I need to come up with a menu plan for the next 2 weeks. I'm extremely broke at the moment, had 2 large expenses come at me at once and have very little money left. I have a small pack of rice, a box of spiral pasta and a tin of chickpeas but that's all I have in the way of food. Today is shopping day. Ideas please for 2 vegans.

Nacho night tonight. Tomorrow we're having a stir-fry. Sunday we're making spinach pastry puffs with roast veges. Monday we're having pasta.

Bangers - sausages. The vegan variety though.
Tonight we're having sweet potato patties with mashed potato and pumpkin, corn on the cob and steamed beans and broccoli. I tried looking for purple peruvian potatoes to make purple mashed potato but had no luck.

Tonight is roast night. Lentil patties with a variety of roasted veges and grilled broccolini with sesame seeds.

Slow cooked chickpea curry again for tonight, I'll put it on in a couple of hours and let it cook for about 6 hours.

We just had baked beans. It's Wednesday night, it's the best I could do. Tomorrow will be better.

Just put the pasta sauce in the slow cooker. It has diced carrot, pumpkin, sweet potato, chopped onion and spinach, a sprinkling of chives, chopped tomatoes, garlic and lentils. Will add the pasta later. It's a new one, the one that Coles now has out, never tried it before so I'll cook that on the stove and see how it turns out, we have San Remo on standby but if this one works then that will be great, it's $3 for a big box.

I'm having trouble eating lately so the poor child is getting all sorts of random things and not following the menu plan. Tonight it was the same as last night because I put some aside for my lunch and didn't eat it so didn't cook tonight and reheated that for her.

Me: Beer.
Child: curry and rice.

We were going to have tacos, but I had a rough day so the child had leftovers and I had wine. Tacos for tomorrow night now.

how do you make your lentil patties? Do you have a specific recipe or ( like me lol) do you just throw them together ?
I just throw them together but they basically have lentils, grated carrot, grated zucchini, chopped onion, oil and flour. Last night I chopped up some baby squash with it as well.

Tonight we're going out to an event and we're taking anti-pasto (tomatoes, mushrooms, eggplant, zucchini, capsicum, olives) and rice crackers, but we're having a big lunch at my brother's today because it's not overly filling. It will be a fun night though.

Well apparently the sausages were delicious. They are $8 for a pack of 6 so I'm not going to eat them, my daughter can have those to herself. We both had the same veges. We have a small health food store that stocks and sells a lot of shelf, fridge and freezer items, but they also have a chef who makes raw vegan, gluten free food like cheesecakes, little snack balls, sausages, all sorts of things. They make little lunch box snacks. NOT CHEAP!!! We don't go there all the time for these items, but it's nice when we do.

Chickpea rounds, mashed potato, steamed veges (broccoli, carrots and beans) for us tonight.
