What are the benefits, if any, of going gluten free if there is no need to? I am not celiac but my husband is and I thought since he has to eliminate gluten I might as well also. Will it make me a healthier person too? -

My husband was diagnosed a little over a week ago with celiac. He didn't have any prior symptoms before except anemia. His question is "how do I know if I am being totally gluten free if it never bothered me physically when I had it in the first place?" He could still be getting gluten unknowingly and it not be bothering him. -

My husband was recently (last week) diagnosed with celiac. His only sympton was anemia which he had been taking an iron supplement (Chromagen) for. He never had any other health problems other than some bloating when he drank beer. The doctor did the coloscopy, the endoscopy, the small intestine biopsy, and the bloodwork to confirm the diagnosis. We haven...
