About Me

I am a freelance journalist and a retired registered nurse and live in Canada. I write regularly for Celiac.com's Journal of Gluten Sensitivity and several secular magazines, as well as for five or six religious magazines, both Protestant and Catholic. Since retiring as a nurse, journalism, my second university major, has been a life saver for me, both my poetry and articles.

  1. Celiac.com 11/11/2022 - You are either diagnosed with celiac disease, are gluten sensitive, or perhaps you have latent or silent celiac disease, which may mean that you seem to have few or even no health problems at all, yet you sill are...
  2. Vitamin E contains soybeans, wheat germ oil, and tucophenol acetate. You will never know the true source of that Vitamin E you are taking unless you call the manufacturer and ask: https://redapplestick,com/isvitamineglutenfree. You will get the correct answer and not have to wait online, likely long distance, for your answer. Did you know that a Saliva...
  3. A kind friend bought me a box of Gluten Free Hard Seltzer called WHITE CLAW. It is labelled Gluten Free right on the front of the cans, and it calls itself a spiked sparklng water with a hint of strawberry, and it says Alcohol as one of the gredients. One can is 100 calories for the 12 fluid ounces. 2 grams of carbs., natural flavorings, juice concentrate...
  4. They hide, I know they do, and you need to be aware too! Should you be scared spiceless? "Spices normally do not contain gluten in their natural state. If we all had the time we should grow our own spices and slow dry them in the microwave or a dryer, BUT, here are a few you should be concerned about. The Canadian Food Inspection Agency (CFIA) published...
  5. Let's start with Oats. "The challenge has been extensively investigated by Health Canada and has reviewed the clinical evidence from numerous international studies. It has concluded that the consumption of oats uncontaminated with gluten from wheat, rye, or barley is safe for the vast majority of patients with celiac disease. The challenge with oats in gluten...
  6. Yvonne (Vonnie) Mostat My biggest concern now is the Gluten Ataxia. That would be present for about two years, the times I have made Ray's Mother baking and taken it over. I have always used a mask and gloves, but it is snot enough apparently. It gets into the air, and I cannot be near normal flour in the kitchen. If Ray wants his special peanut...
  7. These are a fun and delicious version on traditional peanut butter bars. The gluten free pretzels, can be found, and it adds crunchy, salty contrast to the sweet creamy seed butter layer, and decadent chocolate coating. They do take a few extra steps, but you are rewarded with dozens of rich servings. Makes 32 squares. Free of gluten and most allergens...
  8. My Urologist told me to decease taking Elmiron immediaely (after taking it for Interstitial Cystitis for twenty-five years. There is about 10, TEN CLASS ACTIONS agains this drug. A Class Action is not just TEN people, it is multipe people in each Class Action. They might distribute it to numerous law offices, in fact my para-legal daughter is working on...
  9. May I suggest using the old fashioned remedy for canker sores that has been around for years and years, Use ALUM Powder. Dampen a Q-Tip with a small amount of water and dip into it some Alum powder and put it on the canker sore. It may need repeating but not as much as you think. If you use Alum, be aware that it is a little bitter, but does it clean up...
  10. Why did you use the exact information from my article submitted to the Celiac.com website?  I am trying so hard to make an article not only relevant, but so people get a little personal word and I get people writing about that. I know Celiac Disease is the topic, but people want a "HUMAN TOUCH" TO ARTICLES TOO.  THIS WAS SO HURTFUL. I EVEN HAVE A PAGE FROM "ALLERGIC LIVING" ABOUT CELIAC DISEASE AND BABIES OR YOUNT CHILDREN AND GROWTH DEVELOPMENT THAT I WAS GOING TO BE ADDING TO MY ARTICLE.

ALSO, SINCE I HARDLY EVER 'RANT', BUT SOMETIMES WHEN ONE IS ALMOST REDUCED TO TEARS, ONE RANTS".  WHY. BECAUSE OUR E-MAILADDRESS IS rmostat.net am I now called Ray Mostat because we only have the one e-mail address. i have been very very ill and now officially diagnosed with DRY MACULAR DEGENERATION LAST FRIDAY. (KNEW I HAD IT, BUT HAD TO WAIT TO SEE AN OPTHALMOLOGIST THAT JUST DEALS IN MACULAR DEGENERATION.  I WILL HAVE TO GET INJECTIONS INTO MY EYES, AND THE ONLY THING THAT HAS KEPT ME SANE IS WRITIING ARTICLES TO THE M.B. HERALD, GOSPEL LIGHT MAGAZINE AND SEVERAL OTH...

  11. A WORD FROM VERY WELL HEALTH: “Many people with celiac disease and gluten sensitivity also suffer from neurological symptoms, which often include peripheral neuropathy and migraine. Some also complain of balance problems that do seem to resolve once they go gluten-free.” I AM GLUTEN FREE! Everyone, including you, and I, can get a very occasional accidental ing...
  12. GLUTEN ATAXIA GLUTEN ATAXIA. Yes it is true! Gluten Ataxia is a rare neurological auto-immune condition involving your body’s reaction to the gluten protein found in wheat, barley, and rye. It can cause irreversible damage to the part of your brain called the cerebellum, according to practitioners who first identified the condition about a d...
  13. NEW INFANT GUIDELINES {FEEDING INFANTS AT RISK FOR CELIAC DISEASE) According IMPACT Magazine, which I subscribe to, there is a new “Feeding Infants at risk for Celiac Disease”. We know that one in ten infants, of parents who have celiac disease show signs of having the disease before they are even one year old. That statistic is listed wit...
  14. Tamari Sauce is the only one we use with our Chinese and Japanese cooking, and we cannot tell the difference now. One has to watch the vinegars they use too, like Chinese vinegar, and wine vinegar. We finally found a Chinese take out restaurant, where the person who takes the order speaks English well, and to our surprise has a mother-in-law who is a celiac...
  15. It is like we have to be our own "researchers" and have a come back comment, like my physician advised," Are you SURE. I can become deathly ill ingesting gluten." Even when they are busy at peak restaurant hours they sure sit up and take note that this person with the big smile on their face could cause them lots of trouble if they could find gluten in...
