We made Krusteaz cinnamon coffee cake for breakfast! I have done them as muffins, too. Very tasty. Plenty of topping. You could add a simple powdered sugar, milk/water and vanilla glaze drizzle, but they don’t really need it.

So for New Years Lunch we are mostly doing snacks, so a good list of ideas for others.
Ham and Cream Cheese Roll Ups
As a kid my mother did tortillas with cream cheese spread then ham and rolled up.
Now days I do Applegate Deli ham, soften and spread Miyoko Dairy Free Cream Cheese and scallions on it thick on one side to fill the center when rolled .
Deviled Eggs
Simple Deviled eggs with Primal Kitchen Mayo, Spicy Mustard, a bit of Apple Cider Vinegar and lemon juice, paprika, salt and pepper mix the yolk in with a hand mixer and pipe it into the eggs and top with smoked paprika.
A bit of a trick to cook them perfectly...your instapot, put a inch of water in the bottom with that metal spacer in the bottom you want the water just below it, set to steam once it starts getting hot put your eggs in top with the lid (leave the vent open) and steam for 14mins. Then place ice water bath inside a food container with lid. 15mins of this drain most the water, secure the lid and shake it 40 some odd times hard. Now you just easy remove what is left of the shell.
BBQ Weenies
Used to do this with little smokies but now days I use Applegate Organic Beef hot dogs (no filler great quality hotdogs) cut them up into 1" pieces and slow cook them in BBQ sauces of choice. I am trying a new thing, browning half the pieces in a skillet first for a crisper outside.
Smoked Salmon Squares
Nova, Scottish, or Plain Smoke Salmon precut ultra thin works here. I take Nori (seaweed sheets used in sushi) sheets and cut into 1-1.5" squares top with a bit of Miyoko Cream cheese then a bit of folded smoked salmon, this makes my favorite finger food.
While not quite a snack we are also doing Cauliflower Mash, Smoked Ham (to be diced with salad), and some of my Keto Sugar Cookies. I need to post my Mash recipe later.

Can you post the test results? (It is your right really to have them in your possession). Why? I test positive to only the DGP IgA test on the complete celiac panel. I have never had a positive TTG or EMA which is odd and this has happened repeatedly. However, an endoscopy (not colonoscopy) to obtain small intestinal biopsies revealed damage. I had celiac disease.
You must be on a full gluten diet months prior for all testing to work. If you go gluten free now, you may never get a diagnosis.
Seth is right, it could be something else like Crohn’s (or both..) but I suspect with your mother’s cancer (I am sorry she died), your doctors are just focusing on the colon. Consider a second opinion.

Are you sharing a Mayo jar with a gluten eater?
i have had the plain ones and been fine. I haven’t tried the new flavor or seen it yet. Mission has great gluten-free protocols. They take it seriously.
Gluten doesn’t make me sick in an hour. For me? It takes a bit longer. It actually has to leave the stomach and get into the small intestine and then have time to build a reaction.

Friday was grilled burgers - mushroom & swiss burgers, tomato, pickles - I get burger buns from the red robin when I go to eat there. I will get a half dozen and pop them into the freezer for such burger occasions. ate with pot cheese (aka cottage cheese)
Saturday, was kareng's chicken shwarma or however you spell it - thanx k, it was super delish! we made a tsaziki salad and pita bread (the bfree is awesome)
sunday dinner was pork 'snitzel' breaded with mustard cream sauce, roasted taters & yellow squash. I fixed some more deviled eggs with pickled beets. mmmm. and currently at war with the jalapeno plants. we pickled 11 jars, plant is still like: ha haaaaaaaa! here's 50 more just try and keep up. since I discovered that I love pickled jalapenos, I say bring it, nightshade. I eat your kind for lunch..... and dinner..... on nachos..... in chicken salad...… in my cereal <ok, that's a lie)

Made pizza the other night. Used rice tortillas for a super thin crust. Then used Chebe bread mix for the other. I made a white sauce and added cooked chicken and bacon and moz. Added a little Asiago ( that’s all I had) & some park to the crust. It came out soooooo yummmmmmy!

I did fried chicken Friday, did 2 breadings (Half were pork panko, the other were seasoned almond flour) and even used the leftover batter to make some baked hushpuppies in a muffin tin. I used crushed BBQ pork rinds for a panko like crunch breading with extra BBQ rub mixed in. To get it to stick I used a blend of Eggs, Mayo, Mustard which was really nice and sticky and helped it stick to the chicken. I took the left over batter dropped in a 1/4 cup of almond flour and the left over panko crumbs mixed it up and poured into muffin tins. Bit of a strong mustard flavor but were great.
Yesterday was a breakfast sausage quiche for breakfast, and I had some extra waffle batter after doing them for the farmers market so I mixed in some extra egg whites and a bit of almond milk and baked it into a giant 12" 3/4 pancake and used various toppings on it.
Today, I took some Blueberry Amaretti cookies that did not sell and blended them with egg whites and almond milk. I am baking a dessert egg dish, like a cross between half baked cookie dough and blueberry pancakes. Lunch is the same thing but with cinnamon doughnut holes. >.< I got to eat them but they lack enough protein so a cup and a half, of egg whites helps off set that...and it makes them go further.
Oh I am making mini loaf veggie bake for sides for the dessert meals that has kale, eggs, ground breakfast sausage, vegan cheese, and broccoli roughly pulsed....gets my greens in.

Kareng, I do it just like I did before Celiac (BC?) Soak chicken in buttermilk about an hour. Shake in a bag with flour (I use King Arthur's gluten-free Measure for Measure with salt pepper and a little baking powder and paprika. Fry in a black iron skillet at about 350-375 until brown. Cover and cook until done (20-30 minutes depending on size of chicken). Yes, it is good cold the next day. That will be lunch after church tomorrow.

Today...I had a ton of sausages and waffle batter left over from the farmers market that was rained out. I had a baked quiche with vegan mozz, turkey breakfast sausage, and a bagel from my bakery, a few of my shortbread cookies for dessert. Lunch....I just poured some of the waffle batter into a bowl, mixed in a extra cup of egg whites bit of almond milk poured into a baking dish and added crumbles of some messed up CC cookies for a giant pancake quiche with cc cookie chunks....funny I can make and eat this stuff being paleo and keto lol.

We just used plain tomato sauce comes in those small cans and then added black pepper and and a tiny bit of salt....very flavorful with just that.

Migas....from my child hood was a bit different and nothing that fancy. It was any stale chip (fritos, corn chips, or even tortillas/tortilla chips) that would be lightly crushed dumped in a skillet and scrambled with eggs melted cheese on top and severed with salsa. It was essentially a meal so chips or tortillas would not be thrown away. Still miss it lol, sort of a nostalgia from child hood.
PS this reminded me of another childhood simple meal, Scrambled eggs then right when they finished poured in enough tomato sauce to coat them evenly served with fork or tortillas was another staple growing up.

We grilled burgers - I like mine with cheddar on a bed of lettuce. Then we grilled some scrumptious corn on the cob. And I made some red and purple potatoes in my air fryer!

Mixed it up yesterday doing a egg bake with left over meat loaf for breakfast. Lunch was a blended quiche with spinach and turkey Italian sausage. For dessert I took some Sunbutter cookies from my bakery and ate them dipping in some homemade sugar free jelly.
Today I did the Califlour Pizza crust, Mozz, and egg dish but mixed in a ranch seasoning mix I use to make my own ranch dip cooked into a egg bake and a bit of pizza sauce spread over the top. Lunch was a another spinach quiche but with shredded chicken, and steamed broccoli, seasoned with zanzibar seasoning from Big Axe and some coconut aminos. For dessert today I had some sugar free sugar cookies, and a small protein bake of apple pie bone broth powder and pea protein with some almond milk and egg whites...made a apple pie cake in the microwave.

Tonight I am just using stuff I have laying around - half an onion, some carrots (chopped up), little fresh spinach, can or 2 of beans, can of rotel tomatoes, Can of regular chopped tomatoes, maybe some taco or chili seasonings- on some rice with a little cheese.

Last night I chopped up some fresh tomatoes and simmered them with a little olive oil and garlic. When they were very soft, I added some cooked turkey Italian sausage and about a third of a jar of left over pasta sauce. Served in on penne with a good helping of fresh basil on top. Sometimes I put arugula or spinach in the sauce and put a spoonful of the hot pasta water on it to wilt. Forgot to get some
