  1. External symptoms are not always an accurate indicator of internal distress or harm. Don't let this lead you to think you may not have an issue with gluten. Even some individuals with Celiac do not have symptoms. However, not knowing much of your history, its hard to say if you definitely have a gluten intolerance.

  2. Amy-

Hi! I am from Indy and got on and caught your post. We have several Indy groups. If you are interested, send me an e-mail and I can give you info. We have get togethers too, and I will be hosting a greater Indy gluten-free pitch-in next spring. We also have an e-mail listserv for the local group that is helpful. So drop me a line if you have any interest in these things! (Pls e-mail me, as I am not cking the forum very often at this point).

  3. i am SO in! If you want I can post my letter here to give other people ideas as I've never actually met Lynne in person, but somehow that doesn't seem to matter. :D She's crazy amazing and I shudder ti imagine how fabulous she is in person!

Just checked the website for Extreme Makeover Home Edition (ABC) and what they want to know if you are nominating someone is: What is you family's CURRENT situation and how does it affect your family's home? Why do you need a makeover? What makes you deserving? What makes your situation unique?

She is pretty fab in person :) I'm one of the few lucky ones that gets to hang out with her on occasion!

  4. I am trying Amitriptyline, 5 mg is all I can tolerate. I think it is helping but not really convinced yet, I have been on it 3 weeks.

Only 5 mgs? Are you splitting a 10mg pill? Why can't you tolerate more--what issues does it give you? I just wonder if you will ever end up noticing much with that small of a dose...

From research I've done for others and "surveying" quite a few people, elavil and lexapro seem to be the best overall as far as effectiveness/tolerance. Elavil does not cause sleeplessness, it is often taken as a sleep and pain aid.

  5. Well, we all have to do what we feel we need to do, whether that means attending or staying home perhaps. I've been able to work out a few items with my family, but this year we are going to dh's family. I just bring my own food. Remember that's always an option if you don't want to miss out on any family time. But I also understand taking time with your immediate family if the traditional meal is important to you. Frankly, my MIL's cooking isn't that great, so I don't feel like I'm missing out on much :P

  7. Restaurants: PF Changs, Cheeseburger in Paradise, Carrabas, Maggiano's, Outback, Bonefish Grill -- all either have gluten-free menus or are aware of serving gluten-free dishes.

Many other restaurants have gluten-free menus online ... just look up what place you like, or ask here if anyone has any experience with it.

Just like french fry oil can be contaminated, so can grills, wooden spoons, teflon pans, cutting boards, etc. And be careful, regular charcoal has wheat ... either use propane or natural charcoal.

Welcome to the board! Thank you for caring ... most of the time we're on our own to accomodate ourselves.

To add to Carla's restaurant list, Mitchell's, Ted's Montana Grill also have gluten-free menus. It's not impossible to eat out, but is harder at 'cheap/fast food' type places, IMO. Safer items to choose include meat and veggies. Veggies can be sauteed or steamed gluten-free easily. Meat and be cooked in a clean plan (specify) pretty easily, if the grill is not safe.

  8. Hello,

My two sons ages 4 and 6 were just diagnosed with Celiac Disease. The amount of information is so overwhelming when trying to figure out how to read labels, shop and cook.

My question is...when baking or cooking do you just substitute any gluten free flour for regular flour in any recipe? I tried doing that for Toll House Cookies and they came out FLAT! Does anyone recommend a good brand or mix? We have already spent hundreds of dollars trying to figure this all out. Also, I thought Vanilla was Gluten Free, but alot of recipes call for Gluten Free Vanilla.

Thanks so much for your help!

    :-)

I prefer to use my old original recipes, rather than new ones. I use the tollhouse one, in fact, for my choc chip cookies and it works great. You can either find or create your own flour mix, but don't forget the xanthan gum. Or, you can buy a flour mix too. I do both, depending. Depending on your tastes, you may like some flours better than others. I don't mind bean flours in my bread, but don't like them in desserts, for instance. My favorite premixed flour is Authentic Foods Multi-blend gluten-free flour. I sub it 1:1 in my old recipes and have only had successes with it. This weekend I made Chocolate Peanut Butter Munchie cookies with it--chocolate cookies with a creamy peanut butter filling. You can buy it here: http://www.glutenfree-supermarket.com/flou...Classical_Blend

  9. Hey friend! I am having a cookie exchange next month too--I do it every year, even though I can't eat most of them :) Except in cases of cream cheese or sour cream recipes, I can usually make any gluten-free/cf. I use a flour mix one for one in recipes and sub non dairy milk and earth balance cf butter for all my baking. You've probably seen me mention that before. My FAVORITE chocolate chips are tropical source. They are gluten-free/cf and very rich tasting. If you can get your hands on some they have a much richer chocolately taste than enjoy life's.

For my party, I'm making a gluten-free/cf chocolate cookie with peanut butter filling. I could scan and e-mail it to you if you like. I have a TON of recipes that can be made cf... What type of cookie are you looking for? Any ideas, fruity, chocolately, nutty? E-mail me (I might not be on here again in a while) and I can e-mail you some...
