I started going gray at 23, a very white streak that looked cool at first but quickly expanded. I did not have typical intestinal symptoms, lots of extreme allergies and got a lot of colds. I wasn't diagnosed with Celiacs until age 59. I realized the connection immediately. Now I'm 68 and normal greying for my age.

Ridiculous to expect someone with Celiac to make a cake containing gluten for any reason! The exposure to gluten flour in the air is totally unacceptable. Gluten flour shouldn't even be in the kitchen she uses for her food prep. Period.

Several of my cousins have severe shellfish and bug allergies. I'll never forget when visiting my family in Hawai'i, one of those big flying cockroaches flew from a tree and into my little cousin's mouth, the allergic reaction almost killed her. With all the people with shellfish allergies that are likely also allergic to cockroaches and crickets, bugs seems like a very bad move, especially for celiacs who often have several food sensitivities. That's a big shouting no on the bugs for me.

Thankfully many younger people are being diagnosed without having to suffer for years or decades before doctors realize that celiac could be their issue. This should help to lessen the number of people with these types of serious complications. The advice to get regular check ups and not ignore symptoms could be a lifesaver. Even if your only symptom is being unusually fatigued or unexpected weight loss it pays to not ignore it. Many of us late diagnosis folks have an aversion and distrust of doctors. I know I do and may now be paying the price.

I am a Catholic who has lived with the gluten-free Host issue since 1985. During this period I have literally been at the mercy of having either priests who minister to people, rather than priests who minister exclusively to man-made Canon Law. As a Eucharistic Minister, I have seen several times the cross contamination of wine intended to be gluten-free. With the newer low-gluten Host, I as well react to that.
I have written the book, "Journey of a Celiac's Soul: A Second Chance at Life," to focus on the truth of this forgotten issue. The Church hierarchy have their low-gluten Host option, to them this is a closed issue. Hardly, for anyone having a reaction as well to this second option.
Would Jesus, really ever leave any individual with a medical disease, with the option of having to harm their physical health to receive Him?

It's how it's always been for me when I get glutened, it doesn't hit right away on one time, it's cumulative over weeks, so it is hard to figure out what the culprit is. I didn't even used to get the diarrhea. Drives me nuts, but it's why I'm very strict in my house with no gluten allowed.
