  1. My freshman year of college, I had the same problem. I made scrambled eggs pretty often (mix them up, add some salt and pepper, with just a dash of milk, and microwave for about 45 seconds). I also learned how to make pasta in the microwave. It's time consuming, but you want to add the pasta and water to a microwave-safe bowl, and microwave it for 5 minutes, stir, another 5 minutes, stir again, then eight minutes and drain. Add your sauce or cheese (if gluten is your only issue, Velveeta makes cheese "toppers" that are less than a dollar a pack at walmart and they're safe). Salads are almost always a safe option...just watch for gluten in your salad dressing. But I'm sure we're ALL sick of eating salads lol. You could make chicken or tuna salads using the canned meats...but, again, watch for hidden gluten in fillers. Also, when in a pinch, cereal and milk is filling, delicious, and safe. I hope this helps some!

    Colander Idea...

    About the whole, "my family doesn't respect my stuff" business, I'm currently saving up for my own place. I'm 21 and fresh out of college, so I've got a long road ahead of me. I've never had respect for my stuff, and they don't listen to me. I think that's for another section of the forum, though... I can't imagine treating a family member like their medical problems are nothing. My mom's diabetic, and we make sure she's got safe food to eat. My brother is just plain PICKY (and here's the kicker,) and measures are taken to make sure he eats. So, I don't understand why my medical condition is such a nuisance.

  5. So, let me know if this is completely off the wall and a ridiculous idea. But until I can get a dedicated gluten-free colander (long story short, my family ignores the GLUTEN FREE written on everything I use), could I use a piece of aluminum foil over the colander and poke out the holes with a toothpick? Maybe this is my late-night brain making stuff up...but it was a fun thought if nothing else!
  6. This is all terrifying, in my opinion. Like someone said regarding the baked goods, a child could buy one of those muffins and end up incredibly sick! And...well, this might seem nasty but I've been working with the public for years now. The customer is always right whether the customer is right or not (which, trust me, you were right). The manager should have been informed. It's not okay to get snippy with or around the customers, and it's not okay to make people sick...and it's REALLY not okay to not change your gloves after changing garbage. YUCK.

So, I'm planning on getting tested for celiac very shortly, and while I know I need to continue eating gluten until then, I would like some help making up a shopping list for some gluten-free essentials that I can go out and get after my result. I have no doubt that it will cone back positive in all honesty. What are some of your staples to keep on hand so that I don't find myself in a rut and get bored? I'm open to any and all suggestions. I'm not picky, and I love to cook.

  9. Hey everyone! I'm new to this forum, so feel free to introduce yourself to me through this post. Back in April 2010 I did an elimination diet to prove gluten intolerance...and it was proven. I went gluten free for about seven months, and then I went right back on to eating gluten again. I don't know if I have celiac or just a gluten intolerance, but I am really feeling it now. I have been very ill for the past few days, and I just KNOW it's gluten-related. I'm having the same exact symptoms I was having when I was off of gluten and I would accidentally get cross-contaminated (not once did I eat something like bread or something, it was always a CC issue). Right now, I've got bloating, diarrhea, headache, brain fog, heartburn, a ridiculous mix of insomnia at night and fatigue during the day, and EXTREME stomach cramping constantly. I have been able to handle everything except for the stomach cramps. I can't sleep because of it, and it feels like I could vomit but I know I won't. Does anyone have any tips about how to ease the stomach pain? Is there any way to kind of gauge how long these symptoms are going to last? What are some of your "glutening" symptoms? Also, while this may seem very obvious, when the pain goes away I'll totally forget about it and I will want to go back to eating everything I crave; pizza, cupcakes, cookies, you name it and I'm going to gobble it down. I don't want to live like this. Is there anything I can do to help motivate myself to sticking to a gluten-free diet? Or is it just being strict with myself knowing that it's hurting me?
