  1. Consider really cutting down on the Udi's bread....we were eating it nearly every day for a year, and my son started having mild seizures (his reaction to gluten) because of it.

    I took me forever to pinpoint it, I never thought to take Udi's out. It must have trace amounts that some are sensitive to, and it builds up over time. The same could probably be said for many "gluten free" snack items, with the exception of a handful of companies. Maybe you could try mostly whole foods for a while, and see if you get any relief. I know it's such a pain trying to figure out what's making you sick, it happens to us all the time!

  2. Thank you!! Hopefully if we play it safe, she'll be okay. I know what you mean about the horse bug....I used to ride quite a bit when I was younger. It is such an amazing feeling, it just never leaves you. I hope this works out for my daughter...I think this will be a great confidence booster for her. Something about horses is so therapeutic on many different levels. Thanks again :)

  3. I have signed my daughter up for riding lessons. She adores horses, and I know she would love this. Now I'm wondering if I made a huge mistake. She is extremely sensitive....the last time she was glutened, it was from painting a mold made from plaster. Apparently the inhaled gluten made her more sick than ingesting it. She had bloody noses, and ran a high fever (105) for over a week. Scared the crap out of me!!!

    This riding class teaches the kids how to groom the horses, feed them, etc. She will be in the barn, with dust flying I presume. Then there's the hay...could that be a problem too? I'm a city girl, have not a clue what hay is actually composed of. My husband said it could be from wheat...it's probably not, but could be.

    Anyone on here have horses and Celiac? Could this be a problem do you think? Luckily I haven't told my daughter I've signed her up, so if I have to cancel it's okay. The last thing I want is for her to fall in love with the horses, then get sick:( Thanks for any advice.

  4. You might also think about having her evaluated for a learning disability. My daughter has been gluten free since the age of 3, but it didn't clear up all of her learning issues.

    She has an expressive/receptive delay. It wasn't overtly obvious, had I not had her evaluated, it would have probably just seemed like she was lazy and didn't want to try. She's been in speech therapy for 5 years now, and although she'll always struggle a bit in school, she has also learned the tools to help her cope.

    Hope that helps! Learning disabilities can be hard to detect, even for teachers. I always encourage parents to get a good evaluation to be on the safe side! If caught early, it's much easier on the child. Good luck :)

  5. My daughter and I are super sensitive, and I have one child who is allergic to almost all of the top 8 allergens. So, our menu is really boring and simple :D

    Breakfast: Pancakes, Mesa Sunrise cereal, or Bob's Red Mill Mighty Tasty Hot Cereal (so good!)

    Lunch: Usually dinner leftovers or sandwiches

    Dinner: Taco salad, Chili pie, grilled chicken w/rice and veg, spaghetti, meatloaf w/potato and veg, pork chops w/potato and veg

    Boring, but easy!

  6. Oh, these doctors!! What a load of crap (pardon the pun :lol: )

    There are some great doctors out there, but there are always some very ignorant doctors who make these nonsense, catch-all diagnoses that mean nothing. Toddler's diarrhea is such an outdated, ricidulous diagnosis. And I am so tired of docs discounting a child's description about how they feel.

    In my experience, both as a mom and a pedi healthcare worker, kids do not complain about something unless it truly does hurt or is bothering them. Adults yes, but children are not little adults.

    I would definitely push for a celiac panel, maybe from your pediatrician instead, or find another GI. It sounds like you are on the right track to getting your dd healthy again.

    I have four children who are gluten free, and only one has an actual diagnosis of Celiac. They all had various symptoms, my oldest having psoriasis and possible ps. arthritis. His test was negative, but he clearly gets sick from gluten. He's in middle school now, and he has been very compliant with his diet, he knows how sick gluten makes him and has no interest in cheating. I leave it totally up to him...I buy him good food so he doesn't feel deprived, but the rest is up to him, I don't push. So far, it seems to be working (fingers crossed!)

    Good luck to you! Stick with what your gut is telling you is best. You can see with your own eyes what is working, and the overall goal is to have a healthy child, no matter what the tests say :) Take care.

  7. That happened to me last year with a different ADHD and autism cookbook. It was $25, and huge, so I thought it was a real find.

    Many of the muffin and bread recipes didn't work, and made me wonder if any of the recipes were ever tested. It's so infuriating when a gluten free cookbook is a dud, b/c not only have you wasted money on the book itself, but you waste so much money on expensive gluten free ingredients that don't work.

    Our library is finally starting to carry more gluten free cookbooks. Getting them is hard, they are always checked out. Also, thanks to all the gluten free bloggers out there now, my food disasters are few and far between!

  8. My heart is just breaking for your little girl. I can't believe there are teachers out there actually like that!

    We have been incredibly lucky so far...we had one teacher who really did not get it, and that was a rough year. However, the past two years we have had relatively young teachers, who had a much greater awareness of allergies and have been amazing. My son was in the first "allergen safe" classroom last fall...all the food allergy kids were in one class. It was heaven for me, I made friends with other special diet moms, and it was great for the kids b/c they didn't feel different at all :D

    I hope you have better luck next year, hopefully you just got the one bad apple of the bunch! We too send in a big bag at the beginning of the year full of safe candy and treats. It's been a lifesaver on those days I can't get a cupcake made, or if the teacher forgets to tell me about a party.

    I promise it gets much easier as time goes by...it's great you have the summer to adjust and get prepared for the next school year. I have found the younger grades to be the hardest, b/c so much revolves around food. My older son will be in 6th grade next year, and there are much less food issues to deal with.   9. True....it's hard to tell. I thought it was a classic gluten reaction, b/c looking back there was a time after school she got sick and I never found the source. Turns out it was the day they made that darn fossil tooth. I just didn't connect it at the time.

    But now I just don't know. She's still running a high fever, and everything's come back negative. It could very well have just been a virus after all, or a virus she picked up after her glutening...who knows, LOL. I guess the silver lining is that we learned to stay away from plaster :rolleyes:

  10. My dd is in the midst of one of the worst gluten reactions she's had in the past 5 years, and she didn't even ingest it.

    At school, the kids had made dinosaur teeth out of plaster. I did not know that the plaster had flour in it (big duh moment, talk about guilt). So Sunday, I let my dd paint her dinosaur tooth. She scraped the sand off of it, played with it, painted it, etc. Sunday night she started vomiting, and continued to vomit through the night. Today she's running a fever of 104. She has run a fever one other time with a glutening, but it was a big one, and it was within the first year of diagnosis.

    This reaction surprised me..she had even washed her hands when she came in. I know there are doctors who say gluten can't be absorbed through the skin. I got to thinking about nailbeds though...those are very vascular, right? Easy way for gluten to go systemic. When my dd ingests gluten, she vomits immediately, leading to less absorption. Anyway, just thought I'd share my observation, b/c it sure surprised us!!

  11. Thank you for the almond milk recipe! I soaked my almonds last night, so I'm excited to make some milk today.

    Woke up this morning without a nagging headache for the first time in a while, so I'm really hoping that carrageenan is the culprit that was making me sick for so long. Almond Breeze was about the last processed food item I bought...I have slowly gotten to the point of eating only whole foods and making everything myself. It seems to be the only way for us to stay healthy and truly gluten free. Funny how drastically our diet has evolved over the past 5 years since my dd's diagnosis!

  12. I know in our case, my daughter's weight dropped down before her height did. She first lost weight at her 18 month check up, she had lost 2 pounds. But, she had grown about 1/4 inch, so no red flags went up.

    This went on for another 18 months, when at age 3, she still had not regained any weight, nor gained any height. It all depends on the doctor I think, ours were very laid back about it, since I'm small. I found out about Celiac on my own....her symptoms were so vague, and she never actually got sick, but at home she was miserable all the time.

    Once she was dx'd and we went on the diet, her weight was also the first thing to come back. She really plumped up for a while (I loved it!), then she eventually grew a couple of inches as well and she evened out.

    Good luck with everything! This is an excellent resource for the gluten free diet, it saved my life the 1st 6 months :D

  13. I'm fine with rice, I just really love the texture and taste of Almond milk. I'll give up the processed stuff in a heartbeat though if it means I'll feel better! I'll just make my own, it won't be as smooth, but at least it won't have added junk.

    I'm wondering if this is why my dd has started struggling in school again too...our symptoms mirror each other most of the time, so it makes sense.

    I had no idea carrageenan causes problems for many people, and can worsen inflammation. Wish I had known sooner, but oh well...live and learn, right?

  14. I posted a few days ago that I have been feeling pretty crappy on and off for the past 4 months. I've been thinking of trying SCD, I am so desperate to feel better!

    It dawned on me yesterday,that as our budget has increased, so has my Almond Breeze intake. Duh! I really love the stuff, and drink 3 or more cups a day, plus I bake with it. I did a little reading about carrageenan, and found that it is related to MSG, which I react strongly too. They changed their packaging a few months ago as well, and have really ramped up their marketing lately (commercials, new look, etc) and with new packaging may come new formulas.

    Anyway, it's only been one day without Almond Breeze...and I do feel better. Whether it's in my head or for real, time will tell! I just wanted to post this in case someone else is feeling cruddy from a mystery ingredient :D

  15. I have been gluten/dairy free for 2 years, along with my entire family. This past December, I took some high dose antibiotics for a dental infection. Since then, I just have not been the same. I seem to be unable to tolerate carbs or sugar. I have had extreme fatigue, heart palpitations, get dehydrated easily, and feel hungover most days.

    This has been going on for 4 months now...I'll feel okay every now and then, but most days I have headaches, lethargy, stomach cramps, etc. I've tried taking some probiotics, but they make me too sick to function. Today I've reached my wits end after waking up again feeling like I've been out partying the night before. I made some homemade chicken stock this morning, and have been sipping on it all day. I do feel better....so as much as I'm dreading it, I think I may need to start the SCD.

    Anyone have any similar circumstances? I'm afraid to start this diet, I'm already a stick and really can't afford to lose any weight. I'm just frustrated, and want to have my life back....I'm ready for a nap by 10am, which doesn't really work out to well with four young kids. Thanks!

  16. I use the Annelise Roberts cookbook as well...I have tried many other blends, but I keep coming back to her mix. It is pricier, so I only use the mix for cookies and cakes. The baked goods come out so moist, with the perfect crumb and texture...I know a few gluten free bakeries actually use her blend too.

    I use a different mix for pancakes, which I can give you if you want it. I use the cheaper flours for those, since I make so many.

  17. Everyone gave you great ideas.....I've been in your shoes before, quite recently really. We are a family of 6 that is gluten free and dairy free as well. There have been times I've had $150 to feed us all for 2 weeks. Not easy, but I did it.

    One item I wanted to mention was Masa Harina flour (Maseca brand). I find it at Walmart...it's corn flour, gluten free, and dirt cheap. I just mixed it with water to make a dough, and from there you can make papusas. Search You Tube for tutorials on how to make them. I can't get them quite right, it's a leanred skill I suppose, but they are tasty and the kids like them.

    I also take masa harina dough, fry it in canola oil, and dust with cinnamon sugar after taking them out of the pan. This is one of the kids favorite desserts, and you can't make a gluten free dessert any cheaper!

    Can't think of anything else other people haven't mentioned! I try to buy the cheapest items that are the most filling. We don't really buy processed anything, not even cereal. Breakfast is usually eggs, a hot whole grain cereal (like grits or brown rice), or pancakes w/jam. The only juice I buy is orange juice to go with breakfast, and almond milk for dinner. No soda or other juice of any kind...too pricey and not good for the teeth anyway!

    Lunch is usually some sort of sandwich on homemade bread, or leftovers. I add rice to anything I can to make a meal stretch.

    The biggest key I think to stretching money...is plan, plan, plan. I plan meals for two weeks based on what meat is on sale. Whole chickens are my best friend. I roast one for dinner, use the leftover meat for chicken salad, and make chicken broth with the bones. I also make a detailed list and figure out the cost before I even go to the store, and make adjustments needed to stay within my limit.

    It's hard, but you can do it, your health depends on it! Good luck!

  18. My daughter was a bit different....once she actually started looking ill, she never caught a cold or got sick at all. I attribute this to her immune system constantly being "on". Once we got her on the diet, her immune system could take a break, then she seemed to catch every cold out there, but nothing too bad.

    Like many, it took two years to finally get a diagnosis. She was 3 years old and weighed 20 pounds, which was actually less than what she weighed at 12 months old. Why this didn't make red flags go up for either of the pediatricians I saw still baffles me. She grew, but just barely. I am petite (Celiac as well) so the doctors could not see past that, they would actually laugh at me, and have comments like "what, you expect to have a basketball player?"

    My dd had developmental delays as well, and it took me ages to figure out where to go to get help for her. The pediatrician just kept telling me that she couldn't be autistic b/c she played with other children, so we just needed to "wait and see" I hate that term. At the time, I didn't know about developmental peds, and it took another year to find out how to get help. This is why we've been through 4 pediatricians in the past!

    We now have a holistic ped who knows about the diet, doesn't freak when I say my kids are dairy free, and gives me a choice about vaccines. I'm in pediatrician heaven, finally after 7 years :D

  19. In our case, I have one daughter who was diagnosed first at age 3. I had my other two boys tested, they tested negative, but have responded well to the diet. At the time of testing, my oldest son was lactose intolerant and had Psoriasis at the age of 6. My youngest boy always had yellow, seedy stools, constant ear infections, and would just scream and moan every morning. I figured I had nothing to lose at that point, and put them on the diet too.

    My youngest daughter has been gluten free from birth, but I was still eating gluten while breastfeeding. She had a horrible case of silent reflux from birth...I cut gluten and dairy out of my diet, and both she and I were much better! I get very sick with gluten now, and my anemia is corrected, so I figure they got Celiac from me. My husband also has suspicious symtpoms, and has gone on the diet as well. It's entirely probable that our kids have two Celiac parents and just didn't stand a chance : )

    The genetic link is very strong...I would have all of your kids tested, then you could try the diet to see if their symptoms improve. Take small steps, the diet change has a huge learning curve, so just take one day at a time!

  20. It could also be helpful to make a list of the most common things she is eating, and we might be able to tell you if there are any hidden sources of gluten. I know there are plenty of items out there that should be gluten free, but still cause problems.

    For my daughter, we have had to cut out alot of processed foods, and go to a more whole foods diet. She's just really sensitive, and little bits of cross contamination add up over time. Frito Lay chips were something we finally had to cut out for example....she does fine with a little every now and then, but not on a regular basis in her lunch like we were doing. So, that might be something to look into if her numbers continue to remain high. Hope that helps, keep doing what you are doing, and you will figure it out!

  21. Good luck to you! That is what we ended up doing about three years ago, and I have kept everyone gluten free. My dd was the first to be diagnosed, then I had my two boys tested a few months later. Both were negative, but my oldest already had psoriasis, and my youngest would scream for an hour every morning, and had sandy, yellow stools. I figured they at least had gluten intolerance, if not full blown Celiac, and put them both on the diet. I had symptoms my whole life, like anemia, migraines, sensitive stomach when under stress, etc....but I was never really,really sick. I ended up going on the diet too, and my headaches improved. Then my anemia improved, and my moodiness (which I figured was PMS!) went away.

    Now we just stick to the diet and don't change a thing! It's been the best thing for us...it is hard at times, but the kids have been very healthy since the diet change. Hope it all goes well!
