  1. I add coconut oil to my morning coffee..and use it like butter on cooked veggies. I add it to my serving of soups or stews, and use it to brown meats, or fry potatoes etc. I use it to make Krispy Treats. It can be used in baking recipes. I try to get at least 3T. a day.   2. Many people react badly to soy. It doesn't contain gluten, but is one of the most common allergen foods. I used to get digestive upset with soy. My reaction has gotten much worse since going gluten-free. I now get neurological issues from it too. I avoid it at all costs!   3. It might be a good idea for you to get tested? You will have to eat gluten every day for a while for the test to work.   6. My blood test was negative but the GI did an endoscope to see if she could find a reason for my severe digestive issues and weight loss. I was told my damage was severe and most definately was Celiac. About 20-30% of Celiacs test negative in their blood work.

  14. You may want to call the GI's office that you were referred to? If they want to do an endoscope (which is VERY likely) you need to continue to eat gluten until the tests are finished.
