Celiac.com 03/24/2023 - Delicious, refreshing Grilled Pineapple Lemonade is perfect for a hot summer day or a backyard barbecue. This delightful marriage of sweet grilled pineapple and tart lemon creates a perfectly balanced flavor that is sure to please. Plus, the addition of fresh mint adds a lovely, botanical touch. This recipe is easy to make and can be customized to your liking. Ingredients: 6 ounces fresh pineapple, sliced 4 cups hot water 3 tablespoons granulated sugar ¾ cup fresh lemon juice (4 large lemons) 6-8 sprigs of fresh mint (optional) Instructions: Heat a grill pan over medium-high. Add pineapple slices in a single layer, and cook 5 to 6 minutes on each side, until dark char marks appear. Set grilled pineapple slices aside to cool. Combine 1 cup hot water and sugar in a large pitcher, and stir with a whisk until sugar is dissolved. If using mint, muddle a couple springs of mint, and stir well. Process pineapple, mint and lemon juice in a blender until relatively smooth. Pour the mixture through a fine-mesh strainer into pitcher with sugar mixture; discard solids. Top with 3 cups of seltzer water or club soda. Stir gently until blended. Serve in glasses with ice and garnish with mint springs, as desired.

Celiac.com 06/17/2016 - What role does individual sensitivity play in celiac disease severity and reactions to gluten? Researchers in Italy reported on an interesting case of a of a man with a clear diagnosis of celiac disease who nevertheless drank gluten-containing beer, with no physical symptoms, and no clinical issues. The research team included Fabiana Zingone, Ilaria Russo, Angelo Massari, and Carolina Ciacci. They are variously affiliated with the Department of Medicine and Surgery, and the Department of Clinical Pathology and Transfusion Medicine at AOU San Giovanni di Dio e Ruggi D'Aragona in Salerno, Italy. The team found that a 4-week period of drinking gluten-containing beer did not provoke significant changes in the intestinal mucosa of this patient with celiac disease nor did it elicit any relevant symptoms. Blood antibody levels rose, but did not reach a pathological threshold. It is of course possible that a longer gluten challenge might lead to symptoms and to clinically relevant changes in IgA antitransglutaminase levels. In this case, though, the patient seemed fine and showed no signs of an adverse celiac disease reaction, even though he drank standard non-gluten-free beer. Celiac cases like this may be uncommon, but they do show that individual gluten sensitivity can impact symptoms, immunological response and intestinal mucosa health differently, depending on the patient. Celiac.com 07/17/2021 - We get a lot of questions from celiac community members wondering if certain products are gluten-free. One question we see a lot is about coffee. Specifically, which top brands of canned or bottled cold coffee drinks are gluten-free and safe for people with celiac disease? Remember, brewed plain ground coffee is gluten-free, and safe for people with celiac disease. As long as nothing containing gluten is added, then the regular brewed coffee will always be gluten-free. The same is true for canned coffees. Most canned or bottled coffees are made with brewed black coffee, with sugar, and or milk. These will nearly always be gluten-free. Just be sure to read ingredients, and avoid any added gluten. Still for people with celiac disease who want to be sure, many brands are labeled gluten-free. The following brands are either made without gluten ingredients, or labeled gluten-free. Celiac.com 09/18/2021 - With the end of summer near, the warm weather cocktail season is in its last throes before fall. Captain Morgan rum has earned a loyal following among cocktail drinkers. All of Captain Morgan's unflavored rums are considered gluten-free and safe for people with celiac disease. Beware of rum with flavoring added after distillation, as they do not list flavoring ingredients, and may contain gluten. These cocktails are made with either Captain Morgan Original Spiced Rum of White rum. Here are seven great gluten-free cocktails to make with Captain Morgan rum: Captain Ginger Captain Morgan puts the twist on ginger ale. Ingredients: 1.5 oz Captain Morgan Original Spiced Rum 4 oz Ginger Ale (or Ginger Beer if available) Mint Sprig Directions: Muddle mint and lime in the bottom of a tall glass. Add ice, Captain Morgan Original Spiced Rum and Ginger Ale. Garnish with mint sprig and lime wheel, stir and server. Captain Iced Tea Iced tea, sweet or unsweet, with Captain Morgan is a perfect way to beat the heat. Ingredients: 1.5 oz Captain Morgan Original Spiced Rum 3 oz Iced Tea Lemon garnish Directions: Combine all ingredients in a glass over ice. Captain Pineapple With a Captain & Pineapple over ice, you're halfway to a piña colada and all the way to summer refreshment. Ingredients: 1.5 oz Captain Morgan Original Spiced Rum 4 oz Pineapple Juice Directions: Combine Captain Morgan Original Spiced Rum and pineapple juice in a glass over ice. Top with cola and gently stir. Garnish with a lemon wedge. Frozen Pina Colada One of the legendary summer cocktails. Ingredients: 1.5 oz Captain Morgan Original Spiced Rum 0.5 oz Lime juice 1 oz Cream of coconut 0.5 oz Coconut water 0.5 oz Pineapple juice Ice Directions: Combine all ingredients in a blender and blend until smooth. Watermelon Sangria A fruity group cocktail that’s as red as Captain Morgan’s jacket. Ingredients: 2 cup Captain Morgan White Rum 1 Large watermelon 1 (750-ml) Bottle white wine, chilled 1 cup Seltzer 1/3 cup Lime juice (from about 6 limes) 2 Limes, thinly sliced 2 cups Assorted fresh or frozen fruit, such as pineapple, blueberries, and strawberries Directions: Slice off the top third of the watermelon lengthwise (save for later use) and score fruit with a knife. Using a large spoon or ice cream scoop, scoop out watermelon and transfer to blender Blend watermelon until smooth. (If desired, strain seeds.) Add white wine, White Rum, seltzer, and lime juice and stir until combined, then add limes and fruit Refrigerate until chilled, about 2 hours, then serve. Captain Caipirinha Some think of the Caipirinha as the best way to enjoy fall. Others think of it as a perfect hot weather drink. They're both right. Ingredients: 1.5 oz Captain Morgan White Rum Half lime, cut into wedges 2 tsp sugar Directions: In a glass, muddle the sugar and lime. Celiac.com 01/21/2021 - We get a lot of questions about Red Bull. Specifically, is Red Bull energy drink gluten-free and safe for people with celiac disease? As with most sports and energy drinks, Red Bull does not contain gluten ingredients. Red Bull is made with water, B vitamins, caffeine, taurine, and sugars. According to the Red Bull website, "Red Bull Energy Drink is gluten free, wheat free, lactose free and dairy free." So, I've gotten into sparkling water recently. Has anyone tried the Harris Teeter brand seltzer water? It has no helpful labeling, so I'm not sure if it's safe for celiac. I got the 12 pack of cans in grapefruit. The ingredients include "natural flavors." I emailed HT, so hopefully I'll get a response soon and I'll let you know.
