm so tired of it. Now that I am on summer break, perhaps it will get better. I miss the quick meals I could grab on the go, however, I am more aware of how much gluten people eat when they don't realize it!

2 boiled egg whites..I'm so boring! I'm out for summer break now, so I hope to eat better!

I just got these and was saving them as a treat because I try to be grain free as much as possible. Now kinda afraid to try them. I also got a loaf of the Millet Chia and was saving it.

I just found them at a BI-LO in NC! I was very surprised to find them. I wasn't even looking for them! We still dont have snyders gluten-free pretzels! They taste like I remember, but it's been awhile.

Its now one month and I feel like garbage. I am getting headaches and just feel not much better. I have had windows where I did feel better, but moments like today make me wonder if I went about this the right way. I kind of want to eat gluten to get a reaction to really convince myself that I need to stay the course. I am eating good stuff, vegetables, fruits, smoothies, nuts, and I have been splurging on some potato chips and the snickers bars. I have tested everything and I cannot find a pattern. Kind of sick of being sick and kind of sick of the process and of course the doctor is still not confirming anything. I do not really have any cravings. There has been no cc, been really careful, except I have had to handle and help the kids eat. I understand cooking dishes, spoons, and all that I have it covered. I understand hidden gluten so I have been eating whole foods. Just kind of annoyed. I would love to eat a couple of sandwiches and see if I feel better or worse and what the reaction is like. I like to push the envelope I guess.
I am sure it could be withdrawal but one month in and its so annoying. That is why I wonder if I should have cut back my ingestion for the first month, and a little more the second month and finally just let it go on the third month. I have also quit ingesting dairy.
I cannot remember are you DX Celiac? I can tell you from my experience, I did not feel better until about month 8th gluten-free. I had to learn how I was CC myself and what my body could handle. I got food allergy tested, that helped a lot as well. I gave up gluten-free replacement foods, then corn. I went whole foods and that helped. I do not touch gluten at all or cook it anymore because I am also allergic to wheat and barely. My
digestive track is shot, so it won't digest like a normal person would. Hence the pain, bloat etc etc... Everyone heals at a differnet rate, it took me a year to have a pain free day changing things
around. You need to think vitamins and probiotics. Keep a food diary to pinpoint possible problem foods, drop some of the replacement foods..candy...I just went soy free as well. For me, it was worth having pain free days.
Don't give up and dont cheat, you'll just end up in more pain. In time you will learn what is a gluten reaction and what is a food reaction!
Hang in there ...I've been there!

Before I went corn free, I would buy XochitL corn chips. They are truly amazing in taste! They are very thin and salty. Best when warmed in the oven and they are labled gluten-free. Close to what I remember Chili's chips to be. I know a lot of us use Fritos etc, but these taste so good! My son, who loves mexican, said these are better than any resturant ones he has ever had. Google the name, I buy them at Bi-Los. If you love nachos and can get these, give'em a try!

Just two is difficult!
1. Eat whole foods and avoid a lot of gluten-free replacement foods in the beginning. Your body will thank you for it.
2. Do not trust a health food or grocery clerk for gluten-free status. Unless it states so on the item and then still read the lable. ALWAYS check it out for yourself! I made this mistake twice! If it says "May contain traces of gluten" IT DOES, don't listen to anyone otherwise!
Love this thread, every single post is great advice!!!!

I've noticed lately that I've been losing the padding on my body. Has anyone else experienced this? I know our disease is a malabsorption disease so I thought this might be what's causing it. I was diagnosed in 2009. What do yall think?
I loss muscle due to celiac. I didnt know it at the time, but my body paid a high price. I lost a lot of muscle and weight due to my celiac. I won't go TMI, but it was bad! Now being a year gluten-free, I'm regaining some of it back! If you haven't, perhaps look at what you are eating, add exercise, and vitamins. Also check with your DR. Some blood work for what vitamins you are lacking.

I prefer organic free range, however, being a single Mom, it gets tight. There are times I have to buy regular eggs, I like the organic ones best!
