Gluten-Free Bacardi Rum Cake from Betty Crocker Cake Mix

Celiac.com 08/24/2024 - The rich, complex flavors of our Gluten-Free Bacardi Rum Cake make this a delightful treat for nearly any occasion. This cake starts with a moist base made from Betty Crocker's gluten-free Yellow Cake Mix, infused with dark rum, vanilla, and gluten-free instant vanilla pudding for added richness and texture. Topped with crunchy pecans, this cake is then drenched in a decadent butter-rum glaze that seeps into every bite, making it incredibly moist and flavorful. The glaze, made with a blend of butter, sugar, and more dark rum, adds a sweet, boozy touch that perfectly complements the cake's dense crumb. Whether you enjoy it fresh or chilled from the refrigerator, this cake is sure to be a hit. If you prefer a milder rum flavor, simply simmer the glaze a bit longer to mellow the alcohol content. Either way, you're sure to enjoy! Gluten-Free Bacardi Rum Cake Cake: 1 cup chopped pecans 1 Betty Crocker gluten-free Yellow Cake Mix 1 3¾ ounce package of gluten-free Instant Vanilla Pudding - be sure it's gluten-free! 3 eggs ½ cup dark rum ⅓ cup water ½ cup oil 2 teaspoon gluten-free vanilla Glaze: ¼ pound (1 stick) butter ¼ cup water 1 cup granulated sugar ½ cup dark rum Directions: Heat oven to 325 F. Grease a Bundt pan with Pam or cooking oil. Sprinkle the chopped nuts evenly over the bottom. Mix all the remaining cake ingredients together and beat for 4 minutes. Pour into greased pan and bake at 325 for about 40 minutes. Start checking after 30 minutes and when a toothpick inserted into center comes out clean, it's done. While cake is baking, melt butter in a heavy saucepan. Stir in water and sugar and bring to a boil for 5 minutes, stirring constantly. Remove from heat. Carefully stir in rum. While the cake is still in the pan, punch holes all over the surface with a toothpick and pour glaze over it. Let the cake sit and absorb the glaze for at least 30 minutes. When glaze has been absorbed and the cake is cool, invert it over a plate and remove from pan. It's best refrigerated and should last a long time - if it doesn't get eaten first. This is a very dense cake. If you prefer a milder rum flavor, the rum can be added to the glaze and boiled a minute or two to cook out some of the alcohol. -
Celiac.com 03/10/2021 - Even though the FDA recently confirmed that all distilled spirits, including rum, are gluten-free, we get a lot of questions from celiac community members wondering if certain brands and products are gluten-free. One question we see a lot is about Malibu Rum. Specifically, is Malibu Rum gluten-free and safe for people with celiac disease? This is logical as some ingredients added to flavor distilled alcohol can include gluten. Original Malibu Rum is just rum liqueur flavored with coconut. All distilled rum is gluten-free, unless gluten is added after distillation, which is very rare. According to the Malibu website, the company does "not add any known gluten ingredients in Malibu Original or in any of the Malibu Flavors.” The only allergen listed it coconut, which is a tree nut. The short answer is that Original Malibu Rum is considered gluten-free and safe for celiacs. The same is true for other Malibu Rum flavors, and associated Malibu Rum products, including Malibu Splash, Malibu Cans, Malibu Pouches. Still, always be careful with any pre-made drink mixes that contain rum, such as those intended for piña coladas — many of these contain gluten ingredients. Read labels and choose carefully. Celiac.com 09/17/2021 - We get a lot of questions about which particular products or brands are gluten-free, and safe for people with celiac disease. We especially get a lot of questions about liquor and alcohol. Recently, we've seen a lot of questions about rum. Specifically, which brands of rum are gluten-free? We covered some of this previously, in an article about gluten-free alcoholic beverages. But, that was prior to the FDA's declaration that all distilled alcohol is gluten-free. There are literally hundreds of brands of traditional and flavored rums. Nearly all traditional rums are distilled from sugar cane, and so they are naturally gluten-free and safe for celiacs. Watch out for rums that are flavored after distillation, as many of these contain gluten ingredients as flavoring. Unless the flavored rum is clearly gluten-free, such as Malibu or Bacardi, we recommend avoiding any rum flavored with unlabeled flavorings. As always, be sure to check labels, read ingredients, and choose carefully. One question we see a lot is about Meyer's rum. Specifically, is Meyer's rum gluten-free and safe for people with celiac disease? The short answer is YES. Meyer's Rum is considered gluten-free and safe for celiacs. According to the FDA, all distilled spirits, including rum, are gluten-free, so that means Meyer's and other major rums are gluten-free and safe for people with celiac disease. Meyer's, and other rums distilled from gluten-free sugar cane or other gluten-free ingredients contain no gluten ingredients from start to finish, and are naturally gluten-free. Remember, unless gluten ingredients are added after distillation, all rum is gluten-free. As always, read labels, and choose carefully. Bacardi Coconut & Pineapple Ingredients: 1½ ounces Bacardi Coconut Flavored Rum 3 ounces Pineapple Juice Directions: Fill a highball glass with ice. Add Bacardi Coconut Flavored Rum and pineapple juice. Bacardi & Cola Ingredients: 1½ ounces Bacardi Superior Rum 3 ounces Cola Directions: Fill a highball glass with ice. Add Bacardi Gold Rum and Cola. Bacardi Cuba Libre Ingredients: 1½ ounces Bacardi Gold Rum 3 ounces Cola 2 Lime Wedges Directions: Fill a highball glass with ice. Add Bacardi Gold Rum and Cola. Garnish with lime wedges. Bacardi Daiquiri Ingredients: 2 ounces Bacardi Superior Rum 1 ounces Lime Juice 2 teaspoon Extra Fine Sugar Directions: Place sugar and freshly pressed lime juice into a cocktail shaker and stir until the sugar has dissolved. These cocktails are made with either Captain Morgan Original Spiced Rum of White rum. Here are seven great gluten-free cocktails to make with Captain Morgan rum: Captain Ginger Captain Morgan puts the twist on ginger ale. Ingredients: 1.5 oz Captain Morgan Original Spiced Rum 4 oz Ginger Ale (or Ginger Beer if available) Mint Sprig Directions: Muddle mint and lime in the bottom of a tall glass. Add ice, Captain Morgan Original Spiced Rum and Ginger Ale. Garnish with mint sprig and lime wheel, stir and server. Myers's high quality, genuine Jamaican rum, has earned worldwide popularity among rum lovers. Winter, spring, summer or fall, here are six great cocktails with Meyers's rum. Meyers's Old Fashioned This rum version of the classic Old Fashioned is a great way to toast any occasion. Ingredients: 1½ parts Original Dark Rum ½ teaspoon granulated sugar A few dashes of bitters water 1 Maraschino cherry for garnish 1 orange or lemon peel for garnish Directions: Pour all ingredients into the old fashioned glass Add hot water Stir with a spoon until honey is dissolved Express the orange zest and serve Meyers's Rum Planters Punch Rum punch is a time-honored holiday classic, and this version with Meyer's Original Dark Rum is just about as iconic as it comes. Celiac.com 12/16/2021 - Craving an eggnog, but not the eggs? You want a Coquito, my friend. Coquito is a traditional eggnog-like punch served at Christmas holiday celebrations in Puerto Rico. Sweet, creamy and rum-based, coquito is similar to eggnog, but the richness of coconut replaces the eggs. Best of all, you don't even need a fresh coconut. This recipe uses canned cream of coconut to make a delicious coquito that will wow your friends and thrill any eff-free friends and family. Ingredients: 1 can cream of coconut (15-ounce) 1 can sweetened condensed milk (14-ounce) 1 can evaporated milk (12-ounce) 12 ounces white rum, or to taste 1 teaspoon coconut extract 1 teaspoon vanilla extract ¼ teaspoon ground cinnamon ¼ teaspoon ground cloves ⅛ teaspoon ground nutmeg Ground nutmeg, ground cinnamon, or cinnamon sticks, for garnish Directions: Use a blender or an immersion blender for this recipe. To the blender or pitcher, add cream of coconut, sweetened condensed milk, evaporated milk, rum, cinnamon, cloves, nutmeg, and coconut and vanilla extracts. Blend until well mixed Pour into a glass pitcher or bottle and cover. Chill for about 1 hour before serving. Coquito tastes best very cold. Before serving, shake the coquito until well mixed. Clear apple cider is essential for full effect. Dark rum, like Bacardi Gold is recommended, but nearly any rum will do. Use more or less liquor as desired. Preparation is easy, just one pot on the stove, a slow cooker. Ingredients: 1½ cups dark rum 1½ cups Goldschläger Cinnamon Schnapps 4 cups apple cider 4 cinnamon sticks 6 whole allspice berries 10 whole cloves 1 orange, sliced Directions: Slow Cooker Method: Combine the ingredients in your slow cooker, stir, and cook on low setting for 2 to 3 hours. Stir the cider occasionally. If needed, you can set the cooker on the warm setting for another hour or two. I like to use a tea ball for the spices, which makes them easier to remove Stovetop Method: Combine all the ingredients in a pot. Stir and cover. Heat and slowly bring to a boil, stirring occasionally. Lower the heat, cover, and allow to simmer for 1 to 2 hours, stirring occasionally. Transfer to an insulated punch bowl and serve in mugs, or keep covered on the stove and warm as desired.

Here are six great gluten-free eggnog recipes to keep you and your guests delighted for the holidays and beyond. Traditional Rum Eggnog Ingredients: 12 large eggs, separated ½ cup superfine sugar, divided 12 ounces heavy cream 2 tablespoons pure almond extract 2 tablespoons pure vanilla extract 2¼ cups aged dark rum Grated cinnamon, for garnish Grated nutmeg, for garnish Directions: Separate the eggs into two bowls. With a hand mixer, beat the yolk until stiff. Beat the white with 1 teaspoon sugar until peaks form. Slowly fold the white and yolk together using a spoon. In a separate bowl, beat the cream with the almond and vanilla extracts and the remaining teaspoon of sugar until stiff. Add the rum and stir gently. Refrigerate overnight, or serve immediately over ice in a punch or martini glass. Garnish with grated nutmeg and cinnamon. Serve and enjoy. Quick Classic Rum Eggnog Ingredients: 12 egg yolks 1 cup sugar, plus 3 tablespoon 3 pints whole milk 3 cups heavy cream ½ cup rum ¼ cup brandy 1 teaspoon freshly grated nutmeg 12 egg whites Directions: In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine. Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into the mixture. Chill and serve. Classic Brandy Eggnog Ingredients: 6 large eggs 2 large egg yolks ½ cup sugar ¼ teaspoon salt 4 cups whole milk ½ to 1½ cups brandy, bourbon, or dark rum, to taste 1 tablespoon pure vanilla extract ½ teaspoon freshly-grated nutmeg, plus more for garnish ¼ cup cold heavy cream Directions: Keep the cream in the refrigerator. To a 4-quart saucepan, add the eggs, egg yolks, sugar, and salt, and whisk well until combined. Pour the milk in a slowly until fully incorporated. Vigorously whisk the mixture. Place the saucepan on the stove on the lowest possible heat setting. Stir the mixture continuously until an instant-read thermometer reaches 160 F and the mixture thickens enough to coat the back of a spoon. Be patient. This usually takes about 25 to 30 minutes. Strain the mixture through a fine sieve into a large bowl to remove any small bits of cooked egg. Add the brandy, plus the vanilla extract and nutmeg. Start with the ½ cup of brandy, taste, and add more to taste, stirring well. Remember, more liquor makes thinner eggnog, with a stronger brandy flavor. Pour the eggnog into a glass pitcher and cover with a lid or plastic wrap. Chill the egg custard mixture in the refrigerator for at least 4 hours. To serve, pour the cold heavy cream into a bowl and whip until it forms soft peaks. Gently fold the whipped cream into the cold custard mixture until combined, being careful not to deflate the cream. Serve in chilled cups or glasses and garnish with an additional sprinkle of nutmeg. Classic Eggnog with Rum & Brandy Ingredients: 2 dozen eggs ½ bottle brandy (375 ml) ½ cup Myers rum ½ cup Bacardi light rum ½ cup peach brandy ½ cup apple brandy 1 lbs sugar 1¾ quarts milk ½ pint whipping cream nutmeg Directions: Separate the egg yolks from 1 dozen eggs, Save and chill egg whites. Whip egg yolks until blended Stirring constantly to prevent curdling. Add the Brandy, Myers rum, Bacardi, Apple brandy, and Peach brandy. Stir gently Mixing in milk, whipping cream, and 1 pound of sugar. Chill for 6 hours or overnight. Before serving beat the egg whites until a smooth consistency. Gently fold into Egg Nog Serve with a dash of nutmeg. Give your car keys to someone not drinking the Egg Nog. Classic Holiday Eggnog with Bourbon Ingredients: 1 liter Bourbon 1 quart whole milk 1 quart heavy cream 2 dozen eggs – separate yolks and whites 1½ cups sugar Nutmeg for garnish Directions: In a large bowl, beat the egg yolks until they lighten in color. Slowly add 1 cup sugar and continue to whip until dissolved. Add cream, milk and bourbon and stir to combine. In a separate bowl, beat whites until they stand in soft peaks. Gradually add in ½ cup of sugar until stiff peaks form. Whisk egg whites and yolk mixture together in a large punch or serving bowl. Chill, garnish with nutmeg and serve. Note: You can slowly cook eggnog, which will be ready at exactly 160 degrees. Add Bourbon and egg white mixture just before serving, after the eggnog has cooled. Captain Morgan Dairy-Free Coconut Eggnog Ingredients: 6 large, free range eggs ¾ cup 100% pure Canadian maple syrup 2 cups dairy free, unsweetened coconut milk 2 cups full fat coconut milk 1 cup Captain Morgan Original Spiced Rum Pinch of nutmeg Directions: In two large mixing bowls, separate egg yolks from egg whites. Cover bowl of egg white and refrigerate until just before serving. Use a hand mixer to beat egg yolks until thick and creamy. Beat in ½ cup of maple syrup, coconut milk and coconut cream until the mixture is light and frothy. Stir in Captain Morgan Original Spiced Rum, or spiced rum of choice. Whisk gently until combined. Is Captain Morgan Rum Gluten-Free?

Celiac.com 09/15/2021 - Even with a clear declaration by the FDA that all distilled alcohol is gluten-free, we still get a lot of questions about alcohol, and cocktails. Specifically, we get a lot of questions about various kinds of rum. One question we see a lot is about Captain Morgan rum. Specifically, is Captain Morgan gluten-free and safe for people with celiac disease? The short answer is yes, mostly. Original Captain Morgan rum is considered gluten-free and safe for celiacs. The same is not necessarily true for other Captain Morgan flavored rums. According to the FDA, all distilled spirits, including rum, are gluten-free, so that means Captain Morgan and other major rums are gluten-free and safe for people with celiac disease. Rum distilled from gluten-free sugar cane or other gluten-free ingredients contain no gluten ingredients from start to finish, and are naturally gluten-free. So, unless gluten ingredients are added after distillation, all rum is gluten-free. As always, read labels, and choose carefully. Beware of flavored rums, as they may contain gluten ingredients added after distillation. And be careful with any pre-made drink mixes that contain rum, such as those intended for piña coladas, as many of these contain gluten ingredients.
