Celiac.com 08/28/2014 - My wife loves cucumbers, and I love watermelon. So, this easy recipe was a natural to compliment our Summertime grilling. Ingredients: 1 tablespoon olive oil 8-10 cups cut-up seedless watermelon (about 2 pounds) 3-4 Persian cucumbers, halved lengthwise and sliced (skin on) ¼ cup chopped fresh mint 2 tablespoons fresh lime juice ½ teaspoon kosher salt ¼ teaspoon fresh ground pepper, as desired Directions: In a medium bowl, toss the watermelon, cucumber, mint, lime juice, oil, salt, and pepper. Serve immediately.
Celiac.com 05/15/2014 - I’m a big salsa lover, and I love to make new salsa recipes and try them at home. When I get a good one, I like to incorporate it into my regular seasonal salsa rotation. This recipe blends avocado, cucumber, mango and tomato with just the right amount of onion, cilantro and jalapeño to deliver a delightful zesty fruit salsa that is sure to disappear quickly. Ingredients: 3 yellow mangoes - peeled, seeded and diced 1 cucumber - peeled, seeded, and diced 1 cup diced tomatoes 1 avocado, peeled, seeded and diced 2 jalapeño peppers, seeded and finely chopped 1 large onion, finely diced 1 clove garlic, minced ⅓ cup chopped fresh cilantro zest and juice of 1 or 2 fresh limes, to taste salt and pepper to taste Directions: Stir together the mango, tomato, cucumber, jalapeño pepper, onion, garlic, and cilantro in a mixing bowl. Season with lime juice, salt, and pepper. Refrigerate at least 2 hours before serving to allow the flavors to blend. Stir in avocado right before serving with warm tortilla chips.
This recipe is makes a wonderful summer drink for the kids, or for a pool party!Gluten-Free and Vegan Ingredients: 2 large English cucumbers 1 head of Romaine lettuce Juice of 1 fresh lemon 1 cup fresh watercress 1/4 cup fresh mint leaves 1 inch slice of fresh ginger Pinch of cayenne pepper 2 Tbsp. ground flax seeds, for serving Instructions: In a juicer, juice all ingredients except flax seeds into a tall glass. Top with 2 Tbsp. of ground flax seeds. Serve immediately.
This fast and delightfully fresh salad is a staple in my kitchen throughout the year, but particularly during the summer months I know affectionately as "tomato-heaven." You can mix it up by using cherry or plum tomatoes, or whatever tomatoes rate handy. The dressing offers a nice balance of tart and sweet; it’s a good one to keep on hand. Feel free to omit the chili flakes if you’re not a fan, or even substitute with a little dill. Ingredients: 3 large tomatoes 1 large cucumber 2 bell peppers, red or yellow 1 red onion 1 cup crumbled feta cheese ½ cup red whine vinegar 1 tablespoon Dijon mustard 1 tablespoon honey ½ cup olive oil 1 teaspoon red chili flakes Salt and pepper to taste Directions: Dice all vegetables into similar size and mix together in a large bowl. For the dressing, combine vinegar, mustard and honey. Slowly whisk in olive oil. Pour over vegetables and sprinkle with chili flakes. Top with cheese, taste and season with salt and pepper if desired.
