Celiac.com 09/30/2015 - I recently received samples of St. Claire's Organics Traditional and Cherry Hot Cocoa Mixes. For many years I've been aware of their (now world famous) St. Claire's Organics Pastilles, but I did not know that they also made cocoa mixes. Both cocoa mixes are dairy-, casein-, corn-, soy-, egg-, nut-, GMO- and gluten-free, and are also vegan. In fact, their only ingredients, as one might expect from products made by St. Claire's, are high quality organic molasses granules, organic cocoa powder, organic cocoa nib extract, and, in the Cherry Cocoa—organic cherry flavor. The directions to make either mix are very basic: I added two tablespoons of the mix to a 6 oz. mug of hot water and stirred it well. You can, of course, use coconut milk or other favorite milk instead of water. The first thing I noticed when stirring the Traditional Cocoa Mix was the wonderful aroma that filled my office—the smell of hot chocolate really can't be beat. The Cherry Cocoa Mix offered a unique cherry aroma that blended perfectly with the chocolaty scent. The rich chocolate flavor of the Traditional Cocoa Mix was simply exceptional. I can't remember when I've had such an excellent cup of hot cocoa. The Cherry Cocoa was a total surprise—to my delight the light cherry flavor mixed perfectly with the rich chocolate taste. Now is the season for pumpkin bread and I want to share with you a product that I think you will love: Whole Note All Natural & Gluten-Free Pumpkin Bread and Muffin Mix. Whole Note Food Co. does not make your typical unhealthy gluten-free mixes—they go way out of their way to use healthy, whole grain flours that include brown rice, buckwheat, teff, flaxseed, millet, oats and sorghum. Their mixes are also a cinch to make, and for this mix I only had to add eggs, oil, and pumpkin. I opted for the pumpkin loaf over the muffins, and was very happy with my choice because it turned out great! The flavor and texture were excellent, and I really loved the balance of spices which reminded me of eating one of my favorites: pumpkin pie. I liked the pumpkin bread mix so much that I also decided to try their Whole Note All Natural & Gluten-Free Buttermilk Pancake Mix. I've been searching for healthier versions of gluten-free pancakes that also taste good, and I am happy to report that these pancakes succeed very well at both. Now is the perfect time of year to find a tasty, easy-to-make gluten-free pie crust! I recently tried Inspiration Mixes gluten-free pie crust mix and I have to say that I was pleasantly surprised. This pie crust mix is priced right and each box makes four pie crusts. The crust only took a few minutes to make, and after a short time in the fridge it was ready to be rolled out. I just dusted some gluten-free flour on parchment paper and simply rolled out the ball of gluten-free dough and was surprised to see how easily it transferred it into the pie pan. It held together beautifully and wasn't dry, crumbly or gritty like some of the other brands that I have tried. The gluten free pie crust held in place and withstood the moist filling of my pumpkin pie. I was a little nervous about serving it because I have not had the best of luck with gluten free pie crusts in the past, but as soon as I cut into the first slice I knew this pie crust was going to be different. The crust was flaky, and as you may know the first slice can be the most difficult to remove from the pan, but I have to say that it came out beautifully! My entire family (even the non celiacs) enjoyed the pumpkin pie. I was a little disappointed that we didn't have any leftovers, but that's better than making a pie that no one wants to eat.
