Celiac.com 05/17/2016 - If you're like me and you love that Italian classic, pasta carbonara, but you're struck with little pangs from the nutrition-minded side of you, then this recipe is for you. This more nutritious version of classic pasta carbonara marries bacon, eggs, and Parmesan cheese with Swiss chard for a hearty, tasty entree. Easy and quick to make, this recipe is sure to delight. Ingredients: 12 ounces spaghetti 1 bunch Swiss chard or Spinach 8 slices bacon, chopped 2 tablespoons olive oil 4 large eggs ½ cup grated Parmesan cheese Kosher salt Ground black pepper ½ cup flat leaf parsley, chopped Directions: I like to start by cooking the bacon in a large skillet over medium heat until crisp, 6 to 8 minutes. Transfer bacon to a paper towel–lined plate, and break into pieces when cool. Cook the pasta according to package directions, adding the chard during the last 3 minutes of cooking. Reserve ½ cup of the cooking water, and drain the pasta and chard, and return them to the now empty pot. Wipe out the skillet and heat the oil over medium heat. Crack the eggs into the skillet and cook 2-3 minutes until done, but a bit runny. Toss the pasta and chard with the reserved pasta water, Parmesan cheese, ¼ teaspoon salt, and ¼ teaspoon pepper, and fold in the bacon. Divide among bowls and top with the eggs. Season the eggs with salt and pepper and top with additional Parmesan and a bit of chopped parsley.
  2. Celiac.com 04/07/2015 - This dip is full of zesty bacon and cheese flavor that is sure to put smiles on the faces of your hungriest snackers. Ingredients: 12 slices quality smoked bacon, cooked, chopped 1 cup (8 ounces) cream cheese ¾ cup shredded Cheddar cheese ¾ cup shredded Swiss cheese ½ cup mayonnaise 1½ tablespoons Dijon mustard 1 tablespoon horseradish, prepared 4 scallions, chopped Directions: In a mixing bowl, whip the cream cheese with an electric mixer. Fold in and lightly mix the mayonnaise, Dijon mustard, horseradish, cheddar cheese, bacon and scallions. Serve hot or cold. To heat, place in an oven proof container and bake at 400°F for 10 minutes or until bubbly and warm.
  3. This excellent tasting pasta recipe is very easy to make and it will please even the most picky pasta fans! Gluten-Free and Dairy-Free Ingredients: 1 cup Heartland Gluten-Free Penne Pasta 1 Tbsp. extra-virgin olive oil 1 head Swiss chard, cut into 1/2 inch pieces 1/2 cup kalamata olives 1/4 cup fresh cilantro 2 scallions, thinly sliced 1 tsp. apple cider vinegar 1 Tbsp. freshly squeezed lemon juice 1 tsp. fresh lemon zest 1/4 tsp. smoked paprika 1/4 tsp. sea salt 1/4 tsp. freshly ground pepper Instructions: Cook penne according to package directions. Remove from heat; drain and set aside. Meanwhile, in a large skillet, cook Swiss chard in olive oil over medium heat until wilted, approximately 4 minutes. Remove from heat; transfer to a large serving bowl. Add cooked penne, olives, cilantro, scallions, vinegar, lemon juice, lemon zest, smoked paprika, sea salt and pepper; gently toss to combine. Serve warm.
  4. There is a variation on this tasty recipe using Rainbow Swiss chard and pine nuts on my Web site. Ingredients: 2 cups TruRoots gluten-free penne pasta 1 Tbsp. Barlean's coconut oil 1 large bundle Swiss chard 1 large bundle kale 1/3 cup walnuts, finely chopped 2 tsp. fresh lemon juice 1 tsp. fresh lemon zest 5 chives, finely chopped 1/4 tsp. sea salt 1/4 tsp. freshly ground white pepper Instructions: Cook pasta according to package directions. Meanwhile, wash Swiss chard and kale; cut into 1 inch pieces. Heat coconut oil in a large skillet over medium heat. Add Swiss chard; cook, tossing until tender, about 3 minutes. Remove from heat; drain off excess liquid. Add walnuts, lemon juice, lemon zest, chives, sea salt and pepper. Drain pasta; gently toss with kale mixture. Transfer to a serving bowl. Serve warm.
  5. I was so happy to discover Shabtai Gourmet's gluten-free Swiss chocolate roll. The first thing noticed was how easy it was to slice and how beautifully each slice looked. The smell of rich chocolate was overwhelming in the most wonderful of ways. After the first bite, I knew we were going to reorder again and soon!
