ARCHIVED Social Behavior -add, Aspergers Etc.
queenofhearts replied to gfp's topic in Coping with Celiac Disease
I think it's fascinating that in each couple you list, there is one inward type & one outward. In my marriage too, my husband is the outgoing one. And his mom is outgoing, his dad very introverted. It's almost as if we seek each other out! And then we spend the rest of our lives not really getting each other... hmmm. Must be something in us that... -

At work is one thing. For her it was family. They should know better. Leah -
ARCHIVED Raleigh-durham-ch Area?
queenofhearts replied to queenofhearts's topic in Introduce Yourself / Share Stuff
Thanks for responding anyway! I was hoping for something cheap & unchainy, but that seems to be the holy grail... my quest continues! Would you be interested in getting together for an all-gluten-free gathering sometime? I have one other taker... I'm learning to bake gluten-free & have some really tasty recipes. Do you eat sweets at all? Leah -
ARCHIVED Need Help For Mom
queenofhearts replied to Tasha2004's topic in Parents, Friends and Loved Ones of Celiacs
I'm afraid I don't know enough about the tests, just wanted to commiserate about these clueless "Health Professionals". White toast, nice idea! Sigh. You are taking good care of your Mom, better luck with the Monday appointment. Leah -
White Wine
queenofhearts replied to Jen H's topic in Gluten-Free Foods, Products, Shopping & Medications
I thought grapes & wine contained natural sulfites-- remember that from another thread. Anyone know? Leah -
ARCHIVED Annalise Roberts' Coconut Cake
queenofhearts replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
Hmmm... from your description my first suspicion would be that the batter was a little too thin. I've found this is one of the challenges with Gluten-free batters, after having baked wheat & rye bread for many years, because with wheat doughs you can tell more from the feel of the dough when kneading, but Gluten-free doughs are softer in general to... -

ARCHIVED Weird Comment From General Mills

???????????????????? Does not compute... -
Yes, yes, yes! And it's so counterintuitive, since for some people (celiac & not) it causes diarrhea. I really don't understand the mechanism (though I have long been curious about it) but I most definitely have felt this beneficial effect for years. And I can barely tolerate eating sweets (other than fruit) without coffee, though that may be partly...

ARCHIVED Dh Definitely Doesnt Stand For Dear Husband Today!
queenofhearts replied to a topic in Coping with Celiac Disease
I'm so sorry, I know you must feel very hurt. I haven't had this issue, but I can imagine it would be devastating. Just try to think of it as an expression of his OCD, & not a personal thing... but I know that's hard. Maybe he should talk with his psychiatrist about this. Is he on meds for the OCD? I can relate to the timing issues at least... -
ARCHIVED Blood Tests Positive For Celiac
queenofhearts replied to BostonCeliac's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'm betting you have it. The diagnosis is such a mixed blessing, isn't it? The diet seems so daunting, & it really is at first, but after just a month I'm finding it easier. And the blessing part-- all those symptoms have a simple explanation, you have a great prognosis for feeling better, & you don't need any scary meds or operations or any of... -
ARCHIVED Annalise Roberts' Coconut Cake
queenofhearts replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
One thing you can substitute for milk powder is almond meal. It's extremely tasty & adds to the protein balance much as milk does. But buttermilk also contains acids which can be important for rising &/or texture, so if you sub for that you should also add a bit of vinegar or other acidic ingredient. (A teaspoon or so per cup of milk or its equivalent... -
ARCHIVED Help! I Don't Want To Cook!
queenofhearts replied to Camille'sBigSister's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm an artist too & I completely understand being swept up in a creative frenzy & not wanting to do anything else for weeks at a time! Luckily, at such times, I'm completely oblivious to what I'm eating, thus am perfectly happy with a subsistance diet of rice cakes, peanut butter, raw veggies & fruits. Or I'll make a big batch of soup or... -
Wow... so now its "fussiness" to want your child to be well? Yikes. I just sent a reply too. Leah

ARCHIVED The Endoscopy Went Great!
queenofhearts replied to shai76's topic in Parents, Friends and Loved Ones of Celiacs
Congratulations! It's always scary when your child (or anyone you love, really) has to undergo something like this, so don't feel silly about your apprehensions. Just rejoice that all went well! We'll all be hoping for the best! Leah -
ARCHIVED Social Behavior -add, Aspergers Etc.
queenofhearts replied to gfp's topic in Coping with Celiac Disease
This is fascinating! I am definitely a solitude-lover; I actually enjoy social interactions & I think I'm fairly sensitive to people's feelings, but I REALLY NEED time to myself. Part of it is that I'm an artist & the creativity only happens when I'm alone in my studio. But part of it just seems to have to do with energy-- being with people, even... -
ARCHIVED Annalise Roberts' Coconut Cake
queenofhearts replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
Wow, not only is she a genius, but also a sweetheart!!! Good for you for asking her permission, Fiddle-Faddle, & good for her for being so generous! I have her book & it is well worth the very reasonable price. Buy it, folks! We need to keep this lady in business! Leah -
ARCHIVED Is Low-fat Or Regular Mayonnaise gluten-free?
queenofhearts replied to Izak's Mom's topic in Gluten-Free Foods, Products, Shopping & Medications
I like making my own sometimes too, but be really careful-- even when made with ultra-fresh eggs it is NOT nearly as long-keeping as the storebought sort. It goes off very quickly, so don't risk saving it for later. Leah -
ARCHIVED Is Low-fat Or Regular Mayonnaise gluten-free?
queenofhearts replied to Izak's Mom's topic in Gluten-Free Foods, Products, Shopping & Medications
I use this one too. My kids like it better than the full-fat version! I was so glad it was gluten-free. Leah -

ARCHIVED Gluten Free For Dummies
queenofhearts replied to swittenauer's topic in Publications & Publicity
I have a copy, but truth to tell, I get lots more info from this site than from any book. (I do get a lot out of the cookbooks, but not so much from the general-information kind.) This forum is an incredible resource; I don't know what I'd do without you folks! Leah -
ARCHIVED Holidays Are Tough - Feeling Sorry For Myself
queenofhearts replied to a topic in Coping with Celiac Disease
I'm definitely with you Rachel, as to eating with others in general. I'd so much rather they had what they enjoyed & didn't stress out over my diet. (Especially cooks-- I really don't WANT to be that much trouble to anyone but me!) HOWEVER, serving a gluten b-day cake for a Celiac's b-day is just plain cruel! There's really no excuse for that... -
ARCHIVED Mosquito Magnetism
queenofhearts replied to queenofhearts's topic in Coping with Celiac Disease
My father in law talks of being bitten (or stung, actually) by blister beetles. Sounds similar to your reaction. Did they hurt? (His did.) I'll be overjoyed if my mosquito luck holds out. I love gardening, & end up doing it in the hottest part of the day to avoid being devoured. (I'd rather be drenched in sweat than covered with bites.) It... -
