  1. 15 min to 30min sometimes an hour. depends how slight it was. first symptom i feel withdrawn not happy and panic. next feel migraine coming on in eyes. next the stomach pain and tired fatigue. then i take gluten enzyme asap. it takes the symptoms from a 10 to a 3-4. i don't get a headach but its not a cure.
  2. i should check out asian stores here. Are they labled gluten-free or certified gluten-free?
  3. i have a nima tester and everything certified gluten-free has tested gluten free. by the way amys refried beans are not gluten-free but they claim to be.
  4. actually i used to be able to eat them with no issues. i think i have become more sensitive. i wondered why some places i could eat thier rice with no issues. i have been searching for certified gluten free rice everywhere with no luck. Found it at walmart both white and brown. going to try the white first. Mahatma basmati.
  5. Also in the begining i only messed up 2 times in six months. since i started eating out and trying new foods recenly, i messed up 3 times in 2 weeks. I am more carefull now. Indian food is very gluten free where i eat. You can buy gluten enzymes that help a lot with the symptoms but you need to take one at least within an hour from eating. The last time...
  6. I am very sensitive to gluten. what i do is avoid anything with vinegar,soy, baking soda,peppers. Vinegar is made from a grain. Soy is the highest on the list for not safe. My symptoms are very much like yours. I have never been diagnosed with celiac but i discussed it with my doctor and he said if gluten free is working then great. Don't trust all restaraunts...
  7. Gem of India. best food i ever had. almost everything on the menu is gluten free. Very celiac friendly.
  8. i use them whenever i'm not sure or if i feel a sudden mood change after eating. They do help a lot, but only for small amounts of gluten. I also purchased a nima sensor. expensive but worth it. Best thing to do when eating out is to check reviews for celiac safe restaraunts ,most will tell you if they are celiac friendly. also if youi like india food...

  10. i have trouble with brown rice and the brown rice pasta. i'm talking straight whole grain brown rice.
