hey viola..sheeba is so gorgeous!!!!
can you see a little more shiba inu in mouse in this pictute??
hes only 1/4 shiba but i can see the resemblence.

mouse gets people scraps..but hes pretty picky.
he eats "nutro ultra" large breed.
and he eats the chicken strip treats.
he likes stuff with "cheese" on it.
and anything to do with potatoes.
but i defintely keep his people food intake to a minimum as far as "junk" food goes!!!

i guess its just one of those things when everyone sits down to a huge christmas dinner and there i am with spaghetti (again)
also we just moved to kansas city and its taking a while to get re-established and we dont have as much money for groceries and we are staying in a friends house ( downstairs apartment type thing)
BUT....we dont have a stove down here and i dont like having all my groceries downstairs and having to go upstairs to cook.. then go downstairs while its cooking.. back up to check on it or if i forgot an ingriedient...and so on and so forth.
so im not really cooking much.. mostly just things in the microwave. BLAH.
and i really DO enjoy cooking and im sure when we move into our place in a few weeks it will be better.
im sure its just a phase.. and i guess its just me wanting things to be easier..
but no one ever said life way easy!!!
and i know it could be worse.

i dont know what it is, but lately i have been so upset about having celiac and just generally ticked off about it.
it just really gets in the way . i feel like my life is so far from being normal..
i cant go out to eat with friends, i cant eat at family meals. im sick of all the same crap i eat.
im sick of people saying "well, what CAN you eat"
im sick of when im hungry it taking 45 minutes to make anything half way good to eat.
im sick of watching people eat things that i used to LOVE.
im sick of hearing "we could eat at ..oh.. wait.. no we cant"
im sick of having to cook everything i eat.
im sick sick sick of celiac.

this is my absolute FAVORITE pizza EVER EVER EVER!!!!!
gluten-free PIZZA CRUST (i use the namaste pizza mix but you can use whatever you like best)
1 CAN COCONUT MILK
2 CUPS COOKED RICE
SUGAR (to taste)
1 PKG FIRM TOFU
1 HEAD FRESH BROCCOLI
1 JAR PEANUT SAUCE ( A TASTE OF THAI and THAI KITCHEN are both gluten-free and CF)
1 SMALL ONION
start by cubing tofu and slicing onion
fry the tofu until desired crispiness
throw in the onions at the end
make rice while tofu is frying.. when rice is done add coconut milk and sugar until desired sweetness.
steam broccoli
first put the coconut rice on the crust, then add the tofu broccoli and onion
drizzle with the peanut sauce and cook for about 15 minutes!!
WA~LA!!!

the tradition in our family is:
cream cheese

PUMPKIN CREAM CHEESE ROLL!!!
INGREDIENTS
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose gluten-free baking flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs or egg replacer
1 cup granulated sugar
2/3 cup LIBBY'S® 100% Pure Pumpkin
1 cup walnuts, chopped (optional)
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar, sifted
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
1/4 cup powdered sugar (optional)
DIRECTIONS
PREHEAT oven to 375 degrees F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle towel with powdered sugar.
COMBINE flour, baking powder, baking soda, cinnamon, cloves and slat in small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.
BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.
BEAT cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

i love the choclate crunch ones!! they are my fav!!
they make some gluten-free ones and some non gluten-free.. but they clearly label them on the front.
i got my husband a brownie mint one but he still hasnt eaten it and i dont like mint so i cant give you a report on that flavor!
ive never had any pamelas because they all have eggs in them, thats why we love the nana no's ones!!

AHHHHH!!!!!! this is so weird!!! we just moved here 3 weeks ago and my husband just got a job on 80th and wornall and eats waldo pizza all the time because they have vegan cheese there and i just said yestrday.. i am sooooooooooooooooo jealous i wish they had gluten-free pizza!!!! then i wake up this morning and this thread is here!!!!!! he is sooo bringing me home a pizza tonight!!!!

im trying and trying to find gluten-free nutritional yeast flakes and bob's red mill is the only one that comes up, but i know some people have problems with bob's red mill.
i dont think i have ever used anything from them except the pancake mix and it was sooo long ago i dont remeber how i felt.
any input would be great!

TWICE BAKED SWEET POTATOES
6 sweet potatos/yams
dried cranberries
butter/margarine(softened)
brown sugar
walnuts
bake the potatos until they are pretty much done.
let them cool until room temp.
cut in half and spoon out most of the insides.
put in a bowl and mash.
add softened butter and brown sugar ( i do this to taste)
add dried cranberries
mix all together.
spoon back into the halved potatoes
top with chopped walnuts
bake again for 45 minutes
YUMMY!

hi guys.. i just started working there and they dont have gluten-free menu.. but they gave us a packet with all the food allergy listings.. so if anyone wants to know what they can have there , let me know!
i also have the list for dairy free too!

i agree completely!!! i was so excited when i first found this site and got some pretty useful info from it.... but i havent posted in MONTHS ..i used to check up on the board 3 or 4 times a day.. now its 3 or 4 times a month. many of the veteran posters have left here because of petty arguments and attacking and childish behavior on here. and in my opinion theres an over all feeling of " holier than thou" attitude.
you know..we have plent of people in our lives that dont understand what we are going through and this should be a place where we can come and vent and ask and discuss and not feel judged, but unfortunatly.. its not.
i have been questioning leaving the board quite a few times and now i think i will be.
