Celiac.com 11/02/2016 - For anyone looking for a gluten-free meal that is also lower carb and higher protein, this recipe fits the bill nicely. Ingredients: 8-10 skinless, boneless chicken thighs 1 large can (24 to 28 oz.) white beans, rinsed 1 cup chicken stock 2 tablespoons olive oil, plus more for drizzling 1 lemon, zest and juice 6 cloves garlic, finely chopped 2 - 3 tablespoons finely chopped fresh rosemary 2 tablespoons finely chopped fresh thyme 1 head escarole, coarsely chopped 1 wedge Romano cheese, for shaving Sea salt and pepper Steamed rice Directions: Heat oven to medium-high. Pat the chicken dry and drizzle with olive oil and season with salt and pepper. Grill the chicken, turning, for 12 minutes each side. Drizzle half of the lemon juice over the chicken as it comes out of the oven. Heat 2 tablespoons olive oil, 2 turns of the pan, in a skillet over medium heat. Stir in the garlic, rosemary and thyme for a minute. Add the escarole and wilt in the pan; season with salt, and pepper. Add the stock and beans and simmer until the greens are tender, about 5 minutes. Add the lemon zest and remaining lemon juice. Serve the beans and greens in shallow bowls or on rimmed plates; top with 2 pieces of chicken each. Shave the cheese over the top. Season with salt and pepper, as desired. Serve with steamed rice, or with your favorite gluten-free corn bread.
Hello, I'm brand new to the place and I'm not sure if I'm even posting in the right 'area' so feel free to tell me if I make a mistake or something. Okay, well, I guess I should begin and tell you a little about what the heck is going on with me! Even if it is a little TMI... I'm a 20 year old female. I'm pretty healthy; I try to swim everyday, although I don't get enough sleep as I should. I was diagnosed with hyperthyroid and was put on 100mg Synthroid; I take it in the morning. I've been on it for about two months now. I never forget to take it. Before I was even diagnosed with this thyroid problem I would get boils. I've had them on my armpits/side area and inner thighs. Some of them had to be lanced (Worst pain I've ever felt) and now I have purple scars My inner thighs are becoming a serious problem. I get them more frequently now and they hurt SO bad. They form in clusters, these purple hideous things. I don't know what to do. I use the anti-bacterial soap everyday and put cream on them but nothing works. I was a 'vegetarian' (No red meat) for many years but I recently (5 months ago) added red meat back into my diet because I also have a blood clotting disorder and need the iron. I just moved across the country and I haven't gotten in to see a doctor yet but I'm desperate for any kind of help at all! I just want these things gone for good; they're driving me insane! Help, please?
Oh, Chicken, how can I prepare thee? Let me count the ways. This is a great, quick spin on everyday chicken thighs and can easily spice up an ordinary middle-of-the-week dinner. The combination of spices is potent and aromatic but the real kick comes from the cider vinegar. I’ve played around with different combinations and quantities of spices depending on which flavor I want to highlight—that’s the fun part. Thighs are great over brown rice, on a salad, with veggies, in tacos or even on their own. Thighs also cook great on the grill in the summertime. Ingredients: 8 skinless, boneless chicken thighs 6 tablespoons honey 3 teaspoons cider vinegar 2 teaspoons garlic powder 2 teaspoons chili powder 2 teaspoons paprika 2 teaspoons black pepper 1 teaspoon ground cumin 1 teaspoon ginger 1 teaspoon ground red pepper 1 teaspoon salt Directions In a small bowl, mix honey and cider vinegar and set aside. Combine all spices in medium a bowl and mix well. Add in chicken thighs and work until well coated with spice mixture. Place thighs on a broiler pan and broil for 5-6 minutes on each side. After chicken in fully cooked, remove from over and brush half of the honey glaze over thighs. Cook for another minute and repeat with the reverse side of the chicken. Serve with you favorite side dish. Thighs are great the next day.
