Actually, even normal people don’t digest gluten all the way down to amino acids.  I wasn’t clear. But normal people don’t have trouble with the gliadin peptides.

Proteins and peptides are made of amino acids, the difference is the total size. Gluten is a large protein molecule. It is partially digested into smaller pieces, which are then called peptides. One of the reasons that gluten causes trouble...

Here is a diagram that shows how different grains are related.  Wheat, rye and barley (and their proteins) are more closely related than the other grains shown.  Most with celiac disease only have to worry about these three. Of the o...

RMJ reacted to trents in The Cross-Contamination Myth-Buster!
The conclusions of the article are based on the assumption that having 20ppm of gluten (or less) equates to "safe" for celiacs. While that is true for the majority of celiacs, we know that there is a subset of "super sensitive" celiacs...

I want to feed my dog gluten free dog chow, not for her health but to have less chance of gluten contamination for myself.  I do not want to feed her grain free because there might be possible health issues with that.

There is a technical reason for not saying that “gluten free” means absolutely no gluten. When the regulations were published by FDA for gluten free labeling, the 20ppm level was chosen for two reasons.  It is ok for most with celiac...

Smooth stainless steel pans can be cleaned.  The concern is mainly scratched nonstick pans or other pans where gluten could remain in scratches or other rough spots.
