I am so upset. I knew this was happening, but I've been eating corn anyway. We just grew corn in our own backyard for the first time! I had to try it, and it was REALLY GOOD! Now I am paying the price with diarrhea about 5 times today, bloating and gas too. I am so mad. Now that I'v been gluten-free for almost a year now, I can tell I am really sensitive...

ARCHIVED It's Starting To Get At Me
Kimbalou replied to bartfull's topic in Coping with Celiac Disease
The Gluten free Bible is a great cookbook. I use corn tortillas to make sandwiches. Today, for the first time, I bought a box of gluten free bread mix by Glutino. It was on sale at Safeway for $1.83!! It tastes great! Very easy to make. In and Out Burger has great "protein style" burgers,w hich means they wrap the burger in a huge piece of lettuce instead... -
Do you eat regular oats? Are they ok to eat or should they be gluten-free oats? I buy the gluten-free oatmeal

Hope you feel better! gluten-free brown rice noodles are great. your family will like them. Or even rice pasta. I feel sick today too.

All I can say is I feel your pain! I have been gluten-free since Nov. Some days are really good and some are really bad! I am really starting to fear food too. I think I'm eating things that are ok, but then I get sick. I switched to Almond milk, you might want to try that too if you think you have lactose intolerance. I don't know what the answer is. I just...

ARCHIVED I Hate Celiac. Need Positive Thoughts Sent My Way Please!
Kimbalou posted a topic in Coping with Celiac Disease
Hi. I am so tired of my stomach feeling like a big huge gas bubble that can't escape. I think I'm eating like I'm supposed to until...BAM!!! I'm sick again!! I hate my stomach! I just read the "forbidden foods list" and saw caramel flavoring might not be ok? I thought it was ok. I had a sundae with some on it last week and I think that made me sick. Now... -
That's just awful!! It is not recognized like it should be. I think people just think it's a food allergy and that's it. Let me know who it was and I'll kick some butt too!!

I noticed I had neuropathy in my feet before my Celiac diagnosis. Yesterday it was really bad. I had tingling and sharp shooting pains in my toes. I read online that anti-depressants can help with the pain. I had no idea. What do you do for neuropathy? I am going to see my dr. soon about this. I don't like how it feels...and it makes me feel OLD. I also have...

ARCHIVED Manager Bringing Gluten Free Cake
Kimbalou replied to Melstar23's topic in Coping with Celiac Disease
Personally, I would have been very happy to know my manager was thinking of me and actually brought in something gluten free!! Do you know how many times I get to hear how someone brought in donuts or pastries that I can't touch? I would have asked her if she bought it at a bakery, or if she made it, if it was from a gluten-free mix...or what kind of flour... -
thanks for the information

ARCHIVED Alber's Quick Grits...are They gluten-free?
Kimbalou posted a topic in Coping with Celiac Disease
I've been trying to find the answer, but it isn't clear to me. On the box it says "processed in a facility that contains wheat" Do you eat these? Are they ok? I bought some...wondering now if I should have!! -
I have been taking Lomotil to help with the diarrhea and cramping. I've read either here or another website...can't remember...where some people take it every day. I asked my Dr. about this and she said it isn't meant for long-term use. I am a nurse. I don't think this makes sense. If a medication works, I think it's ok to take it regularly to live more comfortably...

ARCHIVED Your One Best Money Saving Idea
Kimbalou replied to aeraen's topic in Coping with Celiac Disease
Instead of gluten-free bread at $6 a loaf...I just buy corn tortillas. You can make a lot of things with corn tortillas. I use them to make sandwiches. I also stay away from the packaged gluten-free foods. Gluten free bakeries are great, but they cost too much. Reeses peanut butter cups fix my junk food cravings!! -
ARCHIVED I Hear People Around Me Talking About Food Constantly!
Kimbalou replied to Kimbalou's topic in Coping with Celiac Disease
Wheeleez: you took the words right out of my mouth. One time someone brought in cookies and asked me if I had one...I said no and then they had to probe about it. I told the whole Celiac story...next time I think I will just say I am trying to avoid JUNK FOOD! Sounds good enough to me!! So, a friend invited me to lunch at her house tomorrow and I asked what... -
ARCHIVED I Hear People Around Me Talking About Food Constantly!
Kimbalou replied to Kimbalou's topic in Coping with Celiac Disease
Wow, that's so sad about your daughter and that cake on a stick. ugh. Yesterday we went out to eat for my mom's birthday and I all I heard was the word "bread". There was a lot I could eat there, but bread came up a lot...I miss toasted cheese bread! At least this place had food allergies labeled at the salad bar. -
ARCHIVED I Hear People Around Me Talking About Food Constantly!

I really need to vent...again. I started a new shift at work and it seems like all people talk about is FOOD! What they eat, what food people are bringing in, what diet they are on, what restaurant they eat at... etc. AND they look at what I'm eating and comment on it...the list seems endless! WHY? Why do people talk about food so much? Or is it just me now... -
just make sure you read the label on the tortillas...some corn tortillas actually contain flour...weird huh?
-
I can tolerate corn tortillas and chips just fine. Regular, whole kernel corn is sometimes an issue. Generally, corn should be ok. You can get pretty creative with corn tortillas! They are quick and easy to deal with too.

It's hard in the beginning, but you will find out what foods work for your stomach and which ones don't. As for milk, try Almond Milk! I had a very easy time switching over to it...it's healthier for you too. It's in the section with all the other regular milk. They have different flavors too. Blue diamond or Silk...either one is good. Also try Muscle Milk...

ARCHIVED Bone Pain & Other Odd Things...
Kimbalou replied to pondy's topic in Coping with Celiac Disease
I think you should go ahead and start taking vitamins and iron. I am anemic and have low Vit D. I was put on a vit d supplement. your dr. should also do iron, calcium and.vit d levels. -
Welcome to the forum. First of all, I have to say your DR. is full of BS to say the gluten free diet is expensive and can be harmful, bland, etc. What a load of cr$%! The only really expensive things are pre-packaged foods such as gluten free pasta, frozen dinners, etc. Or if you go to a gluten free bakery the cupcakes will cost about $3!! But you don't have...
