    Chick-fil-A now has Waffle potato chips!! I saw them when I went in there a few minutes ago and wanted to share this news with y’all. The best part is they are gluten free and come in individual bags. I can’t wait to try them.
  4. Vegan Protein Chips This recipe is initially from Tom Kiryu a ketogenic diet body builder friend of mine. I modified it to make it simpler, crispier, and to work with my seasonings. 2/3 Cup Unflavored Pea Protein 1 tbsp chia seed 1/2 cup water 2 tbsp coconut, olive, or avocado oil 2tsp seasoning of choice divided 1. Put a baking sheet or pizza stone in the oven and preheat to 375F 2. In a mixing bowl put 1tsp spice, 2/3 cup pea protein, 1tbsp chia seeds and whisk together well incorporating the mix. Then add in the 1/2 cup slightly warmed water (45 sec in the microwave) and the oil and mix well 3. On a sheet of double covered foil dump your ball of dough. using a sheet of wax paper over this and either you palms or a dough roller spread out into a thin sheet evenly. (the thinner the crispier) 4. Using a dough knife cut the sheet into squares1.5-2" be sure your not cutting the foil only slight pressure should be used and a non sharp dough knife. Now sprits with a bit of spray oil and sprinkle the other tsp of seasoning of the top 5. Place the foil on the stone/cookie sheet that is preheated in the oven and let cook for 15-20mins, Then turn off the oven and crack the door slightly and let dry out for 30-45mins 6, When dried out and crsipied you should be able to peel back the foil from under neath and remove the sheet of chips breaking them along the lines you made. If you find them to be soft or chewy you need to increase the bake time The edge should be a bit "extra" crispy and browned. I loved using my Chili & Cheese vegan seasoning on this, you will soon be able to purchase this in stores if everything goes right. My nacho or ranch seasoning also go great with this. OH if you want a "Cheeze It" like flavor use 1-2tbsp nutritional yeast, and Nutiva Butter flavored coconut oil
  5. Did you know that Milton's Craft Bakers makes an outstanding line of gluten-free chips and crackers? I didn't, but was recently lucky enough to get to try out their Gluten-Free Himalayan Salt Baked Chips and their Gluten-Free Crispy Sea Salt Crackers. What really stood out about each of these wonderful gluten-free snacks was their lightness—since both are perfectly baked instead of fried, they tasted light, healthy, and very crunchy.   6. Does anybody know any Gluten-free Casein-free chips? I react to Proper Crisps, Kettle, Deep River, Good Health, Garden of Eatin', .. I think 'Way Better' is cool because they have the lowest gluten&dairy ppm. Orgran, Snyder's, MGC shld be Gluten-free Casein-free. Also, nuts.com gluten-free beans is not fine.. I seem to react to all brands of beans, whether the beans are dry or canned.

Myhusband's favorite cookie is white chocolate chip with macadamias nut;hence, I decided to try making a gluten free version of the cookie forhim. After a few try with different flour mix and ingredients. I got arecipe that not only my husband enjoys but also his co-workers aftertrying them.This is my modified version of gluten-free cookie recipe.The cookies from this recipe has a nice soft texture. This recipe will makes about 2 - 21/2 dozen cookies. Preparation Time: 10 minutes Cook Time: 12-15 minutes INGREDIENTS: 2 1/4 cup of Silka Flour Mix (2/3 cup of Brown Rice Flour, 1/2 cupeach of white rice flour, tapioca flour, 1/3 cup of corn starch, 1/4cup of potato starch) 1 stick of unsalted butter (melted) or 1/2 cup of oil 2/3 cup of light brown sugar 2/3 cup of sugar 2 eggs 1 teaspoon of gluten-free vanilla extract 1/4 teaspoon of salt 1 teaspoon of gluten-free baking powder 1 teaspoon of gluten-free baking soda 1 1/2 of teaspoon of xanthan gum 1 cup of white chocolate chip 1 tbsp of milk (optional) 1/2 cup of macadamias nut (optional) DIRECTIONS: Preheat oven to 375 degree and line 2 baking sheet with parchment pager or use nonstick spray to grease the baking sheet. Mix melted butter, brown sugar and sugar until incorporated, add eggs and vanilla extract until blended In a medium bowl, whisk Silka Flour Mix, baking powder, baking soda, xanthan gum and salt Stir the dry ingredients to the butter mix until incorporated. Stir in white chocolate chip and Macadamias nut (optional) into the cookie dough If the dough appears to be a little dry, add in milk but it's entirely optional Use a tablespoon to scoop the cookie dough onto prepared cooking sheet, space them about 2 inches apart Bake for 12-15 minutes or until cookies turn golden cool cookies for 5 minutes before transferring them into a wire rack
  8. I'm a sucker for traditional guacamole. But, believe it or not, I know a number of people who don't like onions, and a few who don't like tomatoes, so making traditional guacamole is out of the question for them. If you know anyone who likes avocados, but shies away from traditional guacamole, try this. This simple and quick recipe makes a great dip to serve with tortilla chips, and has won over even my pickiest friends. Ingredients: 1-1½ ounces of Cotija cheese 1 or 2 ripe Avocados 1 lemon or lime wedge 1 or 2 sprigs of cilantro, optional 6-8 ounces of good tortilla chips Directions: Slice and dice avocados and place into a bowl. Squeeze lemon or lime juice over avocados. This will help to keep them from turning brown in the unlikely event that the bowl does not get emptied quickly. Crumble cotija cheese and gently fold together with the avocados. Garnish with cilantro sprigs. If you like cilantro, then consider chopping some up and placing it in a bowl next to the avocado/cotija mixture. Add more or less avocado or cheese to suit your taste. Serve alongside a bowl of chips and your favorite salsa.
  9. As my husband's garden in full bloom, zucchini is popping up everywhere...so it's only appropriate for me to make good use of it and bake some zucchini bread! Makes one loaf. Preparation Time: 10 Minutes Cook Time: 50-65 Minutes Ingredients: 1/2 stick of salted butter 1/4 cup of vegetable oil (optional) 3/4 cup of light brown sugar 1/4 cup of sugar 1 1/2 cup of "Silkie Flour Mix" (3/4 cup of Brown Rice Flour, 1/4 cup white rice flour, 1/4 cup of Tapioca flour, 1/4 cup of corn starch and a little bit of potato starch) 2 eggs 1 1/4 tsp of xanthan gum 1 tsp of baking powder 1/2 tsp of baking soda 1 tsp of ground cinnamon 1/8 tsp of nutmeg 1/2 tsp of gluten free vanilla extract 1 1/2 cup of shredded zucchini 1/2 cup of chopped Walnut (optional) - with nuts version 1/2 cup of chocolate Chips (optional) - chocolate chips version 2 tbsp of light brown sugar for sprinkle on top (optional) Directions: Preheat oven to 350F degree, grease one 8 by 4 by 2-inch loaf with oil spray or line the pan with parchment paper. Use mixer, cream butter and sugars until fluffy With mixer running, add egg and vanilla extract to the mixture Whisk flour mix, baking powder, baking soda, salt, xanthan gum, nutmeg and cinnimon together and add the dry ingredient to the wet ingredient in the mixer If the dough appears too dry, add 1/4 of vegetable oil Fold zucchini and walnut (optional - for nut version) or chocolate chips (optional - chocolate chips version) into the batter Pour batter into the prepared pan, if desires, sprinkle a couple 2 tbsp brown sugar on top of the batter Bake for 55-65 mins until golden brown or skewer insert in the center comes out clean Let cool for 10 minutes before serve.   10. English-style fish and chips are one of my all-time favorites. One of the dishes I've missed the most ever since going gluten-free. I've been discovering new uses for Rice Chex as a gluten-free breading, and this recipe for gluten-free fish and chips is one of the results. I hope you enjoy them as much as I do. Ingredients: 1½ quarts vegetable oil, for frying 2 pounds halibut or firm white fish, cut in portions Salt and freshly ground black pepper ½ cup potato starch ½ cup tapioca flour 1 cup rice flour 2 cups crushed Rice Chex 1 quart egg wash (equal parts whole eggs and milk, mixed well) 6 lemons halves, for serving Directions: Heat the oil in to 375 degrees F. in a Dutch oven or deep frying pot. Rinse fish and dab dry with paper towels. Sprinkle the fish with salt and pepper. In a mixing bowl, combine and mix rice flour, tapioca flour and potato starch. Dip the fish in flour mixture and shake off any excess. Dip the fish into the egg wash and then the powdered Rice Chex. Add more Chex as needed to make sure fish is well-coated. Repeat the process with each fillet, then carefully drop the coated fish in the fryer. Cook the fish in batches until golden brown on both sides, 6 to 7 minutes. Remove from the fryer and place on paper towels to drain excess oil. Serve lemons on the side. Serve with chips and tartar sauce. English-style Chips: Ingredients: 4 large russet potatoes Directions: Heat 3-inches of the oil in a deep fryer to 325 degrees F. Peel the potatoes and cut them into chips, about the size of your index finger. Put the potatoes in the oil. Fry the chips for 2 to 3 minutes; they should not be crisp or fully cooked at this point. Remove the chips with a spider strainer or slotted spoon, to a paper towel-lined platter to drain. Raise oil temperature to 375 degrees F. Carefully put the chips in the hot oil. and cook for 4 to 5 minutes until crispy and brown. Note: I like to do the first part of the chips first, then cook the fish, then finish the chips, as I have a smaller fryer. If your fryer is large enough to accommodate both the fish and the chips without lowering the temperature, then you can add the battered fish into the oil on top of the chips, and cook them together. Fry the fish and chips for about 4 to 5 minutes until crispy and brown.

This is truly one of those products that seems too good to be true, and I would have never guessed that this great tasting chip is also low glycemic, high in fiber and omega 3's and packs 4 grams of protein for each serving!   12. This easy ceviche is a staple just about anytime I have friends over for lunch or dinner. Recently, I've started baking my own chips while the shrimp marinates in the lime juice. Making tortilla chips is an easy, healthy alternative to fried, store-bought chips. You can control the heat in this dish by seeding the chilies, but I look for smaller peppers and keep the seeds. Ingredients: 1 pound jumbo shrimp, peeled and deveined Juice from 3 limes 1 tablespoon lime zest 3 cloves garlic, minced 1 cup red onion, diced 1 cup tomatoes, diced 1 cup cucumber, diced 3 Serrano chilies, diced ½ cup cilantro, roughly chopped 12 white corn tortillas Vegetable oil for brushing Salt to taste Directions: Cut shrimp in half and add to a medium glass bowl with lime juice, zest, and garlic. Toss until well coated and refrigerate for 30 minutes. Meanwhile, preheat oven to 350° F. Lightly brush tortillas with oil and cut each tortilla into 6 pieces. Arrange on a baking sheet and cook for 10 minutes. Turn once and bake for an additional 10 minutes. Lightly salt chips immediately after removing from the oven. Add onion, tomatoes, cucumber, chilies and cilantro to shrimp and salt to taste. Serve chilled with chips.
