  3. It's possible to be gluten intolerant or have an allergy without having Celiac disease. If you feel better not eating gluten, don't eat it.

  5. Yeah when you're undiagnosed with Celiac often you can't absorb a lot of the food that you eat because your villi are damaged and can't absorb nutrients as well so it's normal to gain weight after getting diagnosed.
  6. Oof sorry I got confused. But if it has this label it's safe. I don't know about other certifications.
  7. If the product is certified, then the FDA has approved it, which means it can ONLY have 20 ppm of gluten or less. I've been gluten free for 8 years, I have super severe reactions to gluten, and I've never been sick from anything that's certified. So yeah, if something is certified gluten free it's completely safe to eat.
